Comfort food at its finest! This has been a staple in Nova Scotia homes for generations. Serve with brown bread and butter, and a good cup of tea! Prep time includes soaking the beans overnight.

Old Fashioned Baked Beans image

Steps:

  • Soak beans overnight, well covered with cold water.
  • Pour off soaking water and pick over beans to remove any bad ones, or debris.
  • Put beans in a pot.
  • Cover with fresh cold water and add 1 tsp. baking soda.
  • Bring to a boil and cook until skins of beans crack when you take one out on a spoon and blow on it.
  • Cut onion in quarters and put in bottom of a bean crock or large casserole.
  • Add the partially cooked beans.
  • Put cut up salt pork on top.
  • (Some people use the salt pork fat. I don't like fat, so I prefer to use the salt pork meat.) Combine brown sugar, molasses, mustard and salt with 1 1/2 cups boiling water.
  • Pour over the beans.
  • Add more boiling water, if needed, to come just to the top of the beans.
  • Also, if needed during baking tme, add more boiling water.
  • Bake, covered, at 300 degrees F for 6 hours, or until beans are tender.

French Canadian (Not Boston) Baked Beans image

Steps:

  • Pour the beans onto a plate, and pick-over looking for bad beans, or stones. Place beans in bowl, cover with water by at least 2 inches, and soak overnight.
  • Preheat oven to 250 degrees F.
  • Drain beans and place in 4-quart bean pot. Add onion, dry mustard, pepper, salt, and maple syrup. Add water to cover. Cut salt pork into 1-inch pieces and place on top of beans. Bake covered, approximately 8 hours. Check each hour to see if water needs to be added. You can add more maple syrup in place of water for flavor, if desired.
  • Serve the beans with brown bread, franks, or ham. For breakfast, serve with eggs, bacon, and home-fries.

A wonderful old-fashioned baked bean flavor. This recipe has served by family for 29 years and originally came from my mother-in-law. It tastes great served with fresh cornbread or biscuits and honey. Although you need to allow time for soaking and simmering the beans, this recipe is still quite easy.

Steps:

  • Soak beans overnight in cold water. Simmer the beans in the same water until tender, approximately 1 to 2 hours. Drain and reserve the liquid.
  • Preheat oven to 325 degrees F (165 degrees C).
  • Arrange the beans in a 2 quart bean pot or casserole dish by placing a portion of the beans in the bottom of dish, and layering them with bacon and onion.
  • In a saucepan, combine molasses, salt, pepper, dry mustard, ketchup, Worcestershire sauce and brown sugar. Bring the mixture to a boil and pour over beans. Pour in just enough of the reserved bean water to cover the beans. Cover the dish with a lid or aluminum foil.
  • Bake for 3 to 4 hours in the preheated oven, until beans are tender. Remove the lid about halfway through cooking, and add more liquid if necessary to prevent the beans from getting too dry.

Steps:

  • Soak the beans in cold water overnight in a large container. Drain in a colander.
  • Heat oven to 300 degrees. In a small saucepan, combine molasses, mustard, brown sugar, tomatoes, bay leaves, salt, pepper, and 5 cups water. Bring to a boil, and whisk until the sugar has dissolved. Stud the onion halves with the cloves, and place in the bottom of a terra-cotta bean pot or Dutch oven.
  • Score the salt pork 1/4 inch deep 1 inch apart, and slice into two even pieces. Transfer to the bean pot. Add the soaked beans. Pour the molasses mixture over beans, stir, and cover. The liquid should cover the beans by 1/2 inch. Add more water if necessary.
  • Transfer to oven to bake, without stirring, until the beans are tender and the liquid has thickened, about 6 hours. Check the beans every 45 minutes, adding more hot water if necessary to keep beans slightly soupy at all times. For the last 50 to 60 minutes of cooking, uncover beans, and, using tongs or a long fork, pull the pork to the surface. Remove from oven, and adjust the seasoning with salt and pepper, if necessary. Serve.

Steps:

  • Soak navy beans overnight in a large bowl with enough water by several inches. Drain and place beans into a large Dutch oven or heavy pot with 6 cups water, baking soda, and bay leaf. Bring to a boil, reduce heat to medium, and boil for 10 minutes. Drain, saving bean-cooking liquid.
  • Preheat oven to 300 degrees F (150 degrees C).
  • Transfer beans into clean Dutch oven and stir bacon, onion, molasses, brown sugar, dry mustard, salt, and black pepper into beans. Pour enough of the hot reserved bean liquid in to cover beans; stir.
  • Cover Dutch oven and bake in preheated oven for 1 hour. Check liquid level and add more of the reserved bean liquid to bring liquid up to cover beans. Return to oven and continue baking until beans are tender and almost all the liquid has been absorbed, about 1 hour.
  • Raise oven heat to 350; bake beans uncovered in oven until top develops a flavorful crust, 20 to 30 more minutes.

Old Fashioned French Canadian Baked Beans image

Steps:

  • Cover beans with water and soak overnight.
  • Rinse beans then bring to a boil in approximately 1 quart of water, bay leaf and garlic - simmer for 30 minutes.
  • Turn off heat and let beans stand for approximately 1 1/2 hours until soft. Drain and reserve the bean liquid. Discard bay leaf and garlic.
  • Mix together remaining ingredients (excluding beans and bacon).
  • Add beans to bean pot (or any covered dish).

  • Arrange bacon on top.

Steps:

  • Prepare beans: Rinse well and discard any stones or shriveled beans.
  • Soak beans in water in a 5 quart Dutch oven, using the overnight or quick soak method.
  • Overnight Method: Cover each cup of dried beans with 3 cups of water; let stand for a minimum of 12 hours.
  • Quick Soak Method: Add beans to boiling water, allowing 3 cups of water for each cup of beans, bring back to the boil and boil for 2 minutes; remove from heat, cover and leave for an hour, then cook in same water.
  • Bring mixture to a boil, add salt, reduce heat, cover and simmer for an hour.
  • Stir in molasses and next 3 ingredients.
  • Stud the onion with the cloves; tuck onion & ham bone (or salt pork) into the beans.
  • Cover and bake in a 250F oven for about 7 hours; check & stir about once an hour.
  • Add more water to keep beans moist but not too wet OR remove lid to thicken mixture through evaporation; it all depends on your preference for thick or runny!
  • Discard cloves, chop onion and return to mixture.
  • Remove meat from ham bone (or cut salt pork into pieces, discarding fat) and return to mixture.

Old-Fashioned Bean Pot Baked Beans image

Steps:

  • Rinse beans and pick them over. Put beans in a large plastic container with three times as much water as beans. Cover and refrigerate overnight.
  • Drain beans. Combine beans and chopped onion in a large saucepan. Add water to cover them and heat to boiling. Cover and let simmer about 30 minutes. Drain liquid into a small bowl to reserve for sauce and for cooking.
  • Measure 1/2 cup of the bean liquid into a bowl. Add the orange juice, molasses, maple syrup, ketchup, and prepared mustard. Then add the brown sugar, stirring to dissolve. Lastly, add the dry mustard and salt and combine.
  • In a 2-quart bean crock or covered baking dish layer half the salt pork and all of the beans, making sure to bury the peeled, whole onion in the bottom. Pour the sauce mixture over beans and add just enough reserved bean liquid to cover them. Top with remaining salt pork.
  • Bake, covered, at 300 degrees for 4 hours, checking on the hour. If beans seem too dry, add a little of the remaining bean liquid. Uncover and then bake for one hour more.

There's your bacon vs. salt pork, your molasses vs. maple syrup, etc. This is my mother's recipe, which I ate all through my childhood, so to me this is how BBB should taste. Live dangerously -- make these once just the way the recipe says before you start fiddling with 'em.

Steps:

  • Wash the beans and pick out any bad ones.
  • Put beans in a 3- or 4-quart pot and cover well with water.
  • Simmer (NOT boil) for about an hour; check occasionally to be sure water doesn't cook away.
  • Drain beans and rinse.
  • Return to pot.
  • Mix together remaining ingredients (except the salt pork) and stir into beans, together with enough water to cover beans well.
  • Put beans into a stoneware pot of some kind. A real beanpot, the kind with the two little handles and the narrow neck, is best. Otherwise, any stoneware pot that holds about 3 quarts and has a well-fitting cover will do. They will not taste as good baked in metal, or even pyrex.
  • Cut the salt pork into two or three pieces and add to the pot; push pieces down into the beans somewhat.
  • Bake at 300 degrees for 6 to 8 hours.
  • Check occasionally, and if top is dry, add more water.
  • If you want to, you can put some hot dogs or rope sausage such as Hillshire Farms beef sausage in on top of the beans for the last hour or so of baking. The meat cooks at the same time as the beans, and picks up their flavor.
  • The right thing to serve with these beans is, of course, Boston Brown Bread, for which I have noticed a couple of recipes here on the Zaar.
  • There are two ways to cut down on the time a bit. One is to simmer the beans about 20 minutes longer and then bake them for only about 3 hours. Also, after simmering, you can put the beans in a crockpot. That takes longer-figure about 18 hours to be sure that the beans won't be crunchy-but they can be left unattended.

Overnight Old Fashioned Baked Beans image

Steps:

  • Wash beans, place in medium bowl, cover with cold water and refigerate overnight.
  • Drain beans, place in saucepan and cover with 6 cups hot water, bring to boil.
  • Reduce heat, simmer covered 40 minutes or till tender.
  • Preheat oven to 300°F.
  • Drain beans, reserve 2 cups liquid.
  • Place beans in 2 quart bean pot or casserole with tight fitting lid.
  • Mix together all other ingredients (except pork), add bean liquid and stir to combine.
  • Add pork to beans, mix in well.
  • Pour liquid ingredients over beans and stir well, be sure liquid covers beans.
  • Cover and bake 5 hours.
  • Stir every hour, if bean dry out add small amounts of boiling water as needed.
  • Note: preparation time doesn't include overnight refrigeration.

Easy,delicious old fashioned baked beans. No need to soak overnight. Cook on low in the crockpot overnight and they come out perfect everytime. Only add water if needed otherwise they will come out too wet. The longer they cook the beter they taste.

Crock Pot Boston Baked Beans image

Steps:

  • In crockpot, stir together, beans, chopped onion, sugar, molasses and mustard. Add salt pork and 5 cups water.
  • Cook on high for 4 hours, change to low and cook until dark brown and beans are tender. Stir occasionally. Add water if the beans begin to look dry and are still uncooked. I cook overnight on low and the beans are usually done in the morning. I don't remember the exact amount of salt pork but I usually buy the square package of Hormel.

1 lb white beans (great northern)
8 ounces salt pork (sliced)
1 medium onion (chopped)
1/2 cup brown sugar
1/2 cup molasses
1 tablespoon yellow mustard
5 -6 cups water

Boston Baked Beans in Bean Pot - Durgin-Park image

Steps:

  • NOTE: Use navy beans, California pea beans, or small white beans.
  • Soak beans overnight.
  • In the morning, preheat oven to 325°F Place the baking soda in a Dutch oven and fill half way with water.
  • Bring to a boil, add the beans & boil for 10 minutes.
  • Drain beans in a colander and run cold water through them. Set aside.
  • Dice the salt pork (available in the bacon section of the grocery store)into 1-inch squares.
  • Put half of the salt pork on the bottom of the bean pot, along with the onion.
  • Put beans in the pot.
  • Put the remaining salt pork on top of the beans.
  • Mix the sugar, molasses, mustard, salt and pepper with 3 cups of hot water and pour over the beans.
  • Cover pot with lid and place the pot into the preheated oven.
  • Bake for 6 hours.
  • Check pot periodically to make sure the amount of liquid is okay.
  • Add water to the beans slowly as needed to keep them moist; DO NOT FLOOD THEM. Just "top them up".
  • Remove the pot from the oven and serve.
  • NOTE: The Durgin-Park, a Boston restaurant whose origins date back to the American Revolution, is famous for its Boston baked beans, baked Indian pudding and apple pan dowdy. Durgin-Park cook Tommy Ryan has prepared this recipe at the restaurant for the past 37 years.
  • Durgin-Park serves 1,000 diners on an average Saturday evening. The waitresses have a reputation for their long memories: the second time you come in, you get the same thing you ordered the first time--unless you speak fast.
