PESTO RICE PEPPERS

I like to use red, orange and yellow - sweet peppers for colour. Great as a side dish to chicken, turkey, lamb or pork, or as a meatless main dish. I blanche my peppers for 5 min.in boiling water as I prefer the peppers to be softer. This recipe from Foodland does not call for this.

Pesto Rice Peppers image

Steps:

  • In large bowl, mix together rice, cheese, pesto, sun-dried tomatoes and pine nuts; set aside.
  • Cut peppers in half through stems (retain stems); seed and core.
  • Fill each pepper half with rice stuffing. Place, stuffing side up, in baking dish.
  • Cover with foil; bake in 350°F (180°C) oven for 35 minutes.
  • Topping: Remove foil. Sprinkle cheese over peppers; bake uncovered, for about 5 minutes longer or until cheese is golden.

1/3 cup freshly grated parmesan cheese
1/4 cup pesto sauce
3 tablespoons diced rehydrated sun-dried tomatoes
3 tablespoons toasted pine nuts or 3 tablespoons chopped almonds

Sauteed Peppers image

Steps:

  • In a saute pan, heat 1 tablespoon olive oil, and then sweat the garlic, and green chili over medium heat. Add the red, orange, and yellow peppers, and saute for 1 minute.
  • Add the red onion, and lemon zest to the pan, and continue cooking until the peppers are slightly tender.
  • Remove the pan from the heat, season with salt, to taste, and add the lemon juice. Drizzle with the remaining 1 tablespoon olive oil, and serve.

Steps:

  • Put 1 cup of the flour in a shallow bowl and set aside. In another bowl, whisk together the remaining 1 cup flour, the beer and Cajun seasoning. Let the batter sit for 5 minutes.
  • Pour enough oil into a 3- to 4-quart saucepan to reach a depth of 2 inches. Heat the oil over medium-high heat until a deep frying/candy thermometer clipped to the side of the pan without touching the bottom registers 350 degrees F.
  • Dredge the pickles and peppers in the flour, shaking off any excess. Dip into the batter and coat completely, then transfer to the oil. Fry, turning with tongs, until golden brown on all sides, 2 to 3 minutes total. Drain on paper towels and serve.

Steps:

  • Make 4 servings of rice as directed.
  • In a small bowl combine orange juice, soy sauce, honey, cornstarch, and ginger; blend well.
  • Set aside.
  • Cook pork until no longer pink.
  • Add bell peppers; cook and stir 2-3 minutes.
  • Add orange juice mixture.
  • Bring to a boil.
  • Boil 1 minute or until sauce is slightly thickened, stirring constantly.
  • Serve over rice.

Stuffed Peppers With Orzo image

Steps:

  • Halve peppers lengthwise, removing stems, seeds and membranes. Immerse peppers in boiling water for 3 minutes. Remove and sprinkle insides with salt. Invert peppers on paper towels to drain well.
  • In a skillet cook lamb, turkey or pork and onion for 5 minutes, or until meat is brown and onion is tender. Drain fat. Stir in stewed tomatoes, uncooked pasta, mint, basil, or oregano, allspice, water , salt and pepper. Bring to boiling; reduce heat. Cover and simmer for 7-8 minutes, or until pasta is al dente. Stir in 1/4 cup of the kasseri or Parmesan cheese. Fill peppers with meat mixture.
  • Place in a 2-quart square baking dish along with any remaining meat mixture. Bake in a preheated 375F oven for about 15 minutes, or till heated through. Sprinkle with remaining cheese. Let stand for 1-2 minutes before serving.

Steps:

  • Preheat oven 350 degrees.
  • Lightly spray baking pan with cooking spray.
  • Blanch peppers in boiling, salted, water 5 minutes.
  • Briefly, and lightly, hand mix ground beef mixture, adding all ingredients from ground beef to parsley, except tomato sauce topping.
  • With a tablespoon, stuff each pepper with meat mixture.
  • Mix ingredients of tomato sauce and spices, or use any tomato sauce of your choice.
  • Place 2 tablespoons of tomato sauce in baking pan covering bottom. (This will be a small amount of covering).
  • Add meat stuffed peppers to dish.
  • Drizzle tomato sauce over top of stuffed peppers.
  • Add optional 1 piece of bacon to top of each pepper.
  • Bake at 350 degrees for 50-60 minutes.
  • When serving, dish out tomato "gravy" to top of each pepper.
