Steps:

  • In a shallow bowl, combine the first 6 ingredients. Brush oil over 1 side of fillets; gently press into crumb mixture., Place crumb side up in a 13x9-in. baking dish coated with cooking spray. Bake at 400° just until fish begins to flake easily with a fork, 15-20 minutes.

1 tablespoon minced fresh parsley
2 teaspoons grated lemon zest
1 garlic clove, minced
1/4 teaspoon kosher salt

Peanut 'N Pineapple-Crusted Cod image

Steps:

  • Preheat oven to 350°F. Combine peanuts, pineapple and jalapenos; set aside.
  • Line 15x10x1-inch baking pan with foil; spray foil with cooking spray. Place fish on prepared baking pan. Spread evenly with mayo; spoon 1/4 cup of the peanut mixture over each fish fillet, pressing peanut mixture into fish to secure.
  • Bake 20 min. or until fish flakes easily with fork. Sprinkle with cilantro.
