DANISH DREAM CAKE
This cake has been a favorite since 1965, when a girl won a baking competition in with her grandmother's secret family recipe.

Steps:
- Preheat the oven to 375°F. Prepare a 9-inch springform or round cake pan, greased and lined with baking parchment.
- In the bowl of a stand mixer, whisk the eggs, granulated sugar and vanilla sugar on a high speed for a few minutes, until white and light. Meanwhile, in a separate bowl, sift the flour and baking powder together.
- Carefully fold the flour into the egg mixture. Mix the milk with the melted butter in a jug/pitcher and carefully pour into the batter, folding it in until incorporated. Pour the batter into the prepared cake pan.
- Bake in the preheated oven for 35-40 minutes, or until almost done (try not to open the oven door for the first 20 minutes of the total baking time).
- To make the topping, put all the ingredients in a saucepan and gently melt together.
- Remove the cake from the oven and carefully spread the topping all over the cake. Return to the oven. Turn up the heat to 400°F and bake for a further 5 minutes.
- Leave cake to cool before eating, if you can (we are well aware it's hard to do that).

- 1. Dust pecans & dates with flour. Shake off excess. Set aside. Note: I like my dates cut fairly small.
- 2. Mix together; flour, sugar, butter, eggs, and vanilla. Combine pecan and date to mixture. This will be very stiff. ***DO NOT ADD LIQUID. Note: dough is so stiff you may wish to mix with your hands.
- 3. Using a bundt pan, butter and flour pan. Add the dough.
- 4. Place a pan of water on the rack below the bunt pan to keep it moist. Bake at 350 for 1 hour. Let cool 10 minutes before removing from pan.
DREAM CAKE
This is called a cake but it is actually squares. From "Company's Coming for Christmas" by Jean Pare.

- To make the bottom layer, mix the flour and sugar together.
- Cut in the butter until crumbly.
- Pack into an ungreased 9" x 13" pan.
- Bake in a 350 degree F oven for about 10 minutes or until golden.
- To make the top layer, stir all five ingredients together in a bowl.
- Spoon over the bottom layer and spread.
- Bake in a 350 degree F oven for about 25 to 30 minutes or until set and golden in colour.
- Cool.

PLUM CAKE
Italian plums are good to eat, but even better to bake with. They aren't quite as juicy or sweet as their American cousins, but they keep their shape well and their skin adds a gorgeous purple color to tarts and cakes. The brown sugar cake batter and sweet crumb topping are a perfect complement to the not-too-sweet fruit. It is great for breakfast with a cup of tea and/or with ice cream after dinner. This is a cake that also seems to get better the second day, if there is any left.

- To make the cake: Preheat oven to 350 degrees F. Grease an 8-inch springform pan with butter.
- In a stand mixer fitted with a paddle attachment, cream together the butter and brown sugar, until light and fluffy, about 3 minutes. Add the eggs, one at a time, scraping down the bowl after each. Mix in the zest and vanilla. In a separate bowl whisk together the flour, baking powder and salt. Add the dry ingredients to the butter/sugar mixture and mix on low speed until just combined. Spread half of the batter into the prepared pan.
- Place half of the cut plums on the batter, cut-side up. Spread the remaining batter over the plums. Spread the batter into an even layer and top with remaining plums.
- To make the topping: In a bowl, mix together the flour, sugar, salt, cinnamon and melted butter. You may have to mix it with your hands to get all the butter incorporated.
- Spread the crumb topping over the plums evenly.
- Place the cake on two stacked cookie sheets, to prevent the bottom from getting too brown during the long baking time. Bake for about 1 hour 15 minutes or until a tester come out clean. Cool on a rack.
- Serve it slightly warm or at room temperature.

- 1. Mix up cake mix and bake in oblong pan for 15 minutes. Cool.
- 2. Mix together cream cheese, pudding and milk. Spread on 1st layer.
- 3. Spread drained crushed pineapple over 2nd layer.
- 4. Spread Cool Whip over 3rd layer.
- 5. Sprinkle as much nuts and cherries you'd like all over 4th layer.
