HAM BALLS

(I was given this recipe a few years ago). It is one everyone will ask for. I took it once to a Birthday Party and was asked for the recipe by at least 5 people including the host. These can be served for dinner on rice or taken to parties and kept warm in a crockpot until serving. They can also be made ahead of time and frozen.

Ham Balls image

Steps:

  • (3 batches of sauce is best when filling a crockpot with a double batch of balls) Ham Balls: Mix all together, gradually adding milk at the end to moisten enough to form balls.
  • Bake balls on a cookie sheet for 20 minutes at 350 degrees, drain fat and cool.
  • Sauce: Mix togther, heat and simmer 10 minutes until well blended.

1 lb ground ham (if needed you can get a ham steak or chunk at the deli counter to grind)
1 lb ground pork
2/3 cup crushed cracker crumb
1/2-3/4 cup milk
1 green pepper, very finely chopped
2 eggs
1 medium onion, very finely chopped
1 1/2 cups brown sugar
3/4 cup catsup
1 teaspoon dry mustard
1/2 cup molasses
1 teaspoon Worcestershire sauce

Old Fashioned Glazed Ham image

Steps:

  • Preheat the oven to 350 degrees F. Put oven rack in the middle of the oven.
  • In a small bowl, mix together the Dijon mustard, brown sugar, and thyme.
  • Put the ham in a large roasting pan, fat side up. Rub the ham with mustard glaze. Pour the pineapple juice into the bottom of the pan. Put the ham in the oven and bake for 2 hours, brushing every 20 minutes with the pineapple juice. Remove the ham from the oven.
  • Turn oven to 400 degrees F.
  • Using toothpicks, decoratively adhere the pineapple rings around the ham and put a cherry in the center of the pineapple ring. Sprinkle the pineapple rings lightly with brown sugar. Return to the oven, uncovered, and bake until the pineapples turn a light golden brown. Remove from the oven to a serving platter and let rest for 15 minutes before slicing.

Old-Fashioned Ham with Brown Sugar and Mustard Glaze image

Steps:

  • Preheat oven to 325°F. Place ham in large roasting pan. Pour apple juice over ham. Cover ham completely with parchment paper, then cover ham and roasting pan completely with heavy-duty foil, sealing tightly at edges of pan. Bake ham until instant-read thermometer inserted into center of ham registers 145°F, about 3 hours 45 minutes. Remove ham from oven. Increase oven temperature to 375°F.
  • Remove foil and parchment from ham. Drain and discard liquids from roasting pan. Cut off rind and all but 1/4-inch-thick layer of fat from ham and discard. Using long sharp knife, score fat in 1-inch-wide, 1/4-inch-deep diamond pattern. Spread mustard evenly over fat layer on ham. Pat brown sugar over mustard coating, pressing firmly to adhere. Drizzle honey evenly over. Bake until ham is well glazed, spooning any mustard and sugar glaze that slides into roasting pan back over ham, about 30 minutes. Transfer ham to serving platter; let cool at least 45 minutes. Slice ham and serve slightly warm or at room temperature.

  • Preheat oven to 350°. Pulse ham in batches in a food processor until finely ground. Combine with the next 7 ingredients just until mixed. Shape into 1-in. balls; place in a single layer on greased 15x10x1-in. baking pans., For glaze, cook and stir all ingredients in a small saucepan over medium heat until sugar is dissolved. Spoon over ham balls. Bake until ham balls are just beginning to brown, 30-35 minutes, rotating pans and carefully stirring halfway through. Gently toss in glaze. Serve warm.

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • In a large bowl, combine the ham, pork OR sausage, and the ground beef. Stir in the milk, eggs and graham cracker crumbs and mix well. Form into large balls about 2 inches in diameter and place them in a 9x13 inch baking dish.
  • In a separate medium bowl, combine the soup, vinegar, brown sugar and mustard powder. Mix well and pour over the meatballs.
  • Bake at 350 degrees for 1 hour or until internal meat temperature reaches 160 degrees F (73 degrees C).

  • Preheat the oven to 350 degrees. Lightly grease (2) 9x13 baking dishes with oil and set aside. Use the coarse setting on your meat grinder to grind the leftover ham. If you don't have a meat grinder, you can use a food processor to pulse until it is chopped like hamburger meat.
  • Combine all the meatball ingredients in a large bowl and mix with your hands until combined. Roll into 1 1/2" - 2" meatballs. I use a medium size cookie scoop to scoop them all the same size before smoothing them with my hands. Arrange the meatballs in the baking pans and set aside.
  • Whisk together all the glaze ingredients in a medium size saucepan over medium high heat. Bring to a boil, whisking until the sugar has dissolved. Reduce the heat to medium and simmer for 4-5 minutes, until the sauce has thickened.
  • Pour the glaze over the ham balls, dividing it between the two pans. Bake the ham balls, uncovered, for 75-85 minutes, until the ham balls have browned and the sauce has reduced to a syrupy consistency. Enjoy!
