NO FRY SWEET AND SOUR
A sweet and sour recipe with no batter! Can be used for chicken or pork. It's very colorful and generally has to be made in a double batch as plates get cleaned quickly.

Steps:
- Dice meat- chicken or pork.
- In a large pan, brown meat over a medium heat.
- Add carrots and cook to soften.
- Add garlic, onions and pepper
- Once all vegetables are softened to desire, add pineapple and reduce heat to keep warm.
- In a sauce pan, add enough water to pineapple juice to equal 1 1/2 cup liquid, add cornstarch and mix.
- Add in sugar, vinegar, and soy sauce. Bring to boil to thicken.
- Pour over meat and vegetables.
- Serve over hot rice.
SWEET AND SOUR CHICKEN STIR-FRY
Throw out your takeout menu. This stir fry is fast and easy and is better than your neighborhood chinese restaurant. Add more crushed red pepper if you like your food spicey hot.

Steps:
- Stir together sauce ingredients.
- Place a wok over high heat.
- When wok is hot, add 2 tbsp peanut oil.
- when oil is hot, add garlic and chicken and stir fry until chicken is cooked (about 3 mins).
- Remove from wok and set aside.
- Pour remaining 1 tbsp oil into wok.
- when oil is hot, add onion and bell pepper.
- Stir fry until vegetables are tender crisp (about 2 mins).
- Add pea pods, stir fry about 1 minutes.
- Return chicken to wok.
- Stir sweet and sour sauce, pour into wok along with pineapple.
- Stir until sauce boils and thickens.
- Serve over hot cooked white rice.
NOT TOO SWEET, SWEET AND SOUR SAUCE
Some Sweet and Sour sauces seem too sweet or synthetic for our personal tastes, so I decided to develop my own. This recipe has been worked on over time and you'll notice there are a couple of optional ingredients. I've tried all permutations and also varied the amount of tomato paste and water, but these days I make this sauce with everything listed and we think it's just right! Good served over egg fried rice and stir fried vegetables.

Steps:
- Put the vinegar, sugar and soy sauce in a saucepan and place over a low heat; stir until the sugar dissolves.
- Stir in the tomato and tamarind pastes then pour in most of the water, reserving a little to mix with the cornstarch; turn up the heat to medium and heat the sauce until nearly boiling, stirring occasionally; remove from the heat.
- Mix the cornstarch to a paste with the remaining water and stir into the sauce, add sherry if using then return pan to the heat.
- Keep stirring the sauce and heat through until thickened and gently bubbling; serve immediately.
SWEET AND SOUR TROPICAL STIR FRY CHICKEN
My mother brought a bunch of grapefruits last weekend, and, honestly, I'm not a big fan of grapefruit unless it's loaded with sugar. I scoured the internet and my cookbooks for ideas of how to incorporate grapefruit into a main dish and came up with this recipe. You can sub your favorite sweet and sour sauce.

- Prepare the sauce: In a medium saucepan, combine jucies, rice vinegar, soy sauce, sesame oil, brown sugar, ginger, and black pepper.
- Cook over medium heat. Add cornstarch; stir until sauce thickens. You may want to use more or less cornstarch to get the desired consistency. Set aside to let sauce cool.
- Remove all visible fat from chicken breasts, and cut into bite-sized pieces.
- Once sauce is cool, add chicken, fruit, and green pepper. Place marinade and chicken in plastic storage bag or container; refrigerate at least an hour or overnight.
- Saute onion in olive oil over moderate heat for about 5 minutes. Add broccoli, water chestnuts and snow peas. Saute an additional 10 minutes.
- Add chicken and marinade. Cook about 15 minutes over moderate heat until chicken is no longer pink.
- Serve over 1/2 cup rice or couscous. Sprinkle with sesame seeds.

- Combine 1 1/2 cups of water, reserved pineapple juice, sugar, vinegar, and orange food coloring in a medium saucepan. Bring to a boil over medium heat; set aside. Mix 1/4 cup cornstarch and 1/4 cup water together in a small bowl until smooth; pour into the sauce, stirring continuously, until slightly thickened.
- Place flour, 2 tablespoons oil, 2 tablespoons cornstarch, egg, salt, and white pepper in a large bowl; gradually whisk in 1 1/2 cups water to make a thick batter. Add chicken pieces; stir until well coated.
- Heat oil in a large, deep skillet or wok to 360 degrees F (180 degrees C). Fry chicken pieces in preheated oil until golden, about 10 minutes; remove and drain on paper towels.
- Layer green peppers, pineapple chunks, and cooked chicken pieces on a platter; pour hot sweet and sour sauce over top.

Asian-inspired sweet and sour shrimp stir-fry.

- Whisk together honey, rice vinegar, tomato paste, pineapple juice, and soy sauce for sweet and sour sauce in a medium bowl. Whisk together water and cornstarch for thickener in another bowl. Set both aside.
- Pat shrimp dry with paper towels. Combine shrimp, salt, and pepper in a medium bowl; toss to season.
- Heat 1 tablespoon vegetable oil and the sesame oil in a wok or large sauté pan over medium-high heat. Add shrimp in a single layer to the hot oil; cook for 1 minute without stirring. Stir and cook for another 30 seconds. Transfer to a clean plate.
- Add remaining 1 tablespoon vegetable oil to the wok. When heated, add bell pepper and zucchini; stir-fry for 2 minutes. Add garlic and ginger; stir-fry until fragrant, about 30 seconds. Add pineapple; stir-fry for 30 seconds.
- Pour in the reserved sweet and sour sauce; stir and cook until simmering, about 2 minutes.
