ROASTED MUSTARD TARRAGON CHICKEN

- Preheat oven to 425°F with rack in middle.
- Pull off excess fat around cavities of chicken and discard, then rinse chicken and pat dry. Mix together 1 1/2 teaspoons salt and 1 teaspoon pepper and rub inside cavity. Chop enough tarragon to measure 1 1/2 tablespoons and set aside, then add remainder of bunch to cavity. Put chicken in a flameproof shallow roasting pan or gratin dish and rub all over with 1/3 cup mustard. Tie legs together with string and roast until an instant-read thermometer inserted into fleshy part of a thigh (do not touch bone) registers 170°F, 45 minutes to 1 hour.
- Carefully tilt chicken so juices from cavity run into roasting pan, then transfer chicken to a cutting board and let stand 10 minutes.
- Pour off all but 2 tablespoons fat from pan. Whisk in flour, then cook over medium heat, whisking, 1 minute. Add water, whisking constantly and scraping up brown bits, and bring to a boil. Simmer sauce until slightly thickened, then whisk in cream, remaining tablespoon mustard, and salt and pepper to taste.
- Strain sauce through a fine-mesh sieve into a bowl, discarding solids, then stir in reserved chopped tarragon. Serve chicken with sauce.
EASY PAN-ROASTED CHICKEN AND SHALLOTS
Shallots are the perfect size for roasting whole with larger cuts of meat. When halved or quartered with chicken breasts, they make a quick weeknight dinner, complete with a pan sauce. If you have champagne vinegar or white wine vinegar on hand, add a splash to the sauce just before serving.

- Preheat the oven to 425 degrees F. Sprinkle both sides of the chicken breasts with salt and pepper.
- Preheat a large skillet over medium-high heat for 2 minutes. Working quickly, melt 1 tablespoon of the butter, swirling it around the pan. Add the chicken, skin side down. Add the shallots, cut side down and not overlapping. Cook until the chicken and shallots are browned on the bottom, 2 to 3 minutes. Flip the shallots and chicken, nestle in the rosemary sprigs, then carefully pour in the chicken stock.
- Transfer the skillet to the oven and roast until the chicken is cooked through and the shallots are tender, 12 to 14 minutes, removing the smaller pieces of chicken first as they become cooked. Transfer the chicken to a serving plate.
- Check the skillet with the shallots to make sure the stock has not evaporated; if less than a few tablespoons remain, add 1/2 cup more stock or water. Reduce the pan juices over medium heat until about 1/2 cup of liquid remains, about 2 minutes. Remove the skillet from the heat and stir in the remaining 2 tablespoons of butter with a wooden spoon to thicken the pan sauce until it coats the spoon. Remove the rosemary and season the sauce with salt and pepper. Spoon some of the sauce over the chicken and scallions and the rest onto the plate.
PAN-ROASTED CHICKEN BREASTS

- Season chicken on both sides with salt and pepper.
- Heat olive oil in a heavy skillet over medium-high heat until it starts to shimmer. Place chicken breasts in skillet skin side down. Sprinkle with fresh herbs. Do not disturb the breasts until the skin side sears, 5 or 6 minutes. Turn chicken.
- Cook until internal temperature reaches 150 degrees F, about 5 minutes. Add vinegar and butter to pan with chicken. PAN-ROASTED CHICKEN BREAST WITH VINEGAR, MUSTARD, AND TARRAGON
This, to me, is the essence of French home cooking: a simple sauté and flavorful pan sauce made with vinegar, mustard, and tarragon (the quintessential French herb). If you can't find fresh tarragon, you can use tarragon vinegar instead and finish the dish with chives, but it's just better with fresh tarragon. For the best results be sure to use a flavorful Chicken Stock (p. 206). If yours tastes a little weak, start with two cups instead of one (as called for below) and let it reduce longer to concentrate the flavor.

- Preheat oven to 325°F.
- Season the chicken breasts with salt and pepper. Heat the oil in a large skillet over medium-high heat, and when it is almost smoking, add the chicken breasts, skin side down. Lower the heat to medium and cook the breasts 6-7 minutes, then turn them (they should have an even, golden brown color) and continue cooking for about 5 more minutes. Rotate the skillet if the heat on your burner is uneven, so that you don't get any dark or burned spots, and reduce the heat if the chicken seems to be browning too quickly. When the chicken is cooked, remove it to a platter and keep warm in the oven (don't cover). Pour the excess grease from the pan and deglaze with the stock and vinegar, whisking to scrape up the browned bits on the bottom of the pan. Let the liquid bubble briskly in the pan, whisking, until it's reduced to about 1/2 cup, then whisk in the butter, mustard, and tarragon.
- The sauce should have a slightly creamy consistency If it's too acidic, whisk in a little more butter or stock. Remove it from the heat and spoon over the warm chicken breasts. Sprinkle with chives, if desired.
LORE'S PAN ROASTED CHICKEN BREAST
This delicious recipe was given to me by my aunt. Note: As of Nov 3, 2008, I've revised the recipe and directions so as to make them more clear on the advise of one of the reviewers. I've added an approximate weight to the 6 chicken breasts. As far as the pan goes, my favourite pans are well seasoned cast iron as they tend to be relatively nonstick and go from stove top to oven readily.

- To caramelize the shallots (may be done early in day) heat oven to 375 F and melt 1/2 of the oil/butter in an ovenproof pan.
- Add shallots and toss to coat.
- Place uncovered pan in oven for 30 minutes, tossing once.
- Add wine and vinegar, continue roasting for another 45 minutes.
- Remove pan from oven and place on stovetop.
- MAIN INSTRUCTIONS:.
- To the caramelized shallots, add stock and reduce to half.
- Season chicken to taste.
- Heat a heavy bottomed, oven proof pan over medium heat until it just begins to smoke.
- Add remaining oil/butter, add seasoned chicken skin side down and sear for 3 minutes to crisp skin.
- Place pan in oven for 15 minutes.
- Return to stovetop, turn breasts over and finish cooking (5 minutes).
- To serve:.
- Slice chicken in half on an angle and spoon shallots over top.
- Good with sweet or regular mashed potatoes.

We made this last night and it was really good - really good piece of chicken and I never say that!!! It was moist. We ate the chicken over brown rice with steamed broccoli, and it was a perfect little Monday night meal, not time consuming at all. Oh, I should add, this comes from Susan Spicer's cookbook Crescent City Cooking, which I am steadily working my way through....and all the recipes are fantastic (with the exception of Shrimp Clemenceau)...

- Heat oven to 200C/fan 180C/gas 6. Heat the oil in an ovenproof pan. Season the chicken breasts, then brown for 1 min on each side. Remove from the pan, then set aside.

- Adjust oven rack to upper-middle position and heat oven to 450 degrees. Dissolve cornstarch in chicken broth. Whisk in vinegar, honey and set aside.
- Pat chicken dry with paper towels and season with salt and pepper. Heat oil in 12" skillet over medium-high heat until just smoking. Cook chicken skin side down until well browned, about 6-8 minutes. Transfer to plate, skin side up.
- Pour off all but 1 T fat from skillet and return to medium-high heat. Add shallot and garlic and cook until fragrant, about 30 seconds.
