THE BEST OATMEAL RAISIN COOKIES

Do you like chewy cookies? Or do you prefer cakey ones? Our oatmeal-raisin cookies can be both! For a chewy cookie, bake them right away. For a cakey cookie, let the dough rest in the refrigerator for at least 3 hours (or overnight works even better) to allow the oatmeal to hydrate. Then bake for a puffy cookie. We used dark brown sugar for added flavor and moisture but our secret ingredient is honey. When baked right away, the honey causes the cookie to spread, keeping it soft and moist. When you let the dough rest, the oatmeal and flour absorb the honey for that classic cakey texture.

Steps:

  • Arrange an oven rack in the center of the oven and preheat to 350 degrees F. Line a rimmed baking sheet with parchment paper.
  • Whisk together the flour, salt, baking soda and cinnamon in a small bowl until combined. Beat the brown sugar and butter in a large bowl with an electric mixer on medium-high speed until light and fluffy, about 3 minutes. Add the honey, vanilla, egg and 1 tablespoon warm water and beat on high speed until creamy, scraping the sides and bottom of the bowl, about 3 minutes more. Add the dry ingredients and mix on low speed, scraping the bowl as needed, until completely combined. Add the oats and beat on low speed until combined. Fold in the raisins until evenly distributed. Arrange twelve 1-ounce scoops (2-tablespoon portions) of cookie dough on the prepared baking sheet, leaving about 2 inches between each. Bake until the cookies are lightly golden around the edges, 15 to 20 minutes. Cool on the sheet for 10 minutes, and then transfer to a wire rack to cool completely. Let the baking sheet cool, and then repeat with the remaining cookie dough.

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • In a large bowl, cream together the butter, butter flavored shortening, brown sugar, white sugar, eggs, and vanilla until smooth. Combine the flour, baking soda, cinnamon, cloves, and salt; stir into the sugar mixture. Stir in the oats and raisins. Drop by rounded teaspoonfuls onto ungreased cookie sheets.
  • Bake 10 to 12 minutes until light and golden. Do not overbake. Let them cool for 2 minutes before removing from cookie sheets to cool completely. Store in airtight container. Make sure you get some, because they don't last long!

  • In a large bowl combine oats, flour, brown sugar, cinnamon, baking powder, baking soda and salt. With a pastry blender cut in shortening until crumbly. Stir in raisins, coconut, chocolate chips and pecans.
  • Refrigerate in an airtight container for up to 10 weeks.
  • Attach a tag that reads: Preheat the oven to 375 degrees F (190 degrees C). Grease a baking sheet, or line with parchment paper. Measure 4 cups of the mix into a large bowl. Whisk together 1 egg, 2 tablespoons milk and 2 teaspoons vanilla; stir into the mix. Roll into 1 1/2 inch balls and place on prepared baking sheet. Flatten with a fork dipped in sugar. Bake in preheated oven for 15 to 18 minutes, or until golden. Allow cookies to cool on baking sheet for 5 minutes before removing to a wire rack to cool completely.

  • 1. Mix the spices with the flour and sift one time to blend. Cream the butter and sugars until smooth. Add the egg and vanilla, mix well. Add the flour mixture and mix well. Fold in the oats and raisins blending them in.
  • 2. Drop by heaping teaspoons or use smallest scoop, onto parchment lined baking sheets. Bake at 350 for 8 minutes, DO NOT overbake or they will be hard...for nice smooth chewy cookies, 8 minutes is all they cook, remove from oven, cool on sheet for two minutes then remove to cooling rack to finish cooling.
  • 3. Note: Raisins may be plumped using water or juice...I use apple juice and brind to just a simmer in a boiler on the stove, remove from heat and let them set while I work on the batter, then squeeze the excess juice away and add to the batter.

  • 1. Instructions for layering ingredients: In 1-quart wide-mouth glass jar, gently layer and pack ingredients in the order listed. If there is any space left after adding the last ingredient, add more baking chips, dried fruits or nuts to fill the jar
  • 2. Place lid on top. Cut an 8-inch circle of fabric to cover lid. Place fabric over lid; secure in place with a rubber band, then ribbon or raffia. Decorate as desired.
  • 3. Note: When measuring brown sugar, crumble it between your fingers for uniform texture. Be sure to pack the brown sugar firmly in the jar to prevent the baking mix from sifting down through it.
  • 4. Make a gift card to attach as follows: "Empty contents of jar into medium bowl. Stir in 1 stick of butter or margarine, melted; 1 egg, and 1 teaspoon vanilla until well combined.   • Using a 1 quart or 1 liter jar, layer in the ingredients in the order given. Pack down the jar after each addition. Put the lid on, and cover with an 8 inch circle of fabric. Secure the fabric over the lid using a rubber band, then cover the rubber band by tying a nice piece of ribbon or raffia around the lid. Attach a tag to the ribbon with the following instructions:
  • Preheat oven to 350 degrees F (175 degrees C). In a medium bowl, cream together 3/4 cup of softened butter, with 2 eggs and 1 teaspoon of vanilla.   • Carefully measure each ingredient into layers in a 1 quart jar. Re-used glass ice tea jars work great as well. Judicious us of a slim rolled paper cone does wonders to keep the layers clean.   • Using a stand mixer fitted with the paddle attachment, cream the room temperature butter and both sugars together on medium speed until smooth. Add the egg and mix on high until combined, about 1 minute. Add the vanilla and continue to mix on high until combined. Scrape down the sides and bottom of the bowl. Set aside.
  • In a medium bowl, toss together the flour, baking soda, cinnamon and salt. Add the flour mixture to the butter mixture on the low setting until combined. While the mixer is on, add in the oats, raisins, and pecans. The dough is going to be sticky and thick. Chill the dough covered with plastic wrap for 30 minutes minimum and 60 minutes max. If you'd like to prepare the dough a few days ahead of time, allow the cookie dough to sit at room temperature for 30-40 minutes before scooping and baking.
  • Position 2 racks in the center of the oven and preheat the oven to 350 degrees F. Line two baking trays with parchment paper or silicone mats. Roll 1 1/2 tablespoons of cookie dough into a ball and place them a couple inches apart on the baking sheet. Bake for 9-10 minutes or until they start to get lightly brown around the edges. The centers will look undone, this is fine. Let cool on tray for 5 minutes before transferring to a wire cooling rack.
