MINI STUFFED PIZZA BALLS
I have to share this. I found this just searching one night months ago and not sure if this was the exact site, but it is the same recipe and they are just WAY too good. They are not hard, inexpensive and just a great appetizer. This is great for a dinner party, or just family or even a potluck. How about for Monday Night Football? I know it will be on my list for years to come. www.Ourbestbites.com is where I found this but I have seen this recipe on many sites. There are a few pics there that are helpful, but like I said, I just had to pass this on. No credit for this other than I love to make them. They are really good. The best part is ... you can stuff these with ham, pepperoni, sausage, onions peppers, etc, anything.

- Prepare all your fillings -- I just make sure everything is diced fine.
- Pizza -- On a floured counter top or you can use corn meal roll out the dough in a large rectangle, about 12"x10". Then cut in 24 squares. Top each square with some of the filling and some of the cheese and then just pick up each square and enclose the dough around the filling and roll lightly into a ball.
- Baking -- place the pizza balls seam side down in a pie dish sprayed well with pam. Don't worry about them being right next to one another. When they are finished, you can pull them about like "cinnimon rolls." I think I got 12 in each pie plate.
- Topping -- Mix the olive oil with the garlic and dried seasoning and brush over the pizza balls and then top with a light dusting of the parmesan cheese.
- Bake -- 15-20 minutes at 400 degrees. I just follow the directions for my pizza dough, usually 4,00 for about 15-20 minutes.
- They will be golden brown, crusty and just serve with marinara. They are small bite size tear away pizza balls which are just great. And like I said, fillings are whatever you like. I like pepperoni, onion, green pepper and mozzarella, but you can use anything, ham mushroom and swiss would be great, sausage, onion, sundried tomatoes, you name it. Just make sure the filling are already pre cooked.
- Marinara -- Heat up the marinara in a small bowl just in the microwave and serve with the pizza.
PIZZA DOUGH
This pizza dough is very easy to put together, and it's enough for four 10-inch-diameter pizzas. It is best if prepared in advance and refrigerated overnight. Refrigerated dough will keep several days. It may also be successfully frozen and thawed. Keeping preweighed individual frozen dough balls on hand makes it easy to have pizza whenever you like. (Thaw dough overnight in the refrigerator or leave at room temperature for several hours.)

- Put 1 3/4 cups/420 milliliters lukewarm water in a mixing bowl (use a stand mixer or food processor if you prefer). Sprinkle yeast over water and let dissolve, about 2 minutes.
- Add flour, salt and olive oil and mix well until flour is incorporated and dough forms, about 5 minutes. It may look a little rough or pockmarked.
- Lightly dust a work surface with flour. Turn dough out onto surface and knead lightly until it looks smooth, 3 to 4 minutes. Cut dough into 4 equal pieces, about 8 ounces/225 grams each.
- Wrap dough pieces individually in resealable zipper bags and refrigerate for several hours or, for best results, overnight; you can also freeze it for future use. (You can skip this rise in the refrigerator and use the dough right away, but this cool, slow rise makes it easier to stretch and gives the pizza a crisper texture and more nuanced flavor.)
- To use dough, form each piece into a smooth, firm ball, and place on a flour-dusted or parchment-lined baking sheet. (If you froze the dough, leave it at room temperature for several hours first, or defrost overnight in the refrigerator.) Flour lightly, cover loosely with plastic wrap and top with a kitchen towel. Leave to rise in a warm spot until doubled in size, about 30 minutes. Each dough ball with make a 10-inch diameter pizza.

PERFECT-EVERY-TIME PIZZA DOUGH AND PEPPERONI PIZZA
Homemade pizza should be a staple recipe for every cook, and it's really easy to make. Not only that, but it's a great recipe to get friends and family involved. I like making the dough and shaping it into balls ahead of time. You can use them right away or even freeze them for the future. This dough also works for making calzones, dinner rolls and flatbreads.

- Make the dough: In a large bowl, stir together the warm water, yeast, olive oil and salt until the salt dissolves. Let this mixture rest for about 10 to 20 minutes, until slightly foamy.
- Transfer the yeast and water mixture to the bowl of a stand mixer, making sure to scrape all the yeast into the bowl. Add the flours to the mixing bowl. Attach a dough hook and knead on medium speed for about 4 minutes. The mixture will come together into a ball that pulls away from the sides.
- Transfer the dough ball to a clean area to knead. Flour the station and knead well for about 2 minutes. Cut the ball in half and shape each into round balls. Place each ball in a lightly oiled bowl, cover with plastic and let rise in the fridge overnight. This overnight fermentation will give the dough a pleasant sourness. You can do this on the counter in an hour or two, but you won't have the same flavor from a slow rise.
- Make the pizza: Place a pizza steel or stone on the middle rack of the oven and preheat to its highest setting. Let the oven heat up for at least 45 minutes.
- Dust the surface of a pizza peel or the back of a baking sheet with flour or cornmeal. Stretch one ball of dough out into a 12-inch (30.5-cm) round and place on the peel or baking sheet. Place half the sauce in the center of the stretched dough and spread it out evenly with a spoon. You want to cover all but 1/2 inch (1.3 cm) of the edge.
- Drizzle the pizza with a tiny bit of olive oil. Rain half the mozzarella over the pizza. Place half the pepperoni on the pizza in an even pattern. Sprinkle with half the Parmesan and half the dried oregano.
- Slide the pizza onto the heated steel or stone in the oven. Bake until the crust is golden brown and the cheese is bubbling, 4 to 8 minutes. Remove from the heat and let rest for 2 to 5 minutes before slicing and serving. Meanwhile, repeat with the remaining dough ball and pizza ingredients to make a second pizza.
- Heat the olive oil in a deep skillet over medium-high heat. When the temperature gets to about 375 degrees F (190 degrees C), stir in the garlic and the anchovies and sizzle for about 30 seconds.
- Pour in the tomatoes, bring to a simmer and cook for about 10 minutes, until the sauce reduces and thickens slightly. Lower the heat if the sauce starts to boil. Stir in the oregano, salt, pepper and sugar, if using, and cook for an additional minute. Remove the sauce from the heat and use immediately or store in airtight containers or even resealable plastic bags in the refrigerator or freezer until ready to use.
PIZZA BALLS
Sausage pizza balls make a great appetizer or snack. They're like whole pizzas that can be popped into your mouth in a single bite! Omit the green bell peppers and onions, if desired.

- Preheat oven to 400 degrees F (200 degrees C). Lightly grease a large baking sheet.
- In a medium bowl, mix together Italian sausage, baking mix, green bell pepper, yellow onion, mozzarella cheese and pizza sauce. Gradually stir in water until the mixture is a workable consistency. Roll into 1 inch balls.
