Steps:
- Preheat oven to 350°F.
- Boil potatoes until just tender, 20-25 minutes; drain.
- When cool enough to handle, peel and dice into 1/2 inch pieces.
- Put potatoes in 3 qt round casserole or rectangular baking dish.
- In a large saucepan, melt butter over medium heat.
- Add flour; stir while cooking, 1-2 minutes.
- Whisk in milk and add garlic.
- Season with salt and cayenne pepper.
- Stir in cheddar cheese and all but 2 tbs parmesan cheese.
- Add potatoes to sauce and stir to mix evenly.
- Pour into casserole dish.
- Sprinkle remaining parmesan cheese over top.
- Bake casserole 45 minutes or until potatoes are tender and dish is bubbling and lightly brown on top.
- Let stand 5 minutes before serving.

- Start by preheating your oven to 350 degrees Fahrenheit.
- Llightly butter a 13x9 inch pan so the potatoes won't stick.
- Cut your potatoes into very thin slices (width wise).
- Organize half of the potatoes in the pan.
- Sprinkle salt and pepper on potatoes to taste (I use about 3/4 teaspoon of pepper and 1/2 teaspoon salt).
- Add a layer of cheese (1 cup ).
- Peel 3 cloves of garlic (but leave them whole).
- In a small sauté pan add 1 pint of heavy whipping cream, the 3 whole garlic cloves, and 1 teaspoon of chicken flavor bouillon (the bouillon is optional but I always add it.).
- Evenly add the second layer of potatoes.
- Add salt and pepper (same amount).
- Add the rest of the cheese (1 cup).
- Once the heavy whipping cream mixture comes to a boil REMOVE the 3 garlic cloves; pour mixture evenly over the potatoes.
- Bake for approximately 1 hour and 20 minutes.

- Preheat the oven to 400 degrees F. Butter a large baking dish with the butter.
- Slice the potatoes into sticks, and then cut the sticks to create a dice.
- Combine the cream and milk in a bowl. Add the flour, salt and some pepper. Whisk it together well so that the flour is incorporated into the milk/cream mixture. Add the diced potatoes to the prepared baking dish and pour the creamy mixture all over the top.

- Preheat the oven to 400 degrees F (200 degrees C). Grease a 2-quart casserole dish with 2 tablespoons butter and set aside.
- Peel potatoes and cut at a 45-degree angle into 1/4-inch thick round slices.
- Arrange 1/3 of the potato slices in an even layer in the bottom of the prepared dish. Season the layer very generously with salt, and sparingly with the freshly ground black pepper, and cayenne, if using. Top evenly with 1/3 of the Cheddar cheese. Repeat this process two more times for a total of three layers of potatoes, except for the last third of the cheese. Slowly and carefully pour in the milk, without upsetting the layers. The milk should almost, but not quite, cover the potatoes.

- Preheat oven to 325°F. Cut 1 garlic clove in half and rub the inside of a 3-qt. shallow baking dish with cut sides. Smear butter all over inside of dish. - Preheat oven to 325°. Cut 1 garlic clove in half and rub the inside of a 3-qt. shallow baking dish with cut sides. Smear butter all over inside of dish. Bring shallots, cream, salt, pepper, 1 Tbsp. thyme, and remaining 4 garlic cloves to a simmer in a small saucepan over low heat; cook until shallots and garlic are very soft, 15–20 minutes.
