PARTY POTATOES
These creamy tasty potatoes can be made the day before and stored in the refrigerator until you're ready to pop them in the oven (I often do that). The garlic powder and chives add zip, and the shredded cheese adds color. -Sharon Mensing, Greenfield, Iowa

POTATOES... TRASH POTATOES
This used to be served at the Fremont Elks Club for breakfast on Sunday mornings. As you can see it's a combination of everyone's favorite breakfast staples so feel free to add a little more or less of each ingredient to your liking, but you get the idea. Enjoy!

Steps:
- Brown and drain the bacon, discarding the grease. Microwave the sliced potatoes until tender. Place butter and potatoes in a very large skillet or griddle and fry for approximately fifteen minutes until brown. Season potatoes with the seasoned salt and pepper while frying.
- Add the onions, mushrooms, tomatoes, and both type peppers to the potatoes, frying for an additional ten to fifteen minutes or so until well browned. Crumble the fried bacon and stir both the bacon and the ham into your potatoes.
- In a separate bowl mix together the eggs and milk with a fork and then pour this over your potato mixture. Stir and cook the egg and potato mixture until the eggs are done, similar to if scrambling eggs.
- Divide into four equal servings, putting one serving on each plate. Top each serving with two pieces of cheese, cover, and then microwave each serving only until cheese is melted.

My family started making this before I was born. It is one of the dishes we always make when we get together. I love it!

PARTY POTATOES (AKA WHITE TRASH POTATOES)
Steps:
- Let frozen hash browns thaw a little to make mixing easier. Mix all ingredients together, put in a lightly greased 9 x 13 pan and bake at 350 for approximately 45 minutes. Remove from oven, stir well and sprinkle with crunchy topping. Return to the oven and bake an additional 15 minutes. This dish is vegetarian, but ground beef and garlic can be added. Dianne has used Italian sausage or chicken mango sausage with Parmesan and Romano cheeses. Gruyere and cheddar can be used rather than just cheddar. Use your imagination. She does.
