PAULA DEEN'S CHEESE BISCUITS
I saw Paula make this on one of her shows and thought it sounded good, so I tried it and my family really liked it.

Steps:
- Preheat oven to 350 degrees F.
- In medium bowl, mix flour, baking powder, salt, to taste, and sugar together using a fork; cut in shortening until it resembles cornmeal.
- Add cheese.
- Stir in buttermilk all at one time just until blended. Do not over stir.
- Drop by tablespoon, or use ice cream scoop, onto a well greased baking sheet.
- Brush dough with melted butter.
- Bake for 12 to 15 minutes.
- Note: it took the biscuits 20 minutes to cook in my oven, but I have and oven that always takes longer to bake than the recipe says.

- In a large bowl, mix the flour, baking powder, and sugar using a fork.
- Cut in the shortening using a fork until the mixture looks like cornmeal.
- Add the cheese and then stir in the buttermilk all at once until the dough just comes together. Do not overmix.
- Use an ice cream scoop to drop the biscuits on a greased baking sheet.
- Bake for 12 to 15 minutes, or until biscuits are lightly browned.
THE LADY'S CHEESE BISCUITS & GARLIC BUTTER - PAULA DEEN
I live in Savannah, Georgia, and have encountered these biscuits straight from The Lady & Sons restaraunt. They're incredible! At my former workplace, we had the Lady & Sons cater lunches for training seminars and these were always the first to disappear. This is from a recipe that ran in the Savannah Morning News a few years ago. The sharp cheddar is my preference, although the original recipe simply states "cheddar". If making the jumbo, ice-cream scoop biscuits, this will make about four.

- Preheat oven to 350 degrees Farenheit.
- Mix flour, baking powder, and sugar together using fork.
- Mix in shortening with fork or pastry blender until mixture resembles coarse cornmeal.
- Stir in cheese.
- Lightly stir in buttermilk until just blended; do not overmix.
- Drop by tablespoonfuls (The Lady actually uses an ice cream scoop, according to the recipe) onto a well-greased baking sheet.
- Bake 12 to 15 minutes.
- Brush with butter or garlic butter.
- ---GarlicButter Instructions--- Combine butter and garlic in small saucepan over medium heat.
- Cook until butter absorbs garlic flavor, but don't allow the garlic to color.
- Remove from heat, and discard garlic.
- Can be stored, covered, in the refrigerator for about two weeks.

BASIC BISCUITS - FROM PAULA DEEN
No waiting for rise with this recipe! This is the biscuit recipe she used for the Country Fried Steak & Gravy, which I posted separately. She, also, preferred to use lard instead of Crisco! Great tip in step 4 provided by unknown reviewer. (NOTE Granny T suggests you increase salt to 1 tsp)

Steps:
- Preheat oven to 400ºF.
- Dissolve yeast in warm water; set aside.
- Mix dry ingredients together.
- Cut in shortening. (NOTE: P.S. if you freeze the shortening first, then grate the frozen shortening into the dry mixture it blends perfectly throughout and simplifies the process. This tip supplied by a reviewer).
- Add yeast and buttermilk and mix well.
- Turn dough onto lightly floured surface and roll out to desired thickness.
- Cut with small biscuit cutter and place on greased baking sheet.
- Bake for 12 minutes or until golden brown.
