- In a med-large bowl, cream together the softened cream cheese and sugar with an electric mixer on high speed for 3-4 minutes.
- Stir in the slightly drained crushed pineapple, coconut and pecans; mix well.
- Carefully fold in half of the whipped topping, until filling is blended well.
- Reserve the remaining half for top.
- Spoon the filling into prepared crust.
- Chill for several hours before serving.
- NOTE: A alternative, is to fold in the full amount (2 cups) of whipped topping into the filling; this works quite well, and produces an even lighter texture of pie, but, allow more chilling time before serving for this method.
- ALSO: this pie has a better texture, and holds up better and longer if prepared with Cool Whip topping.

- In a bowl, combine the cracker crumbs, sugar and butter. Set aside 1/4 cup for topping. Press the remaining crumb mixture onto the bottom of a greased 11x7-in. baking dish. Bake at 350° for 10-14 minutes or until lightly browned and set. Cool on a wire rack., For filling, combine sugar and cornstarch in a saucepan. Gradually whisk in milk until smooth. Bring to a boil; cook and stir for 2 minutes or until thickened. Remove from the heat. Stir in a small amount of hot filling into egg; return all to the pan, stirring constantly. Bring to a gentle boil; cook and stir for 1 minute. Remove from the heat; stir in vanilla. Cool for 30 minutes, stirring several times., Stir in pineapple. Pour over crust. Top with whipped cream (pan will be full). Sprinkle with marshmallows and reserved crumb mixture. Cover and refrigerate for at least 3 hours.

FROZEN PINEAPPLE DREAM
A creamy & refreshing summertime dessert you are sure to enjoy! It would be lovely served at a bridal shower. Individual servings are very pretty presented with whipped cream and a little pineapple ice cream topping. While creating this RSC #12 Contest entry, my objective was to come up with something like an orange creamsicle only made with the combination of pineapple and vanilla flavors. Frozen Pineapple Dream was the deliciously addicting result. I kept this dessert tightly covered in the freezer and ready to serve at a moment's notice. That way we had many opportunities to enjoy the recipe!

Steps:
- Crush graham crackers into 1 1/3 cups crumbs and combine them with sugar & butter.
- Press evenly across bottom of a 9x13" glass baking dish.
- Bake graham crust at 350°F for 8 minutes then set aside to cool.
- Drain pineapple and reserve the juice.
- In a microwave-safe bowl, sprinkle gelatin powder over pineapple juice and allow to stand for 2 minutes until dissolved, then microwave for 30 seconds, stir, and let stand another 2 minutes until slightly thickened, then stir back into the pineapple.
- In a large bowl, cream together mascarpone cheese & Splenda until smooth and fold into pineapple.
- Add sherbet & food coloring to pineapple and stir until evenly mixed (You may place mixture into the freezer for a few minutes if it seems too thin - My sherbet was too soft and so I put my pineapple/sherbet mixture in the freezer for about 15 minutes at this point until it was just about as thick as the whipped topping).
- Gently fold in whipped topping and pour evenly over cooled graham crust.
- Cover and freeze for 1 1/2 to 2 hours or until you are ready for dessert.
- Remove from freezer 5-10 minutes in advance of cutting into individual squares which may be decorated with optional pineapple ice cream topping and additional whipped cream.

PINEAPPLE DREAM PIE
Steps:
- First, soften the cream cheese; then slowly add the sugar while using a beater or a fork to blend them together (beater is better).
- Fold the whipped cream in a little at a time, then fold in the crushed pineapple a little at a time. Next, pour mixture into crust and top with the pineapple chunks or tidbits.
- Refrigerate for 6 hours or overnight (overnight is best). Before serving, this is optional, take canned whipped cream and decorate around the edge of the pie.
- Number of servings depends on how much you want, although it usually has 6 servings in my home. Enjoy!!! :-D

My aunt gave me this recipe ten years ago, when we were celebrating Christmas at her house. I have made it every year since then, and now my family considers it one of our traditions. The secret ingredient is baby food. This looks so pretty on the table. The color is fabulous. It's also great for Thanksgiving.

- Mix orange-flavored gelatin with pineapple in a small saucepan. Cook over low heat until gelatin is completely dissolved. Remove from heat and stir in sugar. Cool completely.
- In a medium mixing bowl, using a mixer on medium speed, beat gelatin mixture, baby food, cream cheese and whipped topping. Blend well. Stir in nuts. Spoon into serving bowl, cover, and refrigerate at least four hours.

PINEAPPLE - COCONUT CREAM DREAM PIE
This pie is a "cooked" filling like your granny used to make. It's fully of fat, sugar, calories and totally something that would make dear Mr. Adkins and his diet and the folks at Weight Watchers have a heart attack and drop dead. However, my dietitian and I have tried to make it low-sugar/low-carb.

- Heat oven to 350 degrees. Generously coat a 9 inch pie plate with spray.
- Process the cookies in a food processor until fine crumbs. Add margarine and process until crumbs are moist. Press into the pie plate. Bake 12 minutes until toasted around the edges and cool on a wire rack.
- Mix Splenda and cornstarch in a 2-qt. saucepan. Add enough pineapple juice to the coconut milk to make 2 1/2 cups. Stir into the sugar mixture, then bring to a boil over medium heat, stirring occasionally, but not briskly. Boil one minute. Remove from heat.
- Whisk yolks to mix; gradually whisk in about half the hot mixture; return to saucepan. Stir over low heat for 2 minutes. Remove from heat, stir in margarine till melted. Stir in pineapple and coconut. Pour into crust. Cover surface with plastic wrap to prevent a skin from forming and refrigerate 3 hours.
- Before serving: beat the cream and sugar to stiff peaks if using cream. Spread over pie and garnish with pineapple chunks, shredded coconut, or mint sprigs.

- Preheat oven to 350 degrees. Using your food processor, pulse cookies until finely ground. If no food processor, add to 1 gallon plastic bag and roll with rolling pin. Be sure to reserve a few cookies for the top of your pie.
- Firmly press your wafer crumb mixture into bottom and up sides of a 9-inch pie dish. This should give you plenty of crumbs for a nice, thick crust (which I LOVE). Bake until crust is dry and set, about 10-12 minutes. Let cool completely in plate on a wire rack before attempting to fill.
- Beat the cream cheese and butter together until creamy. Reduce mixer speed and add powdered sugar slowly until well combined. Beat on high speed for one minute. Add a heaping tablespoon of your drained pineapple and stir in. Spread this cream cheese and pineapple mixture over your crust.
