TUNA LOAF
Quick, cheap, tasty and nutritious! Mom used to serve this all the time to our busy family. I replace the 2 lightly beaten eggs with Egg beaters or egg whites and substitute crushed popcorn, or GF cracker/breadcrumbs so that I can continue to enjoy this dish.

Steps:
- Preheat oven to 350 degrees.
- In a large bowl, stir together tuna, breadcrumbs, egg, bell pepper, and onion. Then add milk, Worcestershire sauce and Tobasco, and salt and pepper, mixing with your hands.
- Pack ingredients into a large, greased loaf pan.
- Bake about 45-50 minutes, until top is golden brown and center is thoroughly cooked. Allow to cool about 10 minutes before slicing and serving. Enjoy!

TUNA LOAF
Steps:
- Preheat oven to 350 degrees F (175 degrees C). Grease a large loaf pan.
- Mix tuna, cream of chicken soup, milk, cracker crumbs, bread crumbs, onion, egg, and black pepper until thoroughly combined and spoon the mixture into the prepared bread pan. Smooth top.
- Bake in the preheated oven until a toothpick inserted into the loaf comes out clean, 25 to 30 minutes.

Steps:
- Preheat the oven to 350 degrees.
- Line a standard-size loaf pan with aluminum foil.
- Spray the foil-lined pan with non-stick cooking spray and set it aside.
- Cook the macaroni in a large pot of boiling water according to package directions.
- Drain it thoroughly and add the butter, stirring until it melts, set aside.
- Combine the eggs and egg whites in a large bowl and beat them lightly.
- Add the onion, tuna, olives and bread crumbs and mix well.
- In a large saucepan combine the milk, salt, dry mustard and horseradish.
- Mix well and bring to a boil over medium heat.
- Reduce the heat to low and simmer for 2 minutes.
- Add the cheese and stir just until it starts to melt, then pour it into the tuna mixture in the bowl.
- Add the macaroni and mix well.
- Carefully spoon the mixture into the prepared pan and, using your hands, press it down firmly.
- Bake in the preheated oven until golden brown, about 1 hour.
- Allow to cool for 10 minutes before turning it over onto a serving dish or cutting board.
- Using a serrated knife, cut the loaf into 8 slices.
TUNA-MACARONI SALAD
You pretty much already have everything you need to make this side dish, a great accompaniment to fried or grilled proteins. Some people love raw onion and celery, but you can leave them out or keep them in as you like. Make sure you use tuna packed in water. (Tuna in olive oil will make the salad too oily.) It's best chilled - don't serve it at room temperature - its creamy unctuousness balances out the heat (from spice or from cooking) of whatever it's paired with.

- Bring a large pot of well-salted water to a boil, and cook the macaroni according to package instructions, until slightly pasta al dente. Drain, rinse with cold water until the pasta is cool and set aside.
- In a large mixing bowl, combine the cooked macaroni, tuna, eggs, mayonnaise, relish, mustard, onion powder, pepper and 1 teaspoon salt. Add chopped celery and onion, if using, and toss gently with a spoon to combine.
- Taste and adjust salt and mayonnaise as needed. Cover and refrigerate for at least 3 hours, and up to overnight. Sprinkle with paprika for garnish before serving cold.

- Heat butter in a small frying pan over medium heat, and cook and stir onion for 3 minutes. Reduce heat to medium-low, stir in maple syrup, and cook until onions are soft and golden, 7 to 10 minutes.
- Set oven rack about 8 inches from the heat source and preheat the oven's broiler.
- Stir together tuna and salad dressing in a bowl; season with salt and pepper. Slice bread loaf in half horizontally, then halve both pieces lengthwise, making four equal pieces. Place bread, crust-side down, on a baking sheet. Layer tuna mixture, onion, and Cheddar cheese evenly over bread pieces.
- Broil in the preheated oven until cheese is bubbly, about 5 minutes.
