Steps:

  • Cut the ends off the navel and blood oranges, then cut away the peel and white pith. Working over a bowl, cut along both sides of each membrane with a paring knife to remove the segments, allowing them to drop into the bowl. Discard any seeds. Squeeze the juice from the membranes into a small bowl (you should have about 1 cup of juice).
  • Bring the reserved orange juice, honey and ginger to a simmer in a small saucepan over medium heat. Cook until syrupy, 8 to 10 minutes. Let cool completely; discard the ginger. Toss the syrup with the oranges and apples.

4 navel oranges
4 blood oranges
3 tablespoons honey
1 1-inch piece ginger, thinly sliced
1 green apple, thinly sliced
1 red apple, thinly sliced

ORANGE SALAD

You don't need salt to bring out the fantastic flavor of this zesty salad from our Test Kitchen. A dash of spices and minced cilantro add to its somewhat exotic appeal. TIP: To easily peel the oranges, cut off both ends and stand the orange upright on a cutting board. Cut downward in vertical strips following the curve of the orange to remove the peel.

ORANGE AND RADISH SALAD

The marriage of radish and orange punches way above its weight as a salad. This version is based on one James Beard collected. Alice Waters, the founder of Chez Panisse, has a recipe, too. So does Paula Wolfert, who dedicated her nine cookbooks to Mediterranean cuisine. Their inspiration came from countless Moroccans who have this salad in regular rotation, often with orange flower water. This recipe leaves it out, opting for a simpler but still refreshing salad that requires careful, precise preparation of the oranges and the radishes to make it shine. If you like, add a pinch of cinnamon to the dressing or sprinkle a bit on top.

Steps:

  • Combine lemon juice, sugar and ¼ teaspoon salt in a jar. Twist on the lid and shake until the sugar and salt dissolve; chill dressing thoroughly.
  • When ready to serve, simply arrange the orange rounds on a serving dish or individual plates, top with a pretty pile of radish matchsticks and drizzle with the dressing. Grate a bit of orange zest on top, if desired, and serve with the tiniest bit of flaky sea salt for finishing, if you like - but that exact amount is best left to individual diners.

1/3 cup fresh lemon juice (from 2 lemons)
2 tablespoons granulated sugar
Flaky sea salt
4 large oranges (preferably a mix of Cara Cara and navel oranges), peeled, pith completely removed, citrus sliced into rounds, deseeded and chilled, plus fresh orange zest for garnish if desired
1 bunch red radishes, cut into thin matchsticks and chilled

  • Take one of the smaller orange citruses and, using a Microplane, finely grate the zest from half of it into a small bowl. Stir in the vinegar, olive oil and chile flakes, then season the vinaigrette with salt and pepper.
  • Working on a cutting board, remove the pith and peel from all the citrus. For citrus bigger than a tennis ball, cut between the membranes to free its wedge-like sections. For smaller citrus, simply slice across the sections to make thin rounds, about ¼-inch-thick, removing any seeds as you go. Transfer all the sliced citrus and juices to a serving platter big enough to fit them in a single-ish layer and preferably one with a lip to contain their juice. Spoon the vinaigrette over the slices.
  • Arrange the celery slices evenly over the citrus. If your feta comes with brine, drizzle a couple teaspoons of the brine over the salad. Roughly crumble the feta and arrange it over the salad, followed by the olives. Cover the whole salad with a sheet of plastic wrap or foil and refrigerate until cold, at least 1 hour or up to 8 hours.
