GINGER PEAR BREAD
This is based on my mother's zucchini bread recipe. It is a very moist bread.

Steps:
- Toss chopped pears with sugar, ginger, and cloves in a large bowl. Set aside and let the sugar dissolve in the pear juices.
- Preheat oven to 325 degrees F (165 degrees C). Grease an 8x4-inch loaf pan.
- Stir vegetable oil, vanilla extract, and eggs into the pears. In a separate bowl, combine flour, baking soda, baking powder, and salt. Add the flour mixture to the pear mixture and stir gently just to combine. Pour the batter into the prepared loaf pan.
- Bake in the preheated oven until golden brown and a toothpick inserted in the center comes out clean, about 40 minutes.

PEAR-GINGER LEMONADE
From yesterday's Tulsa World. This lemonade is good for those with sugar restrictions. The pear nectar and ginger juice give it a different flavor. I think the original recipe is by Splenda.

- Combine all ingredients in a pitcher, stirring until Splenda dissolves. Serve over ice.
- *Note: Gigner juice comes in tiny bottles in the juice or spice aisles at grocery stores. If unavailbale, peel and chop a 3-inch piece of fresh ginger, then squeeze the pieces through a garlic press to collect the juice.

PEAR-CELERY LEMONADE

Steps:
- Combine all ingredients in a large saucepan.
- Stir; let stand about 1 hour until pears release their juice.
- Heat and stir until it comes to a boil.
- Cook uncovered, stirring often until pears are mushy.
- Cook rapidly, stirring constantly until jam stage is reached. This will take about 55 minutes.
- Discard spice bag, skim if needed.
- Pour into hot sterilized half pint jars to within 1/4 inch of top. Place sterilized metal lids on jars and screw metal bands on securely. For added assurance against spoilage, you may choose to process in a boiling water bath for 5 minutes.

PEAR & GINGER LOAF CAKE
This makes a lovely teatime treat or pudding, served with cream and also works well with apple and cinnamon or damson and vanilla

- Heat oven to 160C/140C fan/gas 3. Grease and line the base and sides of a 900g/2lb loaf tin with baking parchment, ensuring the parchment comes 2cm above the top of the tin. Beat the butter and sugars together until pale, then gradually stir in the eggs and vanilla extract. Fold the flour, baking powder and a pinch of salt into the mix, then quickly stir through the stem ginger and pears. Pour the mixture into the loaf tin, smooth the surface, then bake for 1 hr - 1 hr 10 mins or until a skewer inserted in the centre comes out clean. Allow to cool in the tin.
- To make the glaze, mix the syrup with 1 tsp water and the sugar. Poke the surface of the loaf all over with a skewer, then pour on the syrup. Serve warm with cream, or allow to cool completely.

GINGER-PEAR MARMALADE

- Place pears and sugar in a large pot. Quarter and seed the lemons and grind in a meat grinder, using the coarsest blade. Add to the pot. Grind enough drained preserved ginger to measure 1 cup and add to the pears. Bring to a boil over medium heat, stirring constantly, until the sugar is dissolved. Turn heat low and simmer for 1 hour, until a thermometer registers 220° or until the juice is somewhat syrupy and amber-colored and the fruit is transparent. (Do not overcook and allow the syrup to get too thick; it will thicken considerably as it cools.) Pour into hot, sterilized jelly glasses and cover with a thin layer of paraffin. When the paraffin has hardened, cover the glasses and store.

- Place pear halves, cored side up, in two baking pans. Cut off a sliver from the rounded side of each pear half so that it will set nicely in the pan. Place a dot of butter in each hollow of pear. Sprinkle with brown sugar.
- Mix together the cream cheese and honey until creamy. Add vanilla, lemon juice, water, and cinnamon. Pour cream cheese mixture over pear halves. Half way through baking, sprinkle pecans over pears.
- Bake at 350 for about 1 hour, until sauce starts to turn a golden color. Serve warm.

- Cream butter, gradually beat in sugar.
- Beat in eggs, one at a time. Combine dry ingredients.

- Freezes well.

- After you have peeled and chopped the pears you want 5 1/2 cups.
- Using a zester remove green rind from limes; you want 1 T.
- Squeeze the limes to get 1/3 cup.
- Place pears, rind and juice in a large stainless steel or enamel saucepan.
- Stir in ginger root and sugar.
- Bring fruit to a full boil stirring constantly.
- Do this until it reaches the gel stage, around 15 minutes.
- If desired mash the fruit.
- Ladle into sterile hot jars leaving 1/4 inch head space.
- Seal and process 5 minutes at altitudes up to 1000 feet.
