Orange-Almond Streusel Muffins image

Steps:

  • Heat oven to 400°F. Grease bottoms only of 12 regular-size muffin cups with shortening or cooking spray, or line muffin cups with paper baking cups. In medium bowl, mix 1 tablespoon Bisquick mix, 2 tablespoons brown sugar and 2 tablespoons almonds. With fork, cut in butter until crumbly. Set aside.
  • In large bowl, mix orange peel, orange juice, 1/3 cup brown sugar, the oil, almond extract and egg. Stir in 2 cups Bisquick mix just until moistened. Stir in 1/4 cup almonds. Divide batter evenly among muffin cups. Sprinkle with streusel topping.
  • Bake 13 to 15 minutes or until golden brown. Immediately remove from pan to cooling rack. Serve warm.

Cinnamon Streusel Orange Muffins image

Steps:

  • Preheat the oven to 350 degrees F (175 degrees C). Grease a 12 cup muffin tin, or line with paper liners.
  • In a medium bowl, stir together 2 cups flour, 3/4 cup white sugar, baking powder and salt. In a separate bowl, whisk together the vegetable oil, orange juice, buttermilk, vanilla, and eggs. Pour the wet ingredients into the dry, and mix until just blended. Some lumps are okay.
  • Fill the prepared muffin cups halfway with the batter. Combine the brown sugar, and 1 1/2 teaspoons cinnamon; sprinkle about 1/2 teaspoon of the mixture onto each half-full muffin cup. Spoon batter over the cinnamon mixture so that the muffin cups are 2/3 full. In a small bowl, mix together the remaining 1/4 cup flour, 1/4 cup white sugar, 1 1/2 teaspoons cinnamon, and the butter to make a crumbly mixture. Sprinkle this generously over the tops of the muffin batter.
  • Bake for 20 to 22 minutes in the preheated oven, until a toothpick inserted into the crown of a muffin, comes out clean. Cool in the pan, over a wire rack.

Streusel-Topped Orange Cranberry Muffins image

Steps:

  • Make streusel by combining muesli, flour, brown sugar and salt in a bowl.
  • Add butter and water to mixture.
  • Using fingertips, mash together until mixture forms small pieces.
  • Place in freezer until firm, about 30 minutes.
  • Place the juice in a saucepan over medium-high heat and reduce to 1/2 cup.
  • Cool slightly.
  • Preheat oven to 350 degrees.
  • Spray muffin tin with cooking spray.
  • Sift together dry ingredients.
  • In a separate bowl, combine butter, yogurt, vanilla extract, orange peel and reduced orange juice.
  • Add egg and egg white and combine thoroughly by hand using a wire whisk.
  • Add dry ingredients to wet mixture in two parts.
  • Mix by hand until just combined.
  • Gently fold in cranberries.
  • Divide batter evenly between muffin cups.
  • Sprinkle 2 teaspoons of streusel topping on top of each muffin.
  • Bake muffins until tops are lightly golden and a toothpick comes out clean, about 35 minutes.
  • Remove muffin pan from oven and cool on wire rack for 5 minutes.

Orange Pumpkin Muffins image

Steps:

  • For the streusel: stir flour with icing sugar and baking powder. Add melted butter and vanilla & mix lightly with a fork until moist crumbs form. Set aside with 1/4 cup of pumpkin seeds.
  • For the muffins: preheat oven to 375°F Spread 1/4 cup of pumpkin seeds on a cookie sheet & toast 5 to 7 minutes - until a few begin to brown & they smell good - watch them closely. Cool them off the cookie sheet.
  • Grease a 12 muffin tin, including the top (make big muffin topps release easily too).
  • Sift dry ingredients into a large bowl.
  • In a second bowl, grate the zest of the orange. Squeeze 1/4 cup orange juice in with the zest. add the egg & beat lightly. Stir in pumpkin puree, buttermilk, juice, vanilla and butter.
  • Fold wet pumpkin mixture into flour until mostly moistened. Then stir in toasted pumpkin seeds until well mixed; divide batter among cups, heaping slightly in centre (batter completely fills cups). Sprinkle with raw pumpkin seeds; then top liberally with streusel crumbs. Press seeds and crumbs gently into muffin tops.
  • Bake in center of preheated oven for 25 to 28 minutes or until a toothpick inserted into muffin centre comes out clean and tops are lightly golden.
  • Rest on cooling rack for 5 minutes; then lift each muffin out of pan onto rack. Cool completely; to serve, lightly sieve a spoonful of confectioner's sugar over muffin tops, if desired.

Steps:

  • Preheat oven to 375 and prepare muffin tins.
  • Prepare Struesel - combine all ingredients. Set aside.
  • For the muffins, in a large bowl, combine flour, sugar, baking powder, baking soda and salt, if using, until combined. Make a well in the center.
  • In a separate medium bowl, combine buttermilk and remaining muffin ingredients.
  • Pour mixture into well of flour mixture.
  • Stir with a wooden spoon until just combined - will be lumpy.
  • Spoon batter into muffin cups and sprinkle evenly with poppy seed struesel.
  • Bake for 18-20 minutes until golden brown.

Any-Fruit-Will-Do Muffins With Streusel Topping image

Steps:

  • For the streusel topping:.
  • Mix sugar, cinnamon and pinch of salt in a small bowl or work bowl of a food processor, add butter. If mixing by hand, use fingertips, a pastry blender, or 2 forks to blend the fat into dry ingredients until mixture looks like coarse irregular crumbs, with no visible lumps of butter. If mixing in a food processor, pulse about 10 times, then process 5 to 10 seconds, until there are no visible lumps of butter; stir in nuts. Set aside.
  • For the muffins:.
  • Adjust oven rack to middle position and heat oven to 400 degrees. Lightly grease the top surface of a 12-cup muffin pan; use liners, if necessary.
  • Whisk 2 1/2 cups flour with next 4 ingredients in a medium bowl, set aside.
  • Whisk together next 4 ingredients in a large bowl; whisk in buttermilk and vanilla. Gently whisk dry ingredients into wet ingredients to partially blend. Continue mixing batter with a rubber spatula, making sure that ingredients at the bottom are incorporated into batter fold in fruit. (Frozen fruit will help "firm" up batter. If batter seems too wet add a few more tablespoons of flour, up to 1/4 cup, to stiffen batter.).
  • Using an ice-cream scoop, place a portion of batter into each muffin cup, filling to the brim. Sprinkle a portion of streusel topping over batter in each muffin cup.
  • Bake 15 minutes, reduce heat to 350 degrees and bake 10 to 12 minutes or until muffins are golden brown and spring back when lightly pressed with fingertips. Let muffins cool in pan for 5 minutes then transfer them to a wire rack. Serve warm or at room temperature.
  • NOTES:.
  • To simplify muffin making, quadruple the streusel topping recipe and freeze.
  • Orange, lemon, or lime zests can be used to flavor the muffins, if you like.
  • Lemon works well with blueberry.
  • Orange zest with cranberry or rhubarb.
  • Lime zest with banana chunks.
  • Almost any fruit works in this recipe. Good choices include:.
  • apples, cut into small dice.
  • bananas, cut into firm, small chunks.
  • blueberries.
  • cranberries, coarsely chopped.
  • dried sour cherries or cranberries.
  • raspberries.
  • rhubarb, diced (fresh or frozen).
  • strawberries, quartered or cut into small dice.
  • To prevent delicate, highly colored fruits like raspberries, cranberries, and blueberries from getting mashed and discoloring the batter, use semi frozen fruit.
