Quick and easy pico de gallo that is a great app or addition to dinner. Huge hit in my house!

Steps:

  • Stir the tomatoes, onion, cilantro, jalapeno pepper, lime juice, garlic, garlic powder, cumin, salt, and pepper together in a bowl. Refrigerate at least 3 hours before serving.

6 roma (plum) tomatoes, diced
½ red onion, minced
3 tablespoons chopped fresh cilantro
½ jalapeno pepper, seeded and minced
½ lime, juiced
1 clove garlic, minced
1 pinch garlic powder
1 pinch ground cumin, or to taste
salt and ground black pepper to taste

Steps:

  • In a medium bowl, combine 4 diced plum tomatoes, 2 tablespoons chopped cilantro, 1/2 minced red onion, 1 minced garlic clove, 1 minced jalapeño (seeded), the juice of 1 lime, 1 teaspoon fresh celery juice (optional), 1/2 teaspoon kosher salt and a few grinds of pepper; mix well. Cover and refrigerate to allow the flavors to meld, 1 hour or up to 3 days. Drain any excess liquid before serving.

Pico De Gallo Garlic Burgers image

Steps:

  • Using your hands, squeeze excess liquid from pico de gallo.
  • Mix all ingredients together.
  • I use my hands as it tends to blend the ingredients better.
  • Form into burgers (size is your choice).
  • NOTE: The burgers will be very moist but should not fall apart, you will need a spatula to set them on the grill if you are not cooking on stovetop.
  • Cook and enjoy with your favorite condiments.
  • I grill the buns for added taste.
  • I also love to make my own fresh french frys and when I pull them out of the deep fryer I sprinkle them with Tony Cachera's Cajun seasoning.
  • You can use store brand pico de gallo, I however make my own but also love the recipes that are on Zaar.
  • I couldn't narrow it down to one recipe to refer you to, so please do a search for your choice of recipe.
  • I admit, I have fallen in love with Yai-Yai's Garlic Sauce, it is a very strong wonderful sauce (http://www. ultimategarlic. com).
  • You can use fresh micned garlic as well.
  • As I love garlic, if I used fresh I would probably use 2 to 3 cloves at least.

1 -2 lb hamburger (I use coarsely ground chuck)
1/2-2/3 cup pico de gallo
2 tablespoons yai-yai's garlic sauce
crushed red pepper flakes (to taste)
1/4 small white onion, diced (I just tend to enjoy more onion) (optional)
4 -8 fresh hamburger buns, i prefer fresh onion or 4 -8 kaiser rolls

  • Finely chop the onion and jalapeño. (For a milder version, remove the seeds from the jalapeño). Mince the garlic. Add these three ingredients to a bowl with the lime juice and a healthy pinch of salt (at least 1/4 tsp. to start). Stir, and set aside.
  • Finely chop the roma tomatoes and cilantro, then add to the bowl. Add a pinch of freshly cracked black pepper, stir, and taste. Season with more salt, pepper, or lime juice if needed!
  • Eat fresh! Or refrigerate the pico de gallo in an airtight container for at least 30 minutes before serving, if possible.**
