PIZZA MARINARA WITH TUNA AND CAPERS

This pizza tastes like Southern Italy. The hot red pepper flakes are especially nice, but don't overdo it. Just a light sprinkle will give the pizza a little heat.

Steps:

  • Place a pizza stone, if you have one, on the middle rack of the oven. Preheat the oven to 450°.
  • If using drained canned tomatoes, season with half the garlic and salt to taste.
  • Break up the tuna in a bowl with a fork and add the remaining garlic and half the thyme and rosemary.
  • Spread the tomatoes or tomato sauce over the pizza. Distribute the tuna over the tomato sauce. Sprinkle on the remaining thyme and rosemary, the pepper flakes, capers, and strips of sweet red pepper. Drizzle on the olive oil.
  • Place the pizza pan on the stone in the hot oven. Bake 10 to 15 minutes, until the crust is brown. Remove from the heat, cut into wedges (I use kitchen scissors for this), and serve.

1 (14-ounce) can tomatoes, finely chopped and drained in a strainer for 1 hour, or 3/4 cup fresh tomato sauce (page 000)
2 garlic cloves, minced (1 if using fresh tomato sauce, which is already seasoned)
Salt to taste
1 can olive oil-packed light (not albacore) tuna
1 12- to 14-inch pizza crust
1 teaspoon thyme leaves, chopped
1 teaspoon minced fresh rosemary
Hot red pepper flakes
1 tablespoon capers, drained and rinsed thoroughly with cold water
1/2 sweet red pepper, cut in thin strips
1 tablespoon extra virgin olive oil

TUNA WITH CAPERS, OLIVES AND LEMON

This is not your mother's mayonnaise-laden tuna salad, but it's just as easy to prepare. Here's what you do: stir together some canned tuna, garlic, lemon juice, red onion, black olives, capers and fresh parsley, then spread it on buttered toast. Top it off with a round of ripe tomato or slivers of avocado and another slice of toast. That's it. If you want to make it into a dip, toss the mixture into a food processor with a few tablespoons of softened butter and a bit more olive oil. Purée until smooth and creamy and serve with carrots, fennel, bell pepper and seeded crackers. If you have a tin of sardines taunting you from inside your cabinet, we bet this recipe would work equally well with those.

Steps:

  • In a large bowl, mash garlic with the back of a spoon. Whisk in the lemon juice and 5 tablespoons of olive oil. Combine with the tuna, onion, olives, capers, herbs and salt to taste.
  • Serve on buttered toast for sandwiches, or make into a dip: Pulse the tuna salad and butter in a food processor until it is creamy. With the motor of the processor running, slowly add the additional 4 tablespoons oil. Taste and add more salt or lemon juice if needed. Serve with cut vegetables (fennel and bell peppers are nice) and crackers.

  • Add the all purpose flour to a bowl. Add the yeast and salt, mix well. Gradually add the warm water and olive oil. Mix the dough with clean hands. Knead the dough for 5 min until it's not sticky anymore. Form it into a ball. Cover with a cloth and let it 'prove' at room warm temperature until doubled in size (approx 30 min).
  • Meanwhile, in a bowl, combine the tomato passata, olive oil, garlic paste, oregano, brown sugar and salt. Set aside.
  • Preheat the oven to 220°C/200°C fan. Drain the tuna. Peel and finely slice the shallots. Drain the mozzarella.
  • Once doubled in size, using a rolling pin, roll the dough out into an even layer on a baking tray (tip: place a wet piece of kitchen paper under the baking tray, so that it doesn't slide). Let the dough rest for 5 min. (If you're cooking for 3-4 people, divide the dough in two and use two baking trays.)
