Pineapple Cocktail Recipes

Steps:

• Add the grapefruit juice, maraschino cherry juice, pineapple chunks and li hing powder, if using, to a blender. Blend on high until smooth.
• Divide the juice among 8 to 10 large glasses and add ice. Divide the seltzer among the glasses. Float with 2 ounces of dark rum if desired. Top with a wedge of pineapple and a maraschino cherry if using.

Steps:

• Chill a martini glass in the freezer. Fill a cocktail shaker with ice. Add the pineapple juice, vodka, orange liqueur, and lime juice. Cover and shake vigorously, until combined and chilled, about 30 seconds. (In general, by the time the shaker mists up the drink is ready.)
• Scatter some turbinado sugar onto a small plate, wet the rim of the glass and dip into sugar. Strain the drink into the chilled glass. Skewer the pineapple and cherry and drop into the cocktail. Cheers.

• Mix first 2 ingredients in large nonstick skillet until blended.
• Stir in meatballs until evenly coated.
• Bring to boil on medium-high heat; simmer on medium-low heat 10 min. or until heated through, stirring occasionally.

• Toss shrimp with half the lime juice. Refrigerate 30 min.; drain.
• Combine all remaining ingredients except crackers in large bowl. Add shrimp; mix lightly.
• Refrigerate 30 min. Serve with crackers.

• Stir together lime juice and agave nectar; add to a blender, along with pineapple juice, pineapple, triple sec, tequila, and ice. Blend until smooth and frothy.
• In a small shallow bowl or saucer, combine chili powder, sugar, and salt. Rub a lime wedge around the rims of 4 glasses, then dip glasses in spice mix to coat. Divide drink among glasses and serve with lime wedges.

• Soak the crushed pineapple in the white wine for two or three hours. Pour into a cocktail shaker and add all other ingredients except the pineapple wedges. Chill mixture thoroughly in the refrigerator. Stir and strain into 6 cocktail glasses. Garnish with pineapple wedges.
