PARTY MEATBALLS
Meatballs made from beef and pork sausage combined with special ingredient apple butter are sure to please at your next party!

Steps:
- Preheat the oven to 400 degrees F and line a large-rimmed baking sheet with foil.
- Place a skillet over medium heat and melt the butter in it. When the butter has melted, add the grated onions and saute for 3-4 minutes, until soft.
- In a large bowl, mix the sausage, ground beef, panko, 1/2 cup apple butter, sour cream, eggs, salt, pepper, and allspice. Add the onion, once it cools. Get your hands in it and mix well, until evenly combined.
- Measure out the meatballs into one-ounce portions. Roll tight balls and place them on the baking sheet, close together, but not touching. You should have 40-45 meatballs.
- Bake for 15 minutes. Meanwhile, mix the remaining 1/2 cup of apple butter, with beef broth, honey, and 1-2 dashes of cayenne pepper. Whisk well.
- After 15 minutes, remove the meatballs from the oven. Pour the sauce over the top, making sure to cover each meatball, and place back in the oven for 5-7 minutes.
- Once cooked through, shake the baking sheet a little to loosen the meatballs and serve warm.

I recommend doubling these; your guests will inhale them unless you beat them to it! Easy, delicious and addicting, this recipe was passed onto me by my Aunt Lisa. She served these on Xmas and they were devoured by our family, including my 4 y/o son who I think ate the most of us all.

Steps:
- Combine all ingredients and form into 3/4 inch to 1 inch balls; you can use a melon ball scooper.
- Place meatballs in a greased 13 x 9 casserole dish or on a greased cookie sheet.

- Serve with toothpicks.

- Place first eight ingredients in a 6-qt. slow cooker. Chop onion and peppers; stir into tomato mixture., Shape sausage into 1-3/4-in. balls; roll in flour to coat lightly. In a large skillet, heat oil over medium-high heat; cook meatballs in batches until lightly browned, 5-8 minutes, turning occasionally. Drain on paper towels. Add to slow cooker, stirring gently into sauce., Cook, covered, on low 5-6 hours or until meatballs are cooked through and vegetables are tender. Serve with pasta. Freeze option: Freeze cooled meatball mixture in freezer containers. To use, partially thaw in refrigerator overnight. Place meatball mixture in a large skillet; heat through, stirring occasionally and adding a little water if necessary.

- In a small skillet, saute onions in butter until tender. Transfer to a large bowl. Add the egg, soy sauce, bread crumbs, water chestnuts, garlic and ginger. COUNTRY-STYLE SAUSAGE MEATBALLS
This is an interesting and tasty variation of meatballs from a Greek cookbook, where half the mince meat is substituted with the contents of a spicy country-style pork sausage. The meatball tastes like sausage but is leaner and healthier. It tastes better if it is allowed to sit overnight before cooking so that the flavours can blend together.

Steps:
- Carefully cut the sausage casings and scrape out all the contents into a bowl.
- Chop them so that they resemble mince and then add to the beef mince.
- Add breadcrumbs, egg, tomato paste, salt, pepper and oregano to taste.
- Combine very well with your hands making sure that you have incoorporated the sausage and the spices well.
- Allow to sit for 30 minutes in the fridge (or overnight for best results).
- Roll into long, oval-shaped meatballs and place in a greased baking tray.
- Cook in a pre-heated oven at 180 degrees celcius for 40 minutes.
- Serve with ketchup, mustard and a green salad. Yum!

ITALIAN SAUSAGE MEATBALLS
I developed this recipe as I was reviewing many other meatball recipes. The spices in the sweet Italian sausage give it the extra kick. These meatballs can be frozen for use later. Or used immediately in your favorite sauce. These are also a great appetizer with dipping sauce.

- Put all ingredients in a large mixing bowl.
- Mix together throughly.
- Using the palm of your hands. Roll into a ball shape. About one inch diameter.
- Place oil in a frying pan over medium heat.
- Place meatballs in hot oils.
- Move them around continuously to ensure that they do not burn, and are throughly cooked.
- Cook for 5 to 7 minutes (golden brown).
- Remove from oil and sit on paper towel to absorb any oil.
- Add to your favorite sauce.

- Line shallow baking dish with foil and oil.
- Combine all ingredients and mix, using enough water to meld.
- Shape into meatballs 1 1/2 to 2 inches in diameter.
- Broil the meatballs 8 inches from broiler for 10 minutes. Turn over meatballs and broil for 10 more minutes.
- I had 50 meatballs so you may have to broil in two batches. I used my Holland grill and cooked them on there which helped eliminate them sitting in the grease.
