Chicken and Penne Parmesan image

Steps:

  • In 5 quart saucepan over medium heat, melt butter; add chicken.
  • Cook until no longer pink.
  • Add broth; heat to boiling.
  • Add uncooked pasta and pepper, stirring to coat pasta with liquid.
  • Heat to boiling; reduce heat.
  • Cover; simmer 7 minutes, stirring every 2 minutes.
  • Add asparagus, continue to cook another 7 minutes or until pasta is tender and most liquid is absorbed.
  • Meanwhile, in medium bowl, stir together soup, milk and 1/2 cup parmesan cheese until smooth; stir into chicken mixture.
  • Heat until mixture just comes to a boil; sprinkle with remaining cheese.

Penne With Chicken, Lemon and Parmesan image

Steps:

  • Cook the pasta in a large pot of boiling salted water, until al dente. Drain well.
  • Season chicken with salt and pepper. Heat a large grill pan over medium high and add chicken. Grill until golden and completely cooked. Remove to a plate and slice.
  • Add the garlic and red pepper flakes to a saute pan with 3 tablespoons of olive oil and saute until fragrant. Add the cooked pasta and turn heat off. Mix all together.
  • Remove pasta to a large bowl. Add chicken to the warm pasta and season with salt and pepper. Sprinkle in chopped parsley. Add the juice of 2 lemons and mix. Before serving top with Parmesan.

Vodka Sauce Chicken Parmesan image

Steps:

  • Preheat the oven to broil. Place a wire rack inside each of 2 rimmed baking sheets.
  • Cut the chicken breasts in half horizontally through the middle (like slicing a bagel) making 4 roughly equal pieces. Place a sheet of plastic wrap on a cutting board. Put 1 chicken piece in the center of the plastic wrap and top with another sheet of plastic. Pound the chicken with the flat side of a meat mallet, starting in the center and working your way to the edges, until the chicken is 1/4-inch thick. Transfer to a prepared baking sheet. Repeat with the remaining chicken pieces.
  • To set up a standard breading station, mix the flour, 1 tablespoon salt and 1/2 teaspoon pepper in a shallow dish. Beat the eggs and 1/2 teaspoon salt in a second shallow dish. Place the breadcrumbs in a third shallow dish.
  • Dredge 1 piece of chicken in the flour mixture, turning to coat evenly. Shake off any excess, then dip into the egg mixture, turning to fully coat it on both sides. Let the excess egg drip off, then press the chicken firmly into the breadcrumbs, turning to coat on both sides and packing the crumbs into any crevices. Return the chicken to the baking sheet and repeat with the remaining chicken pieces.
  • Heat the oil in a large skillet over medium-high heat (you will know the oil is ready if you drop a few breadcrumbs into the skillet and they immediately sizzle). Add 2 pieces of chicken and cook until the breading is golden-brown and crisp and the chicken is just cooked through, 3 to 5 minutes per side, turning with tongs. Transfer to the other prepared baking sheet. Make sure the oil is hot again before repeating with the remaining 2 pieces of chicken.
  • Spread 1/4 cup vodka sauce onto each piece of chicken then top each with 1 tablespoon Parmesan and 1/4 cup mozzarella. Broil until the cheese melts and browns in spots, 3 to 5 minutes. Pour the remaining vodka sauce onto a serving platter and top with the chicken pieces. Sprinkle with the parsley.

Chicken Tenders Parmesan with Penne and Broccoli image

Steps:

  • Bring large pot of salted water to boil. Heat broiler, with rack set 4 inches from heat. In a medium bowl, whisk eggs. In another bowl, combine Parmesan and breadcrumbs. Season chicken with salt and pepper. Dip tenders in egg, then in Parmesan mixture; place on a rimmed baking sheet. Broil until golden, 2 to 4 minutes per side.
  • Preheat oven to 450 degrees. Spread 1 cup tomato sauce in the bottom of a 9-by-13-inch baking dish. Then top with chicken, remaining sauce, and finally mozzarella. Bake 15 to 20 minutes or until cheese is melted.
  • Meanwhile, cook pasta in boiling water until al dente, according to package instructions, adding broccoli for final 30 seconds. Chicken Parmesan Penne Pasta Toss image

Steps:

  • Fill a large pasta pot with water and place it over high heat.
  • Once the water comes up to a boil, salt it and drop in the pasta.
  • Cook the pasta to al dente according to package directions.
  • Before draining the pasta, reserve a mugful of starchy cooking water, then drain and reserve.
  • While the water is coming up to a boil, place a large skillet over high heat with 3 tablespoons of olive oil.
  • Season the chicken pieces with the poultry seasoning, salt and pepper then add it to the preheated skillet.
  • Cook the chicken until golden brown and cooked through, 3-4 minutes per side.
  • Once the chicken is brown, add the garlic and onions to the pan, and cook until softened, about 5 minutes.
  • Add the tomatoes and cover the pan with a lid.
  • Cook, stirring occasionally, until the tomatoes burst open and begin to release their juices, about 5 minutes (if they haven't started to burst open by that time, mash them lightly with a potato masher or wooden spoon). Season the mixture with salt and pepper.
  • Add the drained pasta and reserved starchy cooking water (about 1 cup) to the skillet with the chicken and tomatoes, and toss over the heat until combined, about 1 minute.
  • Remove the pan from the heat and stir in the basil, arugula or spinach, and cheese.

Steps:

  • Preheat oven to 400 degrees F (200 degrees C).
  • Line a baking sheet with parchment paper.
  • Place 2 cups Parmesan cheese into a shallow bowl.

Breaded Parmesan Chicken With Garlic Penne image

Steps:

  • SAUCE:
  • ~~NOTE: Before you start the sauce, put your breasts on a griddle and cook them, be sure to keep an eye on them.~~.
  • Put the garlic, basil and olive oil in the food processor and whirl it up until it is mixed well throughout. A blender or just slicing by knife works fine if you do not own a food processor. Set aside.
  • In a small saucepan: combine cornstarch, milk, and cheese. Mixture should be kind of runny, if not add some milk until desired consistency.
  • Once you have reached a desired consistency, add the garlic mixture to the cause and bring to a low boil.
  • After the sauce has boiled put it through a small wire sift to get any clumps of starch out. Set aside
  • CHICKEN:
  • ~~NOTE: Before you start the chicken, start the water for your pasta~~.
  • Cut your cooked chicken breasts into 2-3 inch pieces and put into a frying pan on low heat.
  • Add the cheese, breading, and garlic and turn the heat to Medium-High so that the cheese can melt and the breading will stick.
  • ~~Check your water, if it is boiling, add the pasta.~~.
  • When all the cheese is melted and the chicken pieces are covered, remove them from the heat.
  • FINISHING:.
  • Drain the pasta and then re-sift the sauce onto the noodles.
  • Mix the sauce and noodles and then add the chicken.
  • Mix all together in a pot and serve warm.
