A Key Lime Pie made without sweetened condensed milk. It really enhances the flavor of the lime.

Steps:
- Preheat oven to 425 degrees F (220 degrees C).
- Separate the eggs. Beat the egg yolks and set the whites aside.
- Combine the 1 cup white sugar, flour, cornstarch and salt in a saucepan. Gradually stir in the water. Cook over medium heat until thickened.
- Gradually stir the cooked sugar mixture into the beaten egg yolks, beating constantly. Return the mixture to low heat and cook, stirring constantly, for 2 minutes. Stir in the butter, lime juice and lime zest. Let mixture cool slightly.
- Beat egg whites until light and frothy. Add the cream of tartar and continue beating until stiff peaks form. Gradually beat in the remaining 6 tablespoons white sugar and beat until the meringue is stiff and glossy.
- Pour the lime filling into the prepared pie shell. Then pile the meringue on top, spreading it until it touches the edges of the pastry to prevent the meringue from shrinking. Bake pie at 425 degrees F (220 degrees C) for 5 to 6 minutes or until meringue top is golden brown.

I have been making this pie for many years. Every time that I serve it, people say "this is what a key lime pie is supposed to taste like". And they are right. I have tried those pie recipes using cream cheese or cool whip, but they are not authentic key lime pies. If you want the "real deal", this is it.

Steps:
- Beat egg yolks.
- Stir in sweetened condensed milk, key lime juice and rind.
- In a small bowl, stiffly beat 1 egg white.
- Fold into pie mixture.
- Turn into baked pie shell.
- Beat the three reserved egg whites with cream of tartar until foamy.
- Gradually add sugar, beating until stiff but not dry.
- Spread meringue on top of pie, sealing carefully to the edge of the pie shell.
- Bake 15 minutes at 350° or until meringue is golden brown.
- Cool in refrigerator at least 6 hours.

Steps:
- Heat the oven to 160C/fan 140C/gas 3.
- Whizz 300g Hob Nobs to crumbs in a food processor (or put in a strong plastic bag and bash with a rolling pin).
- Mix with 150g melted butter and press into the base and up the sides of a 22cm loose-based tart tin. Bake in the oven for 10 minutes. Remove and cool.
- Put 3 medium egg yolks in a large bowl and whisk for a minute with electric beaters.
- Add a can of condensed milk and whisk for 3 minutes, then add the finely grated zest and juice of 4 limes and whisk again for 3 minutes.
- Pour the filling into the cooled base then put back in the oven for 15 minutes. Cool then chill for at least 3 hours or overnight if you like. When you are ready to serve, carefully remove the pie from the tin and put on a serving plate.
- To decorate, softly whip together 300ml double cream and 1 tbsp icing sugar.
- Dollop or pipe the cream onto the top of the pie and finish with extra lime zest.

- Preheat oven to 350 degrees.
- Prepare the crust: Combine the graham cracker crumbs and butter in a mixing bowl and mix together for a crumbly crust.
- Press the mixture into an 8-inch pie pan.
- Bake the crust for 5 minutes.
- Remove the crust from the oven, but leave the oven on.
- Meanwhile, prepare the filling.
- Combine the egg yolks and sweetened condensed milk in a mixing bowl and beat with a mixer at high speed until light and fluffy, about 5 minutes.
- Gradually beat in the lime juice and zest.
- Pour the mixture into the crust.
- Bake the pie for 8 minutes, or until the filling is set and an inserted skewer comes out clean and hot to the touch.

I only use Nellie & Joe's Key Lime Juice when I make this to ensure a tart key lime pie. This has a meringue topping. Easy to make but you need to chill it overnight so that the flavors really work together. See what you think :)

- Combine graham cracker crumbs, brown sugar, and butter.
- Spray a 9-inch pie plate with PAM and press mixture into pieplate. Bake at 350 for 10 minutes; cool.
- Stir together milk and lime juice until blended; pour into crust.
- Make meringue topping by beating egg whites and cream of tartar at high speed until foamy.
- Add sugar, 1 tablespoon at a time, beating until soft peaks form and sugar dissolves (2-4 mintues).

- Squeeze juice from 4 lg or 6 small Key Limes and grate rind; set aside.
- Using a whisk beat egg yolks until buttercup yellow.
- Add about half the condensed milk, using whisk.
- Blend well and add remaining milk.
- Add half the lime juice and blend slowly.
- Add remaining juice and blend.
- Add grated rind; mix and pour into chilled pie crust.
- Refrigerate 4 hours.
- May be frozen.
- To serve, slice while still frozen and let stand about 10 minutes.

KEY LIME PIE
I came up with this on the fly, after a HUGE craving for Key Lime pie set in. It's basically the same recipe that I used years ago to make "cherry cheese cake", which came from a magazine. You might want to start out with only 1/3 cup lime juice - then add the remainder, if the filling isn't tart enough. My family and friends like the tartness better, but the key limes are a little mild. Some times If I'm making two pies, use 3 full pkgs of cream cheese. Meaning each pie gets 14oz....recipe is ver versatile.

- Let cream cheese soften at room temperature for at least an hour.
- Beat with a mixer on low speed for about a minute.
- Add eagle brand milk, and mix on low speed til creamy and well combined.
- Add vanilla and key lime juice, and stir with a spoon (important to not use mixer at this point), til all juice is incoportated.
- I'm laughing at my cookbook terms - just make sure it's well mixed.
- Chill at least one hour. Top with whipped cream, garnish with lime slices if desired.
