PASTA SALAD WITH ARTICHOKES AND TUNA (OR CHICKEN)
I got this recipe from a friend. Its a very easy and light main dish, great for summer evenings. I serve it with a spinach salad and bread. When I bring this dish to a church supper I always get asked for the recipe. A big thanks to Pat Duran for her terrific picture She used cooked chicken and this variation turned out great.

Steps:
- Cook the pasta according to package instructions until al dente. Drain and rinse under cold water. Transfer to a large bowl and toss with the remaining ingredients. Chill and serve.
- NOTE: To extend this salad to serve 6 nicely add one (10 ounce) box of frozen peas, cooked, and one small can of well drained mushrooms.
ARTICHOKE PASTA SALAD

- Cook the macaroni according to package directions; drain and rinse in cold water. Transfer to a large bowl. Stir in the remaining ingredients; gently toss to coat. Cover and chill until serving.

TUNA & ARTICHOKE PASTA SALAD
I have been making this light, tangy pasta salad ever since I was at the University of Wyoming in the late 1980s. Made with pantry ingredients, it's quick and easy. A nice lunch or summertime dinner with fresh fruit or hearty bread. Sometimes I add halved cherry or grape tomatoes for a little sweetness. Leftovers are just as good! (Prep time does not include cooking time for pasta.)

Steps:
- Combine olive oil, lemon juice, garlic and capers in a small jar and shake to mix.
- In a separate bowl, combine tuna, olives, artickokes and parsley.
- Gently stir in cooked pasta, drizzle with dressing and toss.
- Add salt and pepper and chill briefly if desired.
- Divide into 2 bowls and enjoy!

Steps:
- Cook pasta in large pot of boiling, salted water until tender, but firm, 8 to 12 minutes, stirring often.
- Drain well and rinse with cold water.
- Shake out excess water and toss pasta with oil.
- Combine mayonnaise, lemon juice, parsley and basil.
- Place pasta in large bowl.
- Add mayonnaise mixture, chicken, artichokes and tabasco.
- Toss well.
- Garnish with almonds.
- For a decorative presentation, serve in avacado halves, in tomato cups or on lettuce leaves.
QUICK ARTICHOKE PASTA SALAD
This pasta salad is quick and easy to make. The liquid from the marinated artichoke hearts makes an excellent dressing.

- In a large mixing bowl, combine pasta, artichoke hearts, mushrooms, tomatoes, olives, parsley, basil, oregano, garlic, salt and pepper; toss well. Refrigerate for at least 4 hours. Before serving, season the pasta dish with salt and pepper to taste.

- Toss tuna pieces in a bowl with 1 tablespoon oil, lemon zest, 1 teaspoon fresh rosemary (or 1/2 teaspoon dried), 1/4 teaspoon salt and pepper. Grill the tuna until just cooked through, about 3 minutes per side. Transfer to a plate. When cool enough to handle, flake the tuna into bite-size pieces.
- Heat the remaining 3 tablespoons oil in a large skillet over medium heat. Add artichoke hearts, olives, garlic and the remaining rosemary. Cook, stirring, until the garlic is just beginning to brown, 3 to 4 minutes.
