BAKED POTATO WEDGES
Made these potato wedges on a whim, just threw some spices together! Great alternative to French fries! You may need to adjust the cooking time, depending on how thick your wedges are.

Steps:
- Preheat the oven to 400 degrees F (200 degrees C). Line a baking sheet with aluminum foil.
- Cut potatoes into wedges. Rinse and pat dry. Pour olive oil into a large bowl. Add wedges to the oil; mix until coated.
- Mix black pepper, oregano, garlic powder, and seasoned salt together in another bowl or a large zip-top bag. Add potato wedges and mix around until evenly coated. Spread wedges on the prepared baking sheet.
- Bake in the preheated oven until golden brown and starting to crisp, 20 to 25 minutes.

CRISPY, CRUNCHY PANKO BAKED POTATO FRIES
I love crunchy fries and love panko bread crumbs. So I came up with a idea for a coating for crispy crunchy fries today when I was working with panko breading. Ingredients can be mixed up with your favorite seasonings. Also can be deep fried as well as baked.

Steps:
- Preheat oven or deep fryer to 350'.
- Add flour onto wax paper or a bowl and set aside.
- Combine in a bowl or pan, panko breadcrumbs,salt,pepper,parmesan cheese, and seasoning salt. Set aside.
- Combine in another bowl or pan, eggs and whipping cream or milk. Set aside.
- Cut potato into potato wedges or regular french fry shape. (I leave the potato peeling on).
- Dip fries into flour then into egg mixture and then into breadcrumb mixture.
- Place on a lightly greased baking sheet and baked for 30 minutes or until done.
- Turn halfway through baking.
- NOTE: If frying -- add coated fries to deep fryer and fry 10-15 minutes or until browned and tender.

CRISPY BAKED POTATO WEDGES

- Preheat oven to 450 degrees F.
- Place the potato wedges in a saucepan with 2 quarts of cold salted water. Bring to a boil and then reduce to a simmer for approximately 5 minutes, or until a knife pierces through easily. Drain. In a large bowl, toss the wedges with olive oil. Place the BBQ spice and salt in a shallow dish and roll the wedges in it. Place the wedges on a sheet pan in single layer and roast for 15 to 20 minutes until crispy.
ROASTED POTATO WEDGES

- Place a rimmed sheet tray into the oven and preheat oven to 450 degrees F.
- Slice each potato into 6 wedges. Add the potato wedges to a pot of cold salted water. Bring to a boil, reduce heat, and simmer until the potatoes are barely tender, but a knife can be pushed through with just a slight resistance, about 6 minutes. Drain potatoes and add to a large mixing bowl. Drizzle potatoes with olive oil and toss with BBQ seasoning, salt, and pepper.
- Carefully remove the hot sheet tray from the oven and quickly add the seasoned potatoes to them. You want the pan to stay as hot as possible. This will help to crisp up the potatoes while they roast. Place the sheet pan back into the oven and roast until golden and crisp, 20 to 25 minutes, flipping 1/2 way through the cooking time.
- Remove from the oven and toss with fresh herbs.
BAKED POTATO WEDGES
Steps:
- Preheat the oven to 400 degrees F.
- Scrub the potatoes, cut them in half lengthwise, then cut each half in thirds lengthwise. You'll have 6 long wedges from each potato. Place the potatoes on a sheet pan with the olive oil, salt, pepper, garlic, and rosemary. With clean hands, toss all the ingredients together, making sure the potatoes are covered with oil. Spread the potatoes in a single layer with 1 cut-side down.
- Bake the potatoes for 30 to 35 minutes, turning to the other cut side after 20 minutes. Bake until they are lightly browned, crisp outside, and tender inside. Sprinkle with salt and serve.

- Part boil potatoes for 20 minutes and let them cool. (You can do this step 1-2 days in advance and refrigerate them). Cut into wedges.
- Mix salt, pepper, paprika and garlic powder and sprinkle over potatoes. Sprinkle with olive oil making sure each wedge is evenly coated with spices and oil.
- Preheat oven to 430°F.
- Line baking sheets with aluminum foil (or parchment paper) and place potatoes on sheets.
- Bake on 430 F for around 40 minutes or until golden, turning potato wedges once.

- Peel potatoes and cut in half lengthwise; cut each half into wedges. Toss wedges in a bowl with oil.
- In a shallow bowl mix cornmeal, garlic powder and pepper; mix with hand to combine.
- Place 3-4 wedges in cornmeal mix and lightly coat and place on a baking sheet. Continue till all wedges are done. Cook 25-30 minutes giving the wedges a bit of a turn half way through.

COCONUT, LIME AND CHILLI BAKED FISH WITH THAI POTATO WEDGES
This Thai inspired dish combines an exotic mix of delicious flavours to create a tantalising meal for all to enjoy. - preheat oven to 200ºC (390 ºF). coat potato wedges with oil, seasoning and salt in a large bowl. mix to coat. place wedges on a baking tray lined with baking paper and place in oven (these should be baked for 45 minutes or until golden).
- combine coconut milk, garlic, zest, lime juice, chili, fish sauce, onions and sugar.
- line a baking dish with baking paper allowing paper to hang over the sides. pour a 1/3 of the coconut mixture in the bottom of the baking dish. Place fish on top and cover with the same amount of coconut marinade. cover the fish with baking paper and then alfoil. place in oven (these should be baked for no longer than 20 minutes or until just cooked through).
- Combine 1/2 a cup of water and remaining coconut marinade in the base of a steamer and add white parts of pak choy, corn spears , capsicum, and carrot and steam for 7 minutes or until almost cooked.
- Add in bean shoots and the green parts of pak choy to steamer and steam for a further 2 minutes.
- When all elements are cooked arrange vegetables, wedges and baked fish on a plate and drizzle the fish with a little of its cooking liquid. Enjoy!

- Preheat oven to 375 degrees F.
- Dice, cube or chop the peeled potatoes into whatever shape you feel like making them.
- Rinse then thoroughly in cold water, drain well and transfer to a large bowl.
- Add oil and toss the potatoes around so they are evenly coated.
- Add all of the spices and the cheese and toss so they are evenly coated.
- Place on a baking pan in one layer (preferably lined) and bake for around 30-40 minutes, depending on person preference of potato texture.
- Suggestions! It's really really handy to line the pan before you bake them, or else you will have a sticky baked on mess on your pans that takes an awful lot of elbow grease to get rid of. You could add lemon juice to the potatoes to give them an extra fresh taste.
