Steps:
- Place chopped onions into a pan. Add in the 2 tbls of oil and cook on medium high heat until onions are transparent.
- Once onions are transparent put in either diced chicken or beef and cook for 6 minutes.
- Mix in the coconut milk and water with the onions and chicken.
- Add the spices and veggies to the milk mixture.
- Simmer for at least 20-30 minutes. Stirring occasionally.
- Server over steamed Basmati rice.

CHICKEN-CHICKPEA CURRY

- Pulse 3 chopped tomatoes, the shallots, ginger, jalapeno, curry powder and 1 teaspoon salt in a food processor until smooth. Heat the vegetable oil in a large Dutch oven or pot over medium-high heat. Add the tomato mixture and cook, stirring often, until darkened and paste-like, 10 to 12 minutes (add water as needed if the mixture is sticking).
- Add 2 1/2 cups water to the pot and bring to a simmer. Add the chickpeas and cook, stirring often, until the sauce thickens slightly, 8 to 10 minutes.
- Stir in the chicken, okra and cilantro. Cook, stirring gently, until the okra is crisp-tender, 2 to 3 minutes. Divide among bowls and top with yogurt, more cilantro and the remaining chopped tomato. Serve with naan.

- Heat oil in a large skillet over medium heat. Add onion and saute until soft and golden brown. Slowly stir in curry powder. Once ingredients are blended together, add chicken breasts. Cover skillet and simmer over medium low heat for about 45 minutes or until chicken is cooked through and no longer pink inside.
- Remove cover from skillet and cook for an additional 15 minutes, until sauce reduces. (Note: Make sure that you stir and that dish does not burn, as curry powder burns very easily!)

- In a large bowl, toss the chicken pieces with lemon juice, salt, and pepper to coat. Set aside.
- Heat oil in a large, heavy saucepan over medium heat. Stir in cumin seed and cook 1 minute, until lightly toasted. Mix in onion, garlic, and ginger. Cook until onion is tender. Add tomatoes, and season with chili powder, turmeric, garam masala, ground cumin, coriander, and paprika. Continue to cook and stir 2 minutes.

- Rinse chicken pieces and pat dry. Set aside. Grind poppy seeds into a paste.
- In a large skillet, saute onions and green chiles in oil until golden brown. Add ginger garlic paste and continue to saute. Add poppy seed paste and reserved chicken pieces, continuing to saute. Stir all together; after chicken is well mixed with the 'gravy', add the red chili powder and pour 2 cups of water over the mixture. - Melt butter in large skillet over medium low heat.
- Add the onion, apple and garlic and mix well.
- cook, covered over low heat until the onion is tender and translucent, about 12 minutes.
- Add the curry powder to the onion mixture and mix well.
- Dissolve cornstarch in the milk and add it to the mixture.
- Add the chicken broth and mix well.
- Reduce the heat to low and cook, stirring frequently, until slightly thickened.
- Add the lemon zest and lemon juice and mix well.
- Stir in the chicken and continue cooking until the chicken is heated through.
- Optional: Serve over rice with condiments such as chutney, raisins, diced bell peppers, cucumber, tomato, pineapple, papaya, mango, banana, kiwi, chopped scallions, hard-boiled eggs, peanuts or toasted almonds.

PHOBIC CHICKEN CURRY

This curry is for the curry-phobes, not to spicy, not too hot, but definitely delicious and certainly adventurous enough for those aren't really adventurous at all. - Heat the oil in a Dutch oven.
- Add the chicken, and saute until no longer pink.
- Add the onion and keep sauteeing until golden.
- Add the zucchini, red pepper, pumpkin and corn.
- Cook over medium heat, stirring, until the vegetables are tender, about 10 minutes.
- Add the cumin, brown sugar, ginger and curry powder.
- Stir and continue cooking over medium heat.
- Add the tomato sauce and salt and pepper to taste.
- Cook another 7 minutes, making sure that the bottom doesn't burn.
