A quick, simple and delicious treat. Sometimes I top it off with some orange zest for color. Don't laugh...it's simple, but delicious and quick and I've never found any one who didn't rave about it!

- Place doughnut in an attractive serving bowl. Top with a generous scoop of ice cream. Spoon marmalade over ice cream, and pour liqueur on top. Top with whipped cream and enjoy.

PEACHY ORANGE SURPRISE
This drink is sure to refresh you and help you unwind after a long hard day of work. I also multiply the ingredients and serve this drink in pitchers at Ladies Night when I have all my friends over, and it is a hit with them!

- Pour grenadine into the bottom of a hurricane glass. Fill the glass 2/3 full with crushed ice. Pour in tequila and rum. Top off with equal amounts peach and orange juice. Garnish with mint.

PEACHY GREEN TEA COOLER

- Bring 6 cups cold water to a boil.
- Place teabags in a saucepan. Slice the peaches and place in a saucepan. Pour boiling water over the peaches and teabags. Steep for about 5 minutes.
- Strain the tea into a heat-safe pitcher and reserve the peaches. Stir in honey and lemon juice to taste.
- Allow tea to cool, then refrigerate until thoroughly chilled. Reserve peaches in refrigerator.
- To serve: Fill tall glasses with ice, place a few chilled peach slices in each glass, pour chilled tea over the peaches and top with a sprig of mint.
PEACH LEMONADE SPRITZ
You can use a fresh peach, nectarine or apricot here. You can also substitute thawed frozen peach slices or 3 ounces peach puree, canned peaches or peach juice if fresh fruit is unavailable. For best results, refrigerate all ingredients beforehand. This is such a refreshing cold drink!

- Make the lemonade syrup: In a small saucepan, heat 3/4 cup water over medium heat. Add the sugar and whisk until the sugar dissolves, 1 to 2 minutes. Stir in the lemon zest and juice. Transfer the syrup to a small bowl and set aside to let cool.
- Muddle and mix: Place half of the peach in a cocktail shaker and muddle it. Add 4 ounces of the lemonade syrup, the Ketel One and a few ice cubes. Cover the shaker and shake thoroughly to blend.
- Serve: Divide the cocktail between 2 glasses with a few ice cubes and the remaining peach slices in each. Top with a splash of club soda. Garnish with the mint or basil. Stir and enjoy!

- Separate dough into four rectangles; seal perforations. On a lightly floured surface, roll each into a 7x3-1/2-in. rectangle. In a small bowl, combine cream cheese, sugar and lemon juice until smooth; spread over rectangles. Roll up from a long side; pinch edges to seal. Holding one end, loosely coil each., Place on an ungreased baking sheet. Top each coil with 2 teaspoons preserves. Bake at 350° for 15-20 minutes or until golden brown. Remove from pan to wire rack., For glaze, in a small bowl, combine confectioners' sugar, vanilla and enough milk to achieve desired consistency. Drizzle over the tops.

OKRA ORANGE SURPRISE
I created this stir-fry recipe because I love okra and was tired of making the same old recipes. I used baby whole okra, but cut okra would work, too. I am on a very low sodium diet, so use a special salt-less Shoyu, which may be hard to find. Other soy sauce can be substituted, but will greatly increase the amount of sodium. I freeze extra zest whenever I have lemons, and save it to use in recipes like this.

- Heat the oil in a frying pan and add the frozen okra. Reduce heat to medium, cover and cook until the okra is thawed. (The thawing okra will add about half a cup of liquid to the pan. If it doesn't, then add some water, if needed.).
- Add ginger, lemon zest and Shoyu, stir and cook uncovered until almost dry.
- Add orange juice and honey. Stir frequently, turning okra to coat it well. Cook until sauce is reduced and has become sticky. Remove from heat and serve.

SELF-SAUCING PEACH PUDDING
This is a great way to use up all the end-of-season peaches or nectarines. This can also be made with drained, canned fruit when fresh isn't available. I'm going to give it a try with apples now that their season is approaching. Fast, easy and delicious! Serve with vanilla ice cream, whipping cream or eat it plain. Enjoy! P.S. Prep time includes peeling the fruit.

- In 2 litre (8 cup) baking dish, melt butter in 350 deg.
- oven.
- In bowl, whisk together flour, sugar, baking powder and cinnamon until well blended; whisk in milk until smooth.
- Pour over melted butter and whisk until well blended.
- For the sauce, in saucepan, over medium-high heat, bring peaches, brown sugar and cinnamon to a boil.
- Simmer for 2 to 3 minutes.
- Pour over batter.
- Do not stir.
- Bake for 30 to 35 minutes or until cake has risen to top and is puffed and golden.
- Serve warm.
