DAEJI BULGOGI (SPICY KOREAN PORK BARBECUE)

Steps:
- Wrap pork in plastic wrap; freeze 1 1/2 hours or until firm. Remove plastic wrap; cut pork diagonally across grain into 1/16-inch-thick slices.
- Combine pork, sugar, and next 6 ingredients (sugar through garlic) in a large zip-top plastic bag. Seal and marinate in refrigerator 1 hour, turning bag occasionally.
- Prepare grill.
- Place a wire grilling basket on grill rack. Remove pork from bag; discard marinade. Place pork on grilling basket coated with cooking spray; grill 5 minutes or until desired degree of doneness, turning frequently.

Steps:
- Combine all ingredients except for pork loin and place in a sealable bag.
- Add the pork and place in the refrigerator and let set for at least 15 minutes.
- Preheat oven to 350°F.
- Remove pork from bag and place in a shallow baking dish. Roast in oven for 1 1/2 hours.

Steps:
- Season chicken with salt and pepper; melt butter in a skillet and brown chicken breasts on both sides.
- Arrange chicken in a 9 X 13 baking dish and top with sliced onion.
- In a large mixing bowl combine remaining ingredients, mix well and pour over chicken and onions.
- Bake at 450 degrees uncovered for 50 min to an hour.

Steps:
- With a soft pastry brush, gently brush the nor sheets with oil.
- Heat a large skillet or non-stick pan over medium low heat.
- place a sheet of nori in the pan for a few seconds.
- The nori will become crisp and turn dark green.
- With chopsticks or tongs, quickly flip the sheet over and toast the other side for a few seconds.
- Remove and place on a large cutting board.
- While still warm, lightly sprinkle each side of the nori sheet with sugar.
- Repeat with each sheet.
- When all the sheets have been sugared and toasted, stack the sheets in one pile.
- Cut the pile of sheets in half lengthwise, then cut crosswise to make 6 rectangular pieces of nori.
- Stack the smaller sheets in a pile and place a toothpick in the centre to hold them in place.

Steps:
- Combine the meat with the marinade and allow the mixture to soak for about 2 hours at room temperature; stirring occasionally to make sure all of the meat gets well coated.
- Take the meat from the marinade and pat dry. Set aside.
- Be sure to save the marinade.
- Coat the sides and bottom of a baking dish with the Sesame oil and add the meat.
- Bake in a preheated oven (375 F) for 50 minutes until the meat is tender.
- While the meat is baking, bring the marinade to boil.
- Reduce the heat to low and cook for approx 15 minutes. The amount should be a little reduced.
- When the meat is finished baking pour its cooking juices into the reduced marinade and bring it to a boil again.
- Put the meat on a serving dish and pour some of the juice over the pork.
- The remainder of the juice can be served separately for those who wish to have more their meat or as a gravy on their rice.
