CHICAGO STYLE STUFFED PIZZA
For this tasty Chicago-style stuffed pizza, a deep-dish pizza is stuffed with cheese, sausage, pepperoni, onions and green pepper. It's excellent!

- To Make Dough: In a small bowl, dissolve sugar in 1 cup warm water; in a separate small bowl combine the yeast, 1/2 cup flour, and 1/2 cup warm water. Mix together and let rest in bowl for about 20 minutes, until foamy.
- Meanwhile, in a medium bowl mix together remaining 2 1/2 cups flour with cornmeal and salt; remove half of this mixture from bowl and stir 1 cup sugar water into bowl. When well mixed, return second half of flour/cornmeal mixture to bowl and mix all together; then stir in yeast mixture. Knead dough on a lightly floured surface until smooth and elastic, about 8 to 12 minutes. Place dough in a lightly oiled bowl and cover with plastic wrap. Let rise until doubled in volume.
- Preheat oven to 450 degrees F (230 degrees C). To Make Stuffing: In a large bowl combine the sausage, mozzarella cheese, Parmesan cheese, pepperoni, onion, bell pepper, oregano and garlic. Mix well.
- Press half of the dough in the bottom and up the sides of a lightly greased deep dish pan. Bake crust in preheated oven for 4 minutes, then add the stuffing mixture to the bottom crust and cover with top crust; seal edges together with fingers, and trim excess. Slit top crust to allow steam to vent during baking; top with tomato sauce.
- Bake on lower rack at 450 degrees F (230 degrees C) for 45 minutes, or until crust is golden brown. Remove from oven and allow to cool for 5 minutes, then cut and serve.

STUFFED PIZZA CRUST

- Preheat the oven to 475 degrees F.
- Roll and stretch out the risen dough on a floured work surface into a rope about 31 inches long. Press a rolling pin into the dough to create a trench and roll it to a rectangle about 3 inches wide.
- Keeping a 1/2-inch border on each long side of the dough, smear the remaining dough with the olive oil and sprinkle with salt. Spread the surface with a nice thin layer of the Arrabbiata Sauce, then sprinkle with the Parmesan, mozzarella and pepperoni. Arrange the string cheese pieces on top in a double line. Fold the long sides of the dough up over the center (over the string cheese) and pinch the edges together well so there's no leakage. Bring the ends together to form a circle.
- Drizzle a baking sheet with olive oil. Carefully transfer the dough circle to the prepared baking sheet, flipping it over before putting it on the sheet so the seam side is down. Brush the egg wash over the surface of the dough. Bake until the edges of the crust are golden brown and the cheese is melted and bubbly, about 15 minutes. Transfer to a board to rest for 10 minutes before cutting.
- Arrange the tomato slices and basil leaves in concentric circles in the middle of the pizza crust ring and serve with a dish of the remaining Arrabbiata Sauce on the side for dipping.
- Heat a pan over medium-high heat until hot and add the olive oil. Throw in the red pepper flakes and onions, give them a stir and cook until softened, 2 to 3 minutes. Add the garlic and cook for 30 seconds. Add the wine, whisking to deglaze the bottom of the pan. Cook until the liquid reduces by half. Add the crushed tomatoes and Italian seasoning and stir to combine. Add a pinch of sugar and some salt. Bring to a simmer, reduce the heat to low and simmer for 30 minutes.

- Position an oven rack in the top third of the oven and preheat to 400 degrees F. Coat a 9-by-13-inch baking dish with cooking spray.
- Lay a chicken breast on a cutting board with the tapered end pointing at you. Using a sharp knife held horizontally to your work surface, begin slicing the chicken breast in half, starting at the thicker end of the breast and slowly working towards you, leaving an outer edge connected so you can open it like a book. Butterfly all the breasts in this manner and set in the fridge until ready to roll.
- Cut six 1/4-inch-thick slices from the mozzarella, then finely chop the rest.
- To build the pizza rolls: Open the butterflied chicken breasts so they lay flat on your cutting board. Sprinkle the chicken evenly with salt and pepper. Top with some spinach leaves, sausage, sun-dried tomatoes and chopped mozzarella. Roll the chicken around the filling and tuck into itself so that the seam is facing down. Place the rolled chicken in the prepared baking dish, seam-side down. Sprinkle with salt and pepper. Repeat with the remaining chicken and fillings.
- Bake the chicken until the internal temperature reaches 165 degrees F, 20 to 25 minutes. Meanwhile, heat up the pizza sauce. About 3 minutes before the chicken is done, top each piece with a slice of mozzarella.
- Spoon the warm pizza sauce over the chicken and garnish with the Parmesan and basil.

- Preheat the oven to 350 degrees F (175 degrees C). Line a baking sheet with foil.
- Cook sausage, 1/2 cup pepperoni, onion, and garlic in a large skillet over medium heat until sausage is no longer pink, 5 to 6 minutes. Add cream cheese, pizza sauce, and oregano; cook and stir until cream cheese has melted. Stir in Parmesan cheese and remove from the heat.

MINI STUFFED PIZZA BALLS
I have to share this. I found this just searching one night months ago and not sure if this was the exact site, but it is the same recipe and they are just WAY too good. They are not hard, inexpensive and just a great appetizer. This is great for a dinner party, or just family or even a potluck. How about for Monday Night Football? - Prepare all your fillings -- I just make sure everything is diced fine.
- Pizza -- On a floured counter top or you can use corn meal roll out the dough in a large rectangle, about 12"x10". Then cut in 24 squares. Top each square with some of the filling and some of the cheese and then just pick up each square and enclose the dough around the filling and roll lightly into a ball.
- Baking -- place the pizza balls seam side down in a pie dish sprayed well with pam. Don't worry about them being right next to one another. When they are finished, you can pull them about like "cinnimon rolls." I think I got 12 in each pie plate.
- Topping -- Mix the olive oil with the garlic and dried seasoning and brush over the pizza balls and then top with a light dusting of the parmesan cheese.
- Bake -- 15-20 minutes at 400 degrees. I just follow the directions for my pizza dough, usually 4,00 for about 15-20 minutes.
- They will be golden brown, crusty and just serve with marinara. They are small bite size tear away pizza balls which are just great. And like I said, fillings are whatever you like. I like pepperoni, onion, green pepper and mozzarella, but you can use anything, ham mushroom and swiss would be great, sausage, onion, sundried tomatoes, you name it. Just make sure the filling are already pre cooked.
- Marinara -- Heat up the marinara in a small bowl just in the microwave and serve with the pizza.

- Dissolve yeast in warm water.
- In another bowl,add salt and oil to flour.
- Add yeasty water and mix.
- Let rise for 2 hours then punch down dough.

- For the crust: Make one day prior to baking. Combine warm water, sugar, and yeast in a small bowl.
- Stir until combined.
- Let mixture sit for 5 minutes, until foam begins to build on surface.
- In a large bowl sift flour and salt and make a deep depression in the center of the mixture.
- Add oil and yeast-water mixture to the depression and combine using a fork until you can use your hands.
- Dust a clean flat surface with flour and kneed the dough until the dough has a smooth consistent texture. This should take about 1 minutes.
- Rub a light coating of oil on dough and put in air-tight container and store in warm place for 2 hours, until it doubles in size.
- Punch down dough, put back in air-tight container and store in refrigerator for 24 hours. (if you do not have that time you can use the dough now).
- When ready to use roll out to 18 inches.
- Place dough on pan and make a ring around the edge with string cheese.
- Moisten the outering with water and fold over the dough to cover cheese and score the center of dough with a fork.
- Finally, lightly brush the dough with olive oil.
- For the sauce: Combine tomato sauce, water, sugar, lemon juice, and spices in a sauce pan over medium heat.
- Once it starts to bubble, drop heat down and simmer for 30-60 minutes until desired thickness is reached (this makes sauce for two pies).
- Assembly: Heat oven to 475°F.
- Spread 1 cup of pizza sauce to the edges of the pizza crust.
- Add 1 1/2 cups of shredded cheese and toppings.
- Bake for 12 to 16 minutes.
