CARAMEL APPLE PECAN BARS
Caramel apple flavor in bar cookie form...love, love, love! These aren't the type of cookie bar you can eat with your hands. They're ooey gooey so you'll need a plate. They have a crunchy cinnamon crust and a caramel apple center. Each bite tastes like fall. Serve with a scoop of ice cream and it's the perfect autumn dessert.

Steps:
- 1. Preheat oven to 350. Grease or spray a 9 x13 pan.
- 2. Mix flour, baking soda, cinnamon, and salt in a bowl. Set aside.
- 3. In another bowl, mix brown sugar, eggs, melted butter, vanilla, and 1 cup of the chopped nuts (keep the other 1/4 C for topping).
- 4. Stir in dry ingredients. When well-mixed reserve 1 cup for topping.
- 5. Pour into pan (it may be hard to spread but it will eventually, lol). Bake that for 20 minutes.
- 6. While baking, melt the caramels and milk in the microwave 2-3 mins. Stir carefully after each min (this is also not easy to do but it eventually will get smooth and creamy. Cool that for 5 minutes.
- 7. When the crust comes out of the oven, drain any juice from the apples. Pour the apples on the crust and spread evenly.
- 8. Then pour the caramel over the apples staying about 1/2" away from the edges.
- 9. Then drop teaspoons of the reserved batter over that spreading as well as you can. Sprinkle with reserved chopped pecans.
- 10. Return to oven and bake for 15 - 20 minutes at 350. Cool well before trying to cut.
GOOEY BUTTER PECAN BARS
This recipe is popular with our entire family. It originated (in our family) with my husband's Aunt Ruby. She was a wonderful cook and a great hostess. These are very rich and gooey, which makes them great with coffee. I only make them around Christmas and we share them with our neighbors.

- 1. Mix together cake mix, one egg, one stick margarine (or butter) and one cup chopped pecans.
- 2. Pat the above mixture into a 9" x 12" pan, forming crust.
- 3. Mix together cream cheese, vanilla, one stick margarine (or butter), three eggs, powdered sugar and a pinch of salt.
- 4. Pour this mixture over crust mixture. Bake at 325 for about 45 minutes.
- 5. Let cool completely. These are very rich, cut into small, bite size pieces to serve. Store in refrigerator. Really good with coffee. Keeps well for weeks.

- Preheat oven to 350 degrees F (175 degrees C). Grease a 9x13 inch pan.
- In a large bowl, mix together the cake mix, melted butter and 1 egg until smooth. Batter will be thick. Spread evenly into the bottom of the prepared pan. Next, sprinkle the chocolate chips over the layer of dough. Finally, beat the cream cheese, 2 eggs and confectioners' sugar together in a medium bowl until smooth. Pour as evenly as you can over the chocolate chips.
- Bake for 35 to 40 minutes in the preheated oven, until the top is set. Let cool for at least 30 minutes before cutting into bars.

PINEAPPLE GOOEY CAKE
This is a variation on Paula Deen's Pumpkin Gooey Butter Cake. It was made and served at a Bake Sale in my office and the baker referred me to the Food Network for the recipe. It is scrumptious!

- Preheat oven to 350°.
- Combine the cake mix, egg, and butter and mix well with an electric mixer. Pat the mixture into the bottom of a lightly greased 13 by 9-inch baking pan.
- To make the filling: In a large bowl, beat the cream cheese and pineapple until smooth. Add the eggs, vanilla, and butter, and beat together.
- Next, add the powdered sugar, cinnamon, nutmeg, and mix well. Spread pineapple mixture over cake batter and bake for 40 to 50 minutes. Make sure not to overbake as the center should be a little gooey.
- Serve with fresh whipped cream.

- Heat oven to 350°F. Grease 13x9-inch pan with shortening or cooking spray.
- In large bowl, place cake mix, brown sugar and corn syrup. Break eggs into 1-cup glass measuring cup; fill with water until it reaches 2/3 cup. Add egg mixture to bowl; beat with electric mixer on medium speed 1 minute or until combined. Spread in pan. Sprinkle marshmallows and chocolate chips over batter.
- Bake 35 to 40 minutes or until toothpick inserted in center comes out clean. Cut into 6 rows by 4 rows and enjoy!

OOEY GOOEY PINEAPPLE BARS
If you love pineapple, you will love these bars...The butter rich crust just melts in your mouth, and the subtle hint of rum, really works with the overall flavor...you could use coconut, pineapple or vanilla extract as well...they would still be delicious!! - 1. Preheat oven to 350 degree F. Spray a 9 x 13 baking pan or dish with nonstick cooking spray.
- 2. In a medium bowl, mix the flour, confectioners' sugar and butter until crumbly.
- 3. Press into prepared baking pan, evenly with fingers. Bake for 10 minutes. Set aside.
- 4. In the same bowl; beat the eggs with a wire whisk until blended. Add the remaining filling ingredients, mix until well blended.
- 5. Pour and spread over crust evenly.
- 6. Bake for 35 - 40 minutes or until golden. Cool completely on cooling rack.
- 7. Glaze: In a small bowl, mix frosting ingredients until smooth. You can thin it out with more pineapple juice if you want it to be more like a glaze and not as thick as a frosting. Glaze the bars and sprinkle with coconut. I have also toasted the coconut for these bars. Great either way.
- 8. Enjoy!! They sure are yummy!
