OUT OF THIS WORLD CRAWFISH AND RICE CASSEROLE!
This stuff will knock your socks off! I've been meaning to post this receipe for a while. It does require a bit of chopping but once that is done you just mix it all together and throw it in the oven. If you have never tried crawfish then this is a great dish to start with! Steps:
- 1. Cook the rice and set aside.
- 2. Saute' the celery, white onion, green pepper, and garlic in 3/4 cup (1 1/2 sticks of butter) in a sauce pan until tender.
- 3. Remove from the heat and add the cheddar cheese soup, cream of mushroom soup, salt, pepper and Tabasco sauce.
- 4. Stir in the parsley and green onions. Add the crawfish tails and rice and mix well.
- 5. Spoon into a greased or non-stick 9x13 baking dish.
- 6. Melt the remaining half a stick of butter in the microwave and pour over the 1 cup of panco crumbs in a bowl. When it is mixed well, spread over the top of casserole.
- 7. Bake uncovered in a preheated 350 degree oven for 25-30 minutes. *TIP: If you like your food with a bit more heat then feel free to add more Tabasco to your dish.
CRAWFISH CASSEROLE
This recipe is to die for. I bring it to covered dish dinners and there never a bit left. My sons request this when they drop by and take any leftovers home. As a personal preference, I use Louisiana crawfish, not the Chinese frozen. I do think there is a definite taste difference.

- Cook yellow rice mix according to package directions. Spray skillet with Pam and saute seasoning mix.
- When seasoning mix is tender, add tomatoes and crawfish. Simmer this until rice is cooked.
- Remove cooked rice from heat and add mushroom soup to rice.
- Spray 13 x 9 casserole dish with Pam. Pour rice mixture into casserole dish. Fold crawfish mixture into rice. Top with Mexican cheese.
- Bake at 350 for 20-30 minute.
CRAWFISH AND RICE CASSEROLE
You can combine the ingredients ahead, refrigerate the dish for a day, then pop it into the oven. Recipe is from Cooking Light magazine. Prep time does not include cooking time for wild rice and crawfish.

- Preheat oven to 350 degrees F. Heat a large nonstick skillet over medium-high heat. Coat pan with cooking spray. Add 1 cup onion and bell pepper; saute 5 minutes or until tender. CRAWFISH CASSEROLE
Steps:
- Preheat the oven to 300°F. Lightly coat a 9 x 13-inch casserole dish with cooking spray.
- Melt the butter in a large sauté pan set over medium heat. Add the onion and cook for about 8 minutes. Add the crawfish, bell pepper, and green onions, and cook for 5 minutes. Add the mushrooms, parsley, garlic powder, cayenne, black pepper, and salt and cook for 5 minutes. Remove the pan from heat, add 2 cups of the bread crumbs and the egg, and stir well.
- Pour the mixture into the casserole dish and top with the remaining 1/2 cup bread crumbs. Bake for 25 minutes or until the casserole is set and the bread crumbs are golden brown.
LOUISIANA CRAWFISH CASSEROLE
I cut this recipe out of a Baton Rouge newspaper about ten years ago. It's fantastic served with garlic bread.

CRAWFISH RICE CASSEROLE
Got this recipe from a very good friend of mine. This make a large casserole, so I like to make it when all of my family get together. Great for pot luck dinners at church.

- 1. Cook rice according to package directions. Set aside
- 2. Melt butter in large skillet. Add finely chopped onion and bell pepper. Cook until soft.
- 3. Add crawfish tails and Tony's seasoning. Cook about 3 minutes. Add Rotel tomatores (make sure they are drained, the heat is in the liquid) and cream of mushroom soup. Mix well.
- 4. Combine with cooked rice and put into large casserole dish 9x13 (Spray with Pam to make it easy to clean)
- 5. Bake covered at 350 for approximately 20-30 minutes. Top with a sprinkle of cheddar cheese and bake uncovered about 5 more minutes

- Preheat oven to 350°F Coat a 2 or 3 quart casserole dish with nonstick cooking spray.
