PEAS AND PANCETTA WITH SALMON

Peas and Pancetta with Salmon image

Steps:

  • Put a medium-sized saute pan over medium-high heat. Once heated, add 2 tablespoons of the blended oil and add the pancetta and saute until rendered and slightly crisp. Add the shallots, garlic, pinch of salt and freshly cracked black pepper, to taste, the peas, and orange juice. Simmer until the peas are just cooked, about 2 minutes. Add the butter and swirl to combine and melt. Turn off the heat and toss in the dill and parsley. Taste and adjust seasoning, if needed.
  • Put a large cast iron pan over high heat. Season both sides of the fish with salt. Add the remaining 1/4 cup blended oil to the hot pan and add the seasoned fish (presentation side down first). Allow to cook until golden brown on first side, about 2 to 3 minutes. Flip and turn the heat off.
  • In a small bowl add the pea shoots and drizzle with extra-virgin olive oil. Put 2 salmon fillets onto each plate and top with the peas and pancetta. Drizzle the sauce around the salmon and garnish with the pea shoots and orange zest. Sprinkle with fleur de sel and serve.

2 tablespoons plus 1/4 cup blended oil
6 ounces very thinly sliced pancetta, brunoise or finely chopped (about 1/2 cup)
1 tablespoon sliced shallots
1 tablespoon sliced garlic
Kosher salt and freshly cracked black pepper
2 cups freshly shelled peas
1/2 cup fresh orange juice
2 tablespoons unsalted butter
2 tablespoons freshly picked dill leaves
2 tablespoons parsley leaves
8 (4-ounce) wild salmon fillets, skinned
1 cup pea shoots
Extra-virgin olive oil, for drizzling
1/2 orange, zested
Fleur de sel

Pancetta-Wrapped Shrimp with Honey-Lime Glaze image

Steps:

  • Preheat oven to 375°.Cut each slice of pancetta into three strips. Wrap one strip around each shrimp; secure with a toothpick. Place in a foil-lined 15x10x1-in. baking pan. In a small bowl, whisk honey, lime juice and water until blended; reserve 2 tablespoons for brushing cooked shrimp., Brush half the remaining honey mixture over shrimp. Bake 5 minutes. Turn shrimp; brush with remaining half of the honey mixture. Bake 4-6 minutes longer or until pancetta is crisp and shrimp turns pink., Remove from oven; brush with reserved 2 tablespoons honey mixture. Sprinkle with cilantro.

  • Put the stock and saffron into a pan, bring to the boil and keep hot over a low heat. Melt the butter in a small pan, add the shallots and fry gently until soft. Stir in the rice, stock and salt and bring to the boil. Stir, cover, then reduce the heat to low and cook for 15 minutes. Remove and set aside for 5 minutes.
  • Uncover and fork through the chopped herbs, lemon zest, lemon juice and salt and freshly ground black pepper to taste.
  • Preheat the oven to 200°C/fan180°C/gas 6 and put a large non-stick baking sheet into the oven to heat up. Trim the salmon fillets to the same size, then season on both sides with salt and freshly ground pepper. Spoon the rice mixture in an even layer over 1 salmon fillet and press down well. Cover with the other salmon fillet.
  • Place 2 pancetta slices on a board with the ends slightly overlapping to make 1 long strip. Arrange next to this, another 2 slices, slightly overlapping as before. Repeat with the remaining pancetta. Lay the salmon down the centre of the pancetta sheet and bring up the slices to enclose the salmon, pressing down gently.

  • Meanwhile, season each salmon fillet, wrap in 2 pancetta rashers and brush with the remaining olive oil.
