NUTMEG SUGAR CRISPS
My grandma shared her recipe for these old-fashioned sugar cookies with the unexpected taste of nutmeg. They are light, crunchy and so delicious. That's why they're always a part of the Christmas tradition.

NUTMEG VANILLA SAUCE
This sauce is based on a classic vanilla anglaise, a sauce thickened with egg yolks and served cold over berries, chocolate cake or with a hot fruit pie. It was invented by the French but called anglaise (or "English" in French) because they observed the English always pouring a light colored cream liquid on their desserts. That liquid was what the British call "pouring cream," and it's a very thick flavorful cold cream they serve with dessert in a pitcher and pour it over everything.

Steps:
- Heat the milk, nutmeg, and vanilla in a saucepan over medium heat, whisking occasionally to make sure the mixture doesn't burn or stick to the bottom of the pan. When the cream mixture reaches a fast simmer (do not let it boil), turn off the heat and let the flavors infuse for 10 minutes.
- In a bowl, whisk together the egg yolks and sugar. In a thin stream, whisk the cream mixture into the egg yolk mixture. Pour the egg-cream mixture back into the saucepan.
- Heat over medium heat, stirring constantly with a wooden spoon to 180 degrees F. At 160 degrees F, the mixture will give off a puff of steam. When the mixture reaches 180 degrees it will be thickened and creamy, like eggnog. If you don't have a thermometer, test it by dipping a wooden spoon into the mixture. Run your finger down the back of the spoon. If the stripe remains clear, the mixture is ready; if the edges blur, the mixture is not quite thick enough yet. When it is ready, quickly remove it from the heat and pour it though a fine-meshed strainer into a container in an ice bath to cool. Keep chilled and serve cold.
NUTMEG SYRUP
Warm nutmeg syrup tastes great drizzled over frozen vanilla yogurt, pancakes or waffles. The longer you heat the sugar-water mixture, the more the liquid evaporates - and the thicker, more concentrated the syrup. There is a point of no return, however, when you end up with hard, brittle, pseudo-candy, so don't walk away from the stove when preparing this. If you want a really dark-colored syrup, use dark brown sugar; for a golden, maple syrup shade, use light brown sugar. From the "Caribbean Light" cookbook.

Steps:
- In a small saucepan over medium-high heat, combine all ingredients.
- Bring the mixture to a light boil, then reduce the heat just enough to keep it at full simmer.
- Keep small, gentle bubbles breaking the surface, not a rolling boil.
- Simmer for 30 minutes, until the syrup is thick enough to coat the back of a spoon.
- Remove from the heat; the syrup thickens as it cools.
- When cool, store in the refrigerator in a clean glass jar or bottle with a lid, or a plastic squirt bottle.
- If you like, you can leave the nutmegs in (they look nice!) and they will add more flavor during storage.

MOM'S NUTMEG SUGAR COOKIES
This recipe came from a website I found on the internet, but don't remember which one. I made a huge batch of these today and they turned out really good. I am giving them to friends and family for the most part since they contain sugar, eggs and butter, something I try not to eat. You can make the sour milk by putting 1 tbsp. of lemon juice into a cup of milk and let it sit for 5 mintues. I didn't include the chilling time for the dough in this recipe.

Steps:
- Let the butter and eggs come to room temperature.
- Cream the butter and sugar together in a standing mixer. You want a nice light yellow fluffy mixture. Add eggs and mix well after each egg.
- In another bowl combine the dry ingredients. Add it to the butter/sugar/egg mixture alternating with the sour milk. Refrigerate the dough until its stiff.
- I left mine over night but a couple of hours would probably be ok.
- Roll the cookies out on a floured surface to about 1/4 inch. Cut out with decorative shapes.
- Bake at 350'F for 10 minutes.
- DO NOT OVER BAKE.
- You can frost these once they are cool, or sprinkle them with sugar before you bake them.
- This makes a lot of cookies, so share them with your friends and family.
- Make sure the cookies are totally cooled before putting them in a tin.
- Bon Appetit.
