PIZZA MEATLOAF CUPS
These are part of my OAMC rotation. My kids love these. I normally double this recipe as they go fast at my house.

Steps:
- In a bowl, combine the egg, pizza sauce, bread crumbs and Italian seasoning.
- Fold beef into mixture and mix well.
- Divide meat mixture into 12 greased muffin cups.
- Press mixture into bottom and up the sides.
- Fill center with cheese.
- Bake at 375°F for 15-18 minutes or until meat is no longer pink.
- Serve immediately with additional pizza sauce and cheese if desired.
- Or cool, place in freezer bags and freeze for up to 3 months.
- To use frozen pizza cups:.
- Thaw in the refrigerator for 24 hours.
- Heat in microwave on high for 2-3 minutes or until heated through.
- Top with additional pizza sauce and cheese if desired.

Chewy, yeasty, yummy and fast! Instructions included for whole wheat dough and freezing for a make ahead meal too! Cooking time does not reflect time for toppings!

Steps:
- Mix flour and salt together in a large bowl.
- Dissolve yeast in water and add to bowl.
- Cover and let rest for 5 minutes.
- Sprinkle cornmeal on a lightly oiled or sprayed 12"-14" pizza pan or stone.
- Place dough in middle of pan and using oiled hands pat out dough toward the edges.
- In a hurry? Add sauce and toppings as desired and bake at 350 degrees until done- about 25 minutes.
- OR for best results.
- Bake crust for 5 minutes at 350 degrees. Remove from oven and top with favorite toppings. Return to oven and cook until cheese is browned and bubbly.
- For premade crust-Bake at 350 until just done in center. Cool completely. Wrap well and freeze.
- NOTE: For thinner crust pizza divide in half and carefully work dough into rounds as thick or thin as you choose following same directions.
- For Wheat Crust: DECREASE white flour to 1 cup and ADD 1 cup whole wheat flour PLUS 1/2 tsp sugar. Follow directions listed above.

PIZZA LOAF
Steps:
- Preheat the oven to 250 degrees F (convection) or 275 degrees F (conventional).
- Blend pork, beef, cream, ketchup, breadcrumbs, ice water, salt, lemon juice, ground mustard, dehydrated onion, smoked paprika, white pepper, sugar, garlic powder and eggs in a food processor until well blended.
- Turn out into a bowl and add the Cheddar, Swiss cheese, olives, peppers and tomatoes (or add your favorite pizza toppings like salami, pepperoni, mushrooms...).
- Pack into a 9-by-5-by-3-inch loaf pan.
- Bake until internal temperature reads 160 degrees F, about 2 hours.
FRENCH BREAD PIZZAS- OAMC
Quick and easy. I have the basics for the toppings listed here- add your favorites. Serving size is a guess.

- Assemble pizzas by spreading on 1 T. sauce, them top each bread slice with 1/4 cup cheese.
- Wrap each pizza individually in plastic wrap and freeze.
- To serve: Place frozen pizza on a cookie sheet and bake at 350 for about 15 minutes or until cheese is melted.

MINI PIZZA LOAVES
I wanted pizza and meatloaf, and this is what I came up with. If you like, you can serve with a side of spaghetti, salad and a loaf of crusty bread. You can add more shredded mozzarella, when you add sauce.

Steps:
- Pre-heat oven to 350°F.
- With spray, lightly coat the inside of a 2-quart baking dish.
- In a large bowl, mix together all ingredients except pizza sauce and cheese.
- Separate meat mixture into 4 equal parts.
- Pat into rectangles of equal size.
- Lay cheese sticks in middle of rectangles.
- Wrap meat around cheese, forming a roll.
- Place 1/2 inch apart in prepared dish.
- Bake for 20 minutes.
- Drain if needed.
- Some of the cheese may come out, but that's o.k.
- Pour 1/4 cup of sauce over each roll.
- Return to oven, until sauce is heated through.

PEPPERONI PIZZA LOAF
This savory stromboli starts with frozen bread dough, so it comes together in practically no time. The golden loaf is stuffed with cheese, pepperoni, mushrooms, peppers and olives. - Preheat oven to 350°. On a greased baking sheet, roll out dough into a 15x10-in. rectangle. In a small bowl, combine the egg yolks, Parmesan cheese, oil, parsley, oregano, garlic powder and pepper. Brush over the dough. , Sprinkle with the pepperoni, mozzarella cheese, mushrooms, pepper rings, green pepper and olives. Roll up, jelly-roll style, starting with a long side; pinch seam to seal and tuck ends under., Position loaf with seam side down; brush with egg whites. Do not let rise. Bake until golden brown and dough is cooked through, 35-40 minutes. Warm the pizza sauce; serve with sliced loaf., Freeze option: Freeze cooled unsliced pizza loaf in heavy-duty foil. To use, remove from freezer 30 minutes before reheating. Remove from foil and reheat loaf on a greased baking sheet in a preheated 325° oven until heated through. Serve as directed.

FROZEN PERSONAL PIZZAS - OAMC
This is my stock recipe for my personal pan sized pizzas which are about 6-7 inches in diameter. Each batch of dough makes 4 pizzas. The crust on these is crunchy, we don't like the thick pan style pizza here. Also, the thicker crusts don't bake up as well because the centers just don't heat as fast due to density. I make these 3 styles, Cheese, Pepperoni and 3 meat (pepperoni, Italian sausage and bacon crumbles which I buy at Sam's Club prepackaged). I think you'll like these, I get tons of orders for them. OH BUY SOME 8" CARDBOARD CAKE ROUNDS (available at most craft stores, and Walmart in the craft dept.) The pizzas need a hard surface to freeze on. So much better than store bought, you'll never go back.

- Dissolve yeast and sugar in hot water, set aside and let sit for 8 minutes.
- In a large bowl mix flour and salt.
- Pour yeast mixture over flour mixture and mix well with a heavy wooden spoon.
- Turn out onto a floured surface, knead being careful to not add too much additional flour.
- After the dough starts to really pull together work in enough olive oil to get a good elastic dough that is easy to work.
- Work in the garlic, herbs and red pepper.
- Knead for about 2 minutes more.
- Divide into four equal parts, using a rolling pin to roll out into 6-7" circles, leave an edge or a crust around the edges so your toppings won't slide off.
- Sprinkle a pizza pan with cornmeal, place 2 pizza dough rounds on the pan and bake at 500 degrees for 5 minutes.
- Repeat with other 2 rounds.
- Allow to cool on the counter, for about 10 minutes.
- Top with pizza sauce and cheese. Ending with the herbs and pepper on the very top.
- Place on cardboard rounds and wrap tightly with plastic wrap.
- To bake after freezing, bake at 400 degrees for 12-15 minutes or until cheese is melted and bubbly.

PEPPERY PIZZA LOAVES

- Preheat oven to 350°. In a large skillet, cook beef over medium heat until no longer pink; drain. Stir in garlic powder and salt. , Place each bread half on a large piece of heavy-duty foil. Spread with cheese sauce. Top with beef mixture, mushrooms, onions and jalapenos. Drizzle with tomato sauce. Top with Parmesan and mozzarella cheeses. , Bake 10-15 minutes or until golden brown. Serve warm. Freeze option: Wrap and freeze loaves. To use, unwrap loaves and thaw on baking sheets in the refrigerator. Bake at 350° for 18 minutes or until cheese is melted. May be frozen for up to 3 months.
