OVEN BAKED MUESLI
A yummy alternative to store bough cereals. This is similar to granola and has some healthy tasty ingredients! Adapted from The Garden of Vegan cookbook. I like this with almond milk! :)

Steps:
- Preheat oven to 225* In a large bowl, combine all ingredients and stir together until well mixed.
- On a lightly oiled 9x13" pan, spread mixture evenly and bake for 1 hour, stirring every 15 minutes.
- Let cool and stir in optional dried fruit.
- Store in an airtight container.
- Makes about 8 cups.
MUESLI
This is a nutritious and delicious breakfast cereal. Use any type of dried fruit you desire! You can also use almonds in place of walnuts if you like. Wonderful when served in bowls with milk and fresh berries or sliced fresh fruit.

- In a large mixing bowl combine oats, wheat germ, wheat bran, oat bran, dried fruit, nuts, sugar, and seeds. Mix well. Store muesli in an airtight container. It keeps for 2 months at room temperature.

OVEN ROASTED MUSHROOMS

- Preheat oven to 450 degrees. Lightly oil shallow baking pan large enough to hold mushrooms in single layer. Add mushrooms and toss with 2 to 3 tablespoons oil. Add garlic; season with salt; roast for 20 minutes stirring on occasion; mushrooms should be browned. Season with pepper.
BREAKFAST MUESLI
A hearty alternative to store-purchased granola with a smaller amount of sugar. Consider using organic ingredients when you can.

Steps:
- Preheat oven to 300 degrees F (150 degrees C). Line a baking sheet with parchment paper.
- Mix oats, peanuts, almonds, coconut flakes, bran, pumpkin, chia, sesame, and sunflower seeds in a large bowl.
- Place oil, honey, and sugar in a small saucepan over medium heat; heat until boiling. Pour over oat mixture and stir well to combine. Spread muesli out onto baking sheet.
- Bake muesli in the preheated oven, stirring every 10 minutes, until golden, about 40 minutes total. Remove from oven and cool, about 30 minutes. Stir in golden raisins and store in a sealed container.

- Add all ingredients to a large bowl and stir to combine. Store at room temperature a large airtight container. Keeps for weeks or even months!
- To serve, scoop out 1/2 cup and add to a bowl. Add yogurt or milk of choice and fresh fruit if desired. Eat right away, or let soak for about 30 minutes to soften. Or, if you prefer, you can soak it overnight in the refrigerator.
