Steps:
- Preheat the oven to 400 degrees F.
- In a blender, combine eggs, flour, salt, pepper, and herbs, milk, and cheese. Blend on medium speed.
- Spray a mini-muffin pan with nonstick cooking spray. Pour the batter into the muffin cups, filling each cup 3/4 full. Bake until puffed and golden brown, about 20 to 25 minutes.
- Remove popovers from muffin tin and cool on a wire rack. Save in a storage container to take to the picnic.

- Heat oven to 450ºF.
- Place muffin pan in oven to heat. Meanwhile, combine flour, cheese and salt in medium bowl. Whisk eggs, milk and butter in separate bowl until blended. Add to flour mixture; stir just until blended. (Batter will be slightly lumpy.)
- Spray 12 hot muffin pan cups with cooking spray. Spoon batter into prepared cups, adding about 1/4 cup batter to each cup.
- Bake 15 min. Reduce oven temperature to 350ºF. Continue baking popovers 20 to 25 min. or until tops are puffed and golden brown. Transfer popovers from muffin pan to wire rack. Use sharp knife to cut slits in tops of popovers to vent the steam. Serve warm.

- Arrange a rack in the bottom third of the oven; preheat to 425°. In a blender, puree the milk, eggs, and butter. Add the flour, 1/2 cup cheese, the thyme, nutmeg, salt, and pepper; puree. Generously spray 12 standard-size muffin cups with cooking spray. Divide the batter among the cups, about 1/4 cup in each. Sprinkle the remaining 1/4 cup cheese on top. Bake until puffed and deep brown, 25 to 35 minutes. (Do not open the oven door.) Carefully remove the popovers from the cups. Pierce the sides of each popover with a sharp knife to release some of the steam. Serve immediately.

- Preheat oven to 450ºF and position an oven rack in the center. Lightly coat the muffin pan with melted butter or high-heat canola-oil spray. Once the oven is fully heated, heat the prepared muffin pan in the oven for 5-10 minutes.
- In medium bowl, whisk together the eggs, milk, melted butter, flour and salt until well blended. Then add the herbs and cheese, blend well.
- Using a spatula, scrape the batter into a measuring cup. Remove the pan from the oven and carefully pour the batter evenly among the prepared muffin cups- filling the cups about half full (remember they are hot!).Return the pan to the oven and bake for about 15 minutes. Then turn the oven down to 400ºF and continue baking the popovers until they are puffed and deep golden brown color.
- Remove from oven and cool pan on rack for a few minutes. Remove popovers from pan and serve hot.

- Place eggs, milk, flour, salt, melted butter and parmesan in a blender. Blend until smooth, scraping down sides to incorporate all of the flour. Stir in 1 tablespoon fresh thyme.
- Place batter in a warm spot (like on the stove) so it comes to room temp. ( You could also place the blender in a bowl of warm water) while the oven gets hot.
- When ready to bake, pull out the hot popover pan, and place a teaspoon of butter into each tin (either melted or cold). Moving quickly, stir the batter once more, then pour batter into each tin, dividing equally. Sprinkle the with the remaining tablespoon of fresh thyme and extra parmesan if you like.
