- Center a rack in the oven and preheat the oven to 350 degrees F. Butter a 9-x-5-inch loaf pan, dust the inside with flour and tap out the excess.
- Put the pan on a baking sheet.
- In a small bowl, using your fingers, toss together the sugar, nuts and cinnamon until evenly mixed. Set aside.
- Whisk together the eggs, applesauce, oil and buttermilk until well blended. In a large bowl, whisk together the flour, sugar, baking powder, cinnamon, baking soda, salt, nutmeg and cloves. Remove 1/2 teaspoon of the mix and toss it with the fruit, just to coat; set aside. Stir the oats into the bowl. Pour the liquid ingredients over the dry and, using a large rubber spatula, stir just until everything is evenly moistened-this is a case.

I set out to create a quick bread that had all the nourishment of a bowl of oatmeal -- but that would be easy to slice and take with you.

- For the crumble topping: Combine the oats, butter, brown sugar and cinnamon in a small bowl; set aside.
- For the bread: Preheat the oven to 350 degrees F. Cut out an 8-by-4-inch rectangle of parchment paper and put in the bottom of a 9-by-5-inch loaf pan. Spray the pan and paper with cooking spray.
- Put the oats in a blender and blend to a flour-like consistency. Combine the oat flour, wheat flour, cinnamon, baking powder, baking soda and salt in a large bowl.
- Combine the honey, oil, vanilla and eggs in a medium bowl; add the sugar, stirring until combined. Add the apples and stir until well combined. Add the flour mixture and stir just until combined. Gently stir in the walnuts.
- Pour the batter into the prepared loaf pan and sprinkle with the crumble topping. Bake until a wooden pick inserted in the center comes out clean, about 1 hour. Cool in the pan on a wire rack 10 minutes, then remove from the pan to the rack and cool completely.

OATMEAL RAISIN WALNUT BREAKFAST BREAD
It comes together as easily as a pan of cornbread. Not too sweet -- those of us who don't care for sweets at breakfast can eat it. But a small amount of brown sugar brings out the flavor of the raisins and nuts. Note -- with the rising price of milk, I usually use dry milk for this sort of thing.

- Mix dry ingredients in a medium mixing bowl. Mix wet ingredients in a small bowl.

BREAD MACHINE OATMEAL BREAD
This is a very nice, basic oatmeal bread for your bread machine that I do make fairly often. The ingredients are simple, and great for those avoiding dairy products, since it's made with water. I think you'll like it. NOTE: I never tried it with wheat germ, but I'd bet it would be great! Baking time will vary based on your machine.

- In a small bowl, combine the boiling water, butter, salt and sugar. Stir in oats; cool to lukewarm. In a large bowl, dissolve yeast in warm water. Stir in the molasses, brown sugar and 1 cup flour. Beat until smooth. Stir in oat mixture and enough remaining flour to make a stiff dough. , Turn out onto a floured surface; knead until smooth and elastic, 6-8 minutes. Place in a greased bowl, turning once to grease top. Cover and let rise in a warm place until doubled, about 1-1/2 hours. , Punch dough down. Turn onto a lightly floured surface; divide in half. Shape each portion into a ball. Cover and let rest for 10 minutes; Shape into loaves. Place in 2 greased 9x5-in. loaf pans. - Measure all ingredients except raisins into the baking pan in the order recommended by the manufacturer.
- Insert pan into the oven chamber.
