PEANUTTY SNOWMEN

Steps:
- Line cookie sheets with waxed paper. Place 1/4 of candy coating in small microwavable bowl. Microwave on High 30 seconds. Stir; continue to microwave in 15-second increments until coating can be stirred smooth.
- Dip each side of 8 cookies into candy coating to coat; place on cookie sheets. Add chocolate chips for eyes.
- Repeat with remaining candy coating and cookies. Decorate as desired with assorted candies. Let cookies stand at room temperature for 30 minutes or until coating is set.

MELTED SNOWMAN PEANUT BUTTER COOKIES
Steps:
- Melt the candy melting wafers according to the package directions. Spoon some of the melted candy on top of a cookie and spread it so it covers most of the cookie but has an irregular border. Place a slice of marshmallow toward the top edge and spoon some more melted candy on top, smoothing it to fully cover the marshmallow and blend it into the candy on the cookie.
- Decorate the face of the snowman with mini chocolate chips for eyes and an orange sprinkle as a carrot nose. Place a peanut butter cup half on top of the snowman's head like a hat. Use other sprinkles to add a mouth or buttons if desired. Repeat with the remaining candy, cookies and decorations (rewarming the candy melts if necessary). Let the cookies set, about 10 minutes.

- In a small bowl, combine the butter, corn syrup, extract and salt. Gradually stir in confectioners' sugar. Knead by hand until mixture becomes pliable, 1-2 minutes., For each color of dough, combine 1 tablespoon of dough and food coloring; knead until blended. Leave remaining dough white. Roll white dough into a log; remove a fourth of the log and set aside., For the snowmen's bodies, divide the remaining log into 9 pieces and roll into balls. For the snowmen's heads, divide the reserved dough into 9 pieces and roll into balls. Stack 1 smaller ball on top of each larger ball. , Use the colored dough to form hats, scarves and earmuffs as desired. Use candies to make eyes, noses and buttons.

- Using tongs, dip cookies in candy coating; allow excess to drip off. Place on waxed paper. Place two chocolate chips on one end of each cookie for eyes. Place M&M's minis down middle for buttons and between eyes for nose. , For arms, dip ends of two pretzel stick halves into coating; attach one to each side of snowmen. Let stand until set. Pipe mouth and scarf with gel or frosting.

- Remove yellow ends from candy corn. Cut each candy in half lengthwise; set aside. Meanwhile, spread peanut butter over half of the crackers; top with remaining crackers to make sandwiches. , In a microwave, melt candy coating; stir until smooth. Dip sandwiches in candy coating; allow excess to drip off. Place on waxed paper. , Immediately arrange 1-2 teaspoons miniature chocolate chips to make eyes and a mouth; add a reserved candy corn half for a nose. - Working one at a time, dip a Nutter Butter cookie into the melted coating and flip it over to coat completely (a fork is great for this). Remove and let any excess drip off then place on the wax paper-lined baking sheet. Repeat with the remaining Nutter Butter cookies. - Preheat oven to 350°F. In a large mixing bowl beat shortening and peanut butter with an electric mixer on medium to high speed for 30 seconds. Beat in the granulated sugar, brown sugar, baking powder, salt, and baking soda until combined, scraping sides of bowl occasionally. Beat in egg, milk, and vanilla until combined. Beat in the cocoa powder and as much of the flour as you can with the mixer. Stir in any remaining flour.
- Shape dough into twenty 1 3/4-inch balls. Place balls 2 inches apart on ungreased cookie sheets.
- Bake for 9 to 11 minutes or until edges are just firm. Cool on cookie sheet for 2 minutes. Transfer to a wire rack and let cool.
- Line a baking sheet with waxed paper. Place cooled cookies on prepared baking sheet. If desired, cut marshmallows in half crosswise and place one half on each cookie. In a medium microwave-safe bowl microwave candy coating on 50% power for 2 1/2 to 3 minutes or until melted and smooth, stirring every 30 seconds. Spoon melted coating over each cookie to cover cookie and resemble melted snow. While coating is still tacky, add a peanut butter cup for a top hat and decorate with sprinkles or other candies to resemble snowman faces (If using frosting to make snowman faces, add it when the candy coating is dry.) Let stand until set.
