Steps:

  • In small sauce pot, combine poineapple juice, coconut milk, and chicken broth. Bring to simmer, and keep warm.
  • Melt butter in larger stock pot.
  • Add onion and cook on medium heat until translucent.
  • Add rice and stir until butter is absorbed (about 3 minutes).
  • Stirring constantly, add about 1/2c of the liquid to the rice.
  • Stir until most of the liquid is absorbed.
  • Add another 1/2c addition of liquid, and stir until liquid is mostly absorbed.
  • Continue adding liquid 1/2 cup at a time, until rice is tender.
  • Not all arborio rice is the same. Liquid amounts may be more or less than the 3 cups. Risotto is done when the rice is soft and creamy, with a little bite in the center of each grain. This will take about 20 minutes to achieve.
  • When rice is cooked, stir in parmesan cheese and pineapple.
  • season with salt and pepper.

Steps:

  • Preheat the oven to 300 degrees F.
  • Season the veal cheeks with salt and pepper on both sides. Heat a large skillet over medium-high heat, and then add enough oil to lightly coat the skillet. Let the oil heat, and then add the veal to the pan, and sear it on all sides until browned.
  • In a Dutch oven or oven-safe pot, cook the bacon slowly over low heat. Add the chopped onion, carrot, and ginger, and cook for 4 minutes. Add the wine, soy sauce, and pineapple skin, and bring to a boil. Add the veal stock, and return to a boil. Add the seared veal cheeks, and place pot in the oven to braise for 2 1/2 hours.
  • Closer to serving time, make the risotto. In a medium saucepot, sweat the remaining diced onion in 2 to 3 tablespoons butter for 2 minutes over medium heat. Reduce the heat to low. Add the risotto rice, and stir with a wooden spoon to coat it in the butter. Slowly add the chicken broth in 2 equal additions, not adding the second addition until the first has been almost completely absorbed. Stir constantly during the entire process. After all of the chicken broth has been absorbed, add the coconut milk, and then add enough of the braising liquid until the risotto is cooked to your taste. Fold in the remaining 1 tablespoon butter, papaya, tomato, and herbs. Serve immediately.
  • Place the risotto in the center of a plate and place 2 veal cheeks on top. Garnish parsnip chips or fried shallots, if desired.

8 veal cheeks
Salt and freshly ground black pepper
Vegetable oil, for searing
2 slices bacon, chopped
1 onion, chopped, plus 1/2 onion, diced

3/4 cup soy sauce
Skin from 1 whole pineapple
4 cups veal stock
2 to 3 tablespoons butter, plus 1 tablespoon
1 cup arborio rice
2 1/2 cups chicken broth
1 can coconut milk
1/2 cup diced papaya
1 tomato, diced
2 sprigs mint, chopped
2 sprigs cilantro, chopped
Serving suggestions: parsnip chips or fried shallots.

SEARED SCALLOPS WITH BASIL RISOTTO

There's just something about the caramelized crust and meaty interior of scallops that makes them the perfect protein. They also have a naturally delicate flavor, so it's important to let them shine with a simple seasoning of salt and pepper. However, that means whatever scallops are served with has to take the lead with big, bold taste. Cue basil-pineapple risotto! Once you make risotto with pineapple juice, you'll be hard pressed to go without it ever again. If you're looking to wow guests with a meal they'd be likely to find in a five-star restaurant, then this is your dish.

Steps:

  • Combine the pineapple juice and broth in a medium saucepan set over medium heat. Bring the mixture to a simmer, then cover with a lid and remove from the heat.
  • Heat the butter in a large saucepan set over medium-low heat. Add the onion and garlic and cook, stirring, until the onion is translucent, about 5 minutes. Add the rice and cook, stirring, for 1 minute.
  • Add a ladle of the hot juice mixture to the saucepan and cook, stirring, until the liquid is fully absorbed. Continue adding the hot liquid to the saucepan, one ladle at a time and stirring intermittently, until the rice is no longer crunchy, about 30 minutes.
  • Stir in the Parmesan cheese, salt, and pepper, then turn off the heat and stir in the basil. Set aside, covered, while you cook the scallops.
  • Pat the scallops dry, then season with salt and pepper. Heat the oil in a medium skillet set over medium-high heat. Once the oil is hot, add half the scallops and cook undisturbed for 2 minutes. Flip the scallops once, then tilt the skillet and baste them with the oil. Continue cooking the scallops an additional 1 minute, until no longer translucent. Transfer to a plate and repeat with the remaining scallops, adding more oil as needed.
  • Divide the risotto among serving plates and top with the scallops.
  • Garnish with microgreens and serve.

2 cups pineapple juice
1 ½ cups vegetable broth
3 tablespoons unsalted butter
⅓ cup minced yellow onion
1 tablespoon minced garlic
1 ¼ cups uncooked Arborio rice
¾ cup freshly grated Parmesan cheese
½ teaspoon kosher salt, plus more for seasoning
¼ teaspoon black pepper, plus more for seasoning
3 tablespoons minced fresh basil
1 pound sea scallops
2 tablespoons vegetable oil, plus more as needed
½ cup microgreens, for serving

  • Set two pans on your stove, a 4 qt saucepan for broth, a larger pot for the risotto. I use a wide 6 qt stock pot like pan, a dutch oven would work as well.
  • In the larger pot or pan heat over medium-high heat then add two tablespoons of the oil and one tablespoon of the butter.

  • Heat the Butter (1/4 cup) in a large rondeau pan over medium high heat. Lightly cook the Fresh Pineapple Chunks (2 cup) in it for about a minute, then remove it with a slotted spoon and set it aside.
  • Add the Arborio Rice (1 1/4 cup) to the same pan and cook it in the buttery, pineapple flavored liquid for 30 seconds, just to lightly toast it.
  • Pour the Pineapple Juice (1/2 cup) into the pan and let it completely get absorbed by the rice, about 2-3 minutes. While that happens add in the Salt (1 pinch) and Ground Cinnamon (1/4 teaspoon) for flavor. Also get a small pot on the stove with the Chicken Stock (2 3/4 cup) in it and just warm it up on low heat.
  • Ladle 1/3 of the chicken stock into the pan with the rice, then constantly stir while the rice absorbs that stock. Repeat with the next third of stock, still stirring constantly. Once that is absorbed add in the remainder of the stock and let the rice get fully cooked and tender while you still stir.
