MEAT LOAF WITH PIQUANT SAUCE
The Pinquant Sauce gives it a special topping kick for added flavor. My 5-year old grandson likes to help crack the eggs and smoosh everything up as he calls it.

Steps:
- 1. Add meat, eggs, cracker crumbs, onion and seasonings. Mix well. Place in greased loaf pan.
- 2. Combine Pinquant Sauce ingredients together in bowl and spread evenly on top of meatloaf. Bake 350 for one hour.
- 3. Remove from oven and let meatloaf set about 5 minutes before serving.
GREASELESS MEATLOAF WITH PIQUANT SAUCE
NO way is there such a thing as greaseless meatloaf! My neighbor came home from church with this recipe-so we both made it on the same night to test it. WOW! No dripping grease yet moist and tender and tasty. Now it's an "Old Standby"

Steps:
- Lightly mix together all ingredients until well blended.
- Shape into two loafs (9x5x3) in a shallow pan.
- In a small bowl, mix together all 4 Piquant Sauce ingredients until well blended (not lumpy).
- "Frost" both loafs starting with the sides and finish with the top.
- Bake in a 350 degree oven for 1 hour.
- Allow to cool for 5 minutes before cutting.

MEAT LOAF WITH PIQUANT SAUCE
This is a recipe my aunt gave me a few years ago and I had misplaced it. After going through some recipes in a cookbook, I found it. I always enjoyed this meat loaf accompanied by mashed potatoes.

Steps:
- Soak bread crumbs in milk; add meat, eggs, onions, seasonings, and green pepper, if using. Mix well. Form into loaf and place in loaf pan.
- Piquant Sauce: 3 T. brown sugar, 1/4 c. catsup, 1/4 tsp. nutmeg, 1 tsp. dry mustard. Spread over top of meat loaf. Bake at 350 for approximately one hour. Tip: To soak up grease from meat loaf, lay two slices of bread under the meat before cooking.

- Mix first 8 ingredients in a large bowl.
- Add ground beef and mix by hand just until blended.
- Place mixture on a broiler pan, and shape into a loaf.
- Bake at 350°F for one hour.
- Mix topping ingredients together.
- Top meatloaf with topping and bake an additional 15 minutes or until loaf cooked through.

PIQUANT SAUCE FOR MEATLOAF OR VEGGIES LOAVES
This is a recipe my Mom always used when she made meatloaf. Use it as you would ketchup (as a topping). It is not hot...just a wee bit spicy. It is good on meatloaf or veggie loaf sandwiches. If making for a family....you may want to double recipe. I use Keen's mustard in this. If you can....grate the nutmeg....a much more pungant taste. Cooking time is resting time.

Steps:
- Combine brown sugar, nutmeg and mustard until all lumps are gone -- or the sauce will be lumpy.
- Add ketchup and mix until well combined.
- Let sit for about 1/2 hour so the sugar crystals will dissolve.

I found this recipe many years ago and my family loved it and so i've been making it ever since.

Steps:
- 1. Mix the ingredients for the sauce and set aside to thicken.
- 2. Preheat oven to 350F. In a large bowl mix ground beef and remaining 6 ingredients. I then mix this thoroughly and form into a loaf shape, fit into loaf pan and pour the sauce over the top. Bake 350F for 1 hour or until meatloaf is no longer pink.
- 3. After you take meatloaf out of the oven, remove meat out of pan and let it rest on a small wire rack to drain. Then slice and serve.
