SAUERKRAUT WITH POLISH SAUSAGE

This is our favorite sausage and sauerkraut dish ever. It's very filling and smells wonderful while it's cooking. From the Orbit Restaurant (Polish) in Chicago.

Sauerkraut With Polish Sausage image

Steps:

  • Preheat oven to 300ºF.
  • Place bacon, onion and carrot in heavy large ovenproof Dutch oven over medium-high heat.
  • Saute until onion is tender but not brown, about 5 minutes.
  • Squeeze as much liquid as possible from sauerkraut.
  • Add sauerkraut to Dutch oven.
  • Add wine, stock, caraway seeds and juniper berries.
  • Bring to simmer.
  • Cover tightly, place in oven and bake 1 hour.
  • Add kielbasa to Dutch oven, pushing into sauerkraut.
  • Cover and bake 1 hour.
  • Season to taste with salt and pepper.
  • (Can be prepared 1 day ahead. Cover and refrigerate. Rewarm over medium heat, stirring frequently).

6 slices smoked bacon, 2-inch wide strips
1 large onion, sliced
1 carrot, chopped
2 lbs sauerkraut, rinsed and drained
2 cups dry white wine
1 1/2 cups chicken stock
1 tablespoon caraway seed
4 juniper berries or 1 tablespoon gin
1 1/2 lbs kielbasa, 3-inch lengths

Steps:

  • Put the butter into a pan and heat, then add the onions and pepper and saute about 5 minutes.
  • Add tomato paste.
  • Add sauerkraut an wine.
  • Cover pan and simmer for 20-25 minutes.
  • Stir now and then.
  • Add sugar, pepper, salt, sour cream and creme fraiche.
  • Stir well.
  • In a 9x13-inch dish layer noodles and sauerkraut.
  • Repeat layers, until the last layer= sauerkraut.
  • Put layer of cheese on top of sauce.
  • Bake at 350 degrees for about 30-40 minutes.

Polish Style Lasagna image

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • Cook lasagna noodles according to package directions.
  • Drain, pat dry and interleave in a damp towel to keep moist OR spray each noodle with cooking spray OR lightly apply some oil.
  • In a separate large skillet over medium heat, combine the onions with the butter and saute for 5 minutes.
  • Prepare the instant mashed potatoes according to package directions, but omit the milk.
  • Stir in the cream cheese until well blended.
  • Place 3 noodles in the bottom of a lightly greased 9x13-inch baking dish. Spread 1/2 the potato mixture over the noodles in the dish.
  • Top this with 3 more noodles, followed by the other 1/2 of the potato mixture.
  • Finish by topping with the remaining 3 noodles, then top those with sauteed onions.
  • Bake at 350 degrees F (175 degrees C) for 20 minutes, or until bubbly. Allow to cool for 5 minutes before cutting.

Steps:

  • Fry bacon until just about crisp.
  • Place on a paper towel to drain fat.
  • Discard fat from frying pan except for about 1 tablespoon.
  • Chop onion into 1 inch pieces.
  • Place in pan and saute until translucent.
  • Place on same paper towel to drain fat.
  • In a large pot, place sauerkraut,1 or 2 cans of water, bacon and onion.
  • Cook sauerkraut at least one half hour.
  • Add salt and pepper to taste.
  • Serve.
  • Tastes better the next day.
  • Optional- You can cook a link (1 pound) of fresh Polish sausage for added flavor and use the meat as part of your meal.

  • Cook sausages over medium heat in 10 inch skillet until brown.
  • Remove.
  • Cook onion in the same skillet until soft.
  • Stir in sauerkraut; cover and simmer 3 minutes.

Steps:

  • In a large saucepan, melt butter. Stir in the flour, bouillon, onion salt, 1 teaspoon pepper and white pepper if desired until smooth. Gradually stir in milk and broth. Bring to a boil; cook and stir for 2 minutes or until thickened. Add sausage; heat through. Combine the eggs, cottage cheese and remaining pepper. , Spread 1 cup sausage mixture in a greased 13x9-in. baking dish. Layer with three noodles, a third of the sausage mixture, half of the cottage cheese mixture and sauerkraut and 3/4 cup Monterey Jack. Repeat layers. Top with the remaining noodles and sausage mixture (dish will be full). , Cover and bake at 350° for 50-60 minutes or until a thermometer reads 160°. Sprinkle with remaining Monterey Jack. Bake 5 minutes longer or until cheese is melted. Let stand 15 minutes before cutting.
