OVEN BAKED WHITE RICE, PERFECT EVERY TIME!

This recipe makes perfect rice every time, simply because the temptation to stir isn't there. This foolproof rice goes well with roasted chicken or broiled fish. I sometimes like to add a 1/2 cup of shredded carrots in addition to the onion to give it a flash of color.

Oven Baked White Rice, Perfect Every Time! image

Steps:

  • Preheat oven to 350°F.
  • In a medium stovetop-to-oven pot melt butter or olive oil over medium heat.
  • Add chopped onions and cook 3 to 5 minutes, stirring until softened.
  • Add rice and stir until well coated.
  • Add chicken or vegetable stock, salt and pepper to taste.
  • Bring to a boil.
  • Cover and bake until the rice is tender and the stock is absorbed, about 20 to 25 minutes.
  • Let stand, covered for 5 minutes before serving.

  • Preheat the oven to 475 degrees F.
  • Toss together the rice, white and light green parts of the sliced scallions, carrots, peas, garlic, ginger, vegetable oil, soy sauce, vinegar and sesame oil in a large bowl until the rice is completely coated. Spread on a sheet pan and bake until the rice begins to toast on the outer edges, about 15 minutes. Toss the rice on the sheet pan using a metal spatula, scraping up any stuck-on pieces.   • Preheat oven to 420°F A reviewer has suggested spraying the baking pan with Pam - that sounds like a great idea!
  • Put all the ingredients into a baking pan large enough to hold them.
  • Season generously with sea salt and black pepper.
  • Make sure your hands are very clean and put them in the pan and give everything a toss to distribute.
  • The garlic will drop into the water/oil solution but its flavour will permeate the potatoes, and this way, it won't burn.
  • Bake for 40 minutes.
  • When a nice golden-brown crust has formed on the potatoes, give them a stir to bring the white underside up, season lightly with a bit more sea salt and pepper and just a light sprinkling of oregano.
  • Add 1/2 cup more water if pan appears to be getting dry, and pop back into oven to brown other side of potatoes.
  • This will take about another 40 minutes.
  • Do not be afraid of overcooking the potatoes- they will be delicious.
  • Note: I often melt a bouillon cube in the water; if you do, make sure to cut back some on the salt.

Roasted vegetables with rice image

Steps:

  • Preheat the oven to 180 degrees.
  • Chop up the vegetables into reasonably sized chunks. The chunkier the better for roasting. Spread out evenly in a *large* roasting tin. NOT THE CHERRY TOMATOES OR CHICKPEAS.
  • Fill up a cup (small white IKEA variety works fine) half-full with olive oil and then add the following herbs in reasonable quantities: paprika, cumin, tumeric, coriander leaf, ginger (and anything else vaguely Indian sounding).
  • Pour the oil mixture over the vegetables.
  • Put roasting tin in the oven and roast for approximately 40 minutes. Approximately 20 minutes in, stir the veg around a bit to make sure they roast evenly.
  • After 40 minutes remove tin, add can of chickpeas and the cherry tomatoes.
  • Put tin back into the oven for another 10-15 minutes. At this stage you should also set the rice cooking.
  • Serve the roasted vegetables on a bed of rice.

4 x small beetroot (vacuum pack from tesco)
1 x sweet potato
1 x pack of cherry tomatoes
1 x can of chick peas
Paprika, cumin, tumeric, coriander leaf and ginger
