SPINACH LASAGNA

Spinach Lasagna image

Steps:

  • Heat the EVOO in a saucepot and add the butter. Add the garlic and cook, stirring, for 2 minutes. Add the tomatoes and crush them up a bit. Add the passata, a fat handful of torn basil leaves, the onion and some salt and pepper. Bring to a simmer and simmer for 40 to 45 minutes. Remove the onion and set the sauce aside.
  • Separate the spinach while adding it to a mixing bowl. Add half of the mozzarella, the ricotta, 1 1/2 cups of the Parmigiano-Reggiano and the eggs yolks and mix to combine. Season with grated nutmeg, salt and pepper.
  • Layer a little sauce into a lasagna pan and top with three flat lasagna sheets or four curly. Top with a little more sauce, and then half of the spinach and cheese mixture. Repeat with another layer, and end on top with lasagna sheets. Top with some sauce and the remaining mozzarella and Parmigiano-Reggiano.
  • The lasagna can be stored before or after baking for a make-ahead meal, or baked to serve immediately. When baking the first time, bake at 375 degrees F, uncovered, from room temperature until cooked through and brown and bubbling on top, 60 to 70 minutes. If reheating, bake at 375 degrees F, covered, for 40 to 45 minutes.
  • Let the lasagna rest 20 minutes before cutting. Serve with extra sauce on the side.

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • Bring a large pot of lightly salted water to a boil. Add lasagna noodles and cook for 8 to 10 minutes or until al dente; drain.
  • In a skillet over medium-high heat, cook mushrooms, onions, and garlic in olive oil until onions are tender. Drain excess liquid and cool. Boil spinach for 5 minutes. Drain, then squeeze out excess liquid. Chop spinach.
  • Combine ricotta cheese, Romano cheese, spinach, salt, oregano, basil, pepper, and egg in a bowl. Add cooled mushroom mixture. Beat with an electric mixer on low speed for 1 minute. Lay 5 lasagna noodles in bottom of a 9x13 inch baking dish. Spread one third of the cheese/spinach mixture over noodles. Sprinkle 1 cup mozzarella cheese and 1/3 cup Parmesan cheese on top. Spread 1 cup pasta sauce over cheese. Repeat layering 2 times.
  • Cover dish with aluminum foil and bake in a preheated oven for 1 hour. Cool 15 minutes before serving.

Spinach and Mushroom White Lasagna, No-Boil image

Steps:

  • Melt 1 tablespoon butter in a large sauté pan over medium-high heat; add the mushrooms and cook until golden, about 5 minutes.
  • Add the onions and garlic, and sauté for 3 minutes.
  • Add the drained, chopped spinach, salt, and pepper, stir well and sauté for an additional 5 minutes.
  • Over medium heat melt 4 tablespoons butter in a saucepan; add the flour and cook, stirring constantly to keep it from browning.
  • Gradually add the chicken or vegetable broth and milk; cook, stirring occasionally, until smooth and thickened, about 5 minutes.
  • As soon as sauce begins to boil, remove it from the heat and add thyme and basil.
  • Combine the shredded cheeses together until well mixed.
  • Pour 1/2 cup of the sauce into the bottom of a 9x13-inch baking pan.
  • Lay 5 noodles in a single layer in the pan. (Four the long way and one broken-off one the short way.).
  • Layer with 1/2 each of the mushroom/spinach mixture and shredded cheeses, then coat with 1/2 of the sauce.
  • Repeat the process, ending with the sauce.
  • Cover the pan tightly with foil and bake at 350F for 45 minutes, then remove foil and bake 15 minutes longer.
  • Remove from oven and let sit a few minutes before serving.

Steps:

  • Preheat oven to 350 degrees F.
  • In large skillet or stock pot, brown ground beef and onion; drain.
  • Stir in spaghetti sauce. Simmer 10 minutes (to heat through), stirring occasionally.
  • In medium bowl, combine mozzarella cheese, fresh or frozen spinach, ricotta cheese, eggs and garlic powder; stir until well blended.
  • In 13-by-9-inch baking dish, layer 1/2 of the uncooked lasagna noodles, 1/2 of the meat mixture, all of the spinach mixture, remaining half of noodles and meat sauce. Pour the 1/3 cup of water over lasagna. Cover snugly with foil.
  • Bake covered at 350 F for 45 minutes.
  • Remove foil from lasagna; sprinkle with Parmesan cheese.
  • Bake, uncovered, an additional 10 to 15 minutes or until hot and bubbly and noodles are tender.
  • Let stand 10 minutes before serving. Yields 8 servings.

Steps:

  • Preheat oven to 400*. In a large bowl combine ricotta cheese, spinach, mozzarella cheese, 2 Tbsp. parmesan cheese, & eggs. Use mixer & mix well.
  • In 8 quart baking dish, spread about 1 cup of marinara sauce on the bottom of the baking dish. Layer 4 noodles long way in baking dish over sauce. Top with 1/2 cheese mixture, 1 cup marinara sauce, and all (optional) cooked meat.
