PICKY MIKE'S GOULASH

Quick and easy to make. I especially like a goulash in the winter as an alternative to chili. My husband is a VERY PICKY eater, but he loves this dish. This goulash is best on the second day and is great with a salad and garlic bread.

Steps:

  • In a stew or dutch-oven pot, saute meat and chopped onions until brown.
  • Pour off any grease (I use lean turkey, so I don't have extra grease).
  • Add to browned meat& onions all of the remaining ingredients (the order doesn't matter).
  • Stir and bring to boil, then turn down to medium-low or simmer and put lid on pot.
  • Simmer 20 minutes or until noodles (or potatoes) are done.
  • Stir occasionally to keep from sticking to bottom of pot.

1 lb ground turkey or 1 lb ground chicken, browned (I prefer lean turkey)
1/2 cup chopped onion, sauted with the meat
2 (15 ounce) cans mixed vegetables (OR 1 can cut greenbeans with juice and 1 can whole kernel corn with juice)
1 (15 ounce) can diced tomatoes (I prefer Hunt's with spices already in it for more flavor)
1 (15 ounce) can tomato sauce (I prefer Hunt's with spices already in it for more flavor)
1/2-3/4 cup small elbow macaroni (or dice 1 extra large potatoe or 2 medium potatoes instead of noodles)
3/4 cup water (I use one of the empty veg. cans)
salt and pepper (I prefer the grinder kind of sea salt and black pepper or mixed pepper)

CHEF JOHN'S AMERICAN GOULASH

One of my all-time favorite comfort food meals growing up was the beef goulash they served in my school cafeteria alongside a slice of buttered white bread and a carton of milk. Little did I know that it wasn't really goulash, but an Americanized version, invented to stretch a small amount of beef into enough food for a not-so-small family. This is one of those very simple dishes that does not taste simple--perfect for your weeknight dinner rotation.

Steps:

  • Heat oil in a pot over medium-high heat. Add onion and ground beef. Cook, breaking the meat into small pieces, until browned, about 5 minutes. Cook and stir until liquid is evaporated, 3 to 5 minutes more. Add garlic, salt, black pepper, cayenne, paprika, Italian seasoning, and bay leaves.
  • Cook and stir until flavors come together, about 3 minutes. Pour in chicken broth, diced tomatoes, and marinara sauce. Rinse out the jar with 1 cup water and pour into the pot. Add soy sauce, stir, and bring soup to a simmer. Reduce heat to medium and simmer to let flavors intensify, about 30 minutes.
  • Increase heat to medium-high and bring soup to a simmer. Add macaroni; simmer, stirring occasionally, until just barely tender, about 12 minutes. Check for doneness after 10 minutes.
  • Remove goulash from heat. Discard bay leaves; stir in parsley and Cheddar cheese. Cover and let rest for 5 minutes. Taste and season as desired.

Steps:

  • 1. Prepare elbow macaroni according to directions on package till al dente.
  • 2. Save a little of the pasta water in case you need it later to loosen the sauce.
  • 3. Brown meat in a large skillet, drain the fat.
  • 4. Add the scallions, bell pepper, Italian herb blend, corn and garlic into the cooked meat.
  • 5. Cook 5 minutes, stirring constantly.
  • 6. Add the salt, pepper, diced tomatoes and tomato sauce and cook until boiling. Reduce the heat to low and cook another 5 minutes.
  • 7. Add the meat mixture to the cooked macaroni.
  • 8. Mix all this together and add seasoning to taste.

  • Heat a large pot or Dutch oven over medium-high heat. Cook and stir beef in the hot pot until browned and crumbly, about 10 minutes; drain and discard grease. Stir onion and garlic into beef; cook and stir until onion is translucent, about 10 minutes.
