Cinnamon and Chocolate Banana Bread image

Steps:

  • For the banana bread: Preheat the oven to 350 degrees F. Line a 12-count muffin tin with cupcake liners.
  • Sift the flour, baking soda and salt into a medium bowl. Whisk the vanilla and eggs together in a liquid measuring cup with a spout. Set aside.
  • In a stand mixer fitted with the paddle attachment or with an electric hand-held mixer, cream the sugar and butter until light and fluffy. Gradually pour in the egg mixture while beating; beat until incorporated. Mix in the bananas (the batter will appear curdled, but don't worry), then remove the bowl from the mixer. With a rubber spatula, fold in the flour mixture until just incorporated. Fold in the walnuts, then the Mexican chocolate.
  • For the cinnamon crumble topping: In a small bowl, mix together the flour, brown sugar and cinnamon. Cut in the butter with 2 knives until uniform.
  • Fill the cups of the muffin tin about halfway with the batter. Spoon the cinnamon crumble topping over the muffins, pressing it lightly into the batter. Bake until the topping is golden and a toothpick inserted in the center of the muffins comes out clean, 20 to 25 minutes. Let cool before serving. These muffins are great with a smear of butter.

  • Preheat oven to 350 degrees. Grease a 8 ½ x 4 ½ inch loaf pan.
  • Using a hand mixer cream butter, sugar and peanut butter in a bowl. Add eggs one at a time and mix.
  • In a separate bowl whisk together the flour, cocoa powder, baking soda, salt and cinnamon. Add the mashed banana to the creamed sugar and beat until incorporated. Add the dry ingredients and mix until just combined. Stir in half the chocolate chips by hand and pour the batter in the loaf pan. Sprinkle the remaining chocolate chips on top.
  • Bake for 45-50 minutes until a toothpick inserted into the cake comes out clean. Once cooled, remove banana bread from loaf pan. Drizzle with melted peanut butter. Slice and serve.

Steps:

  • Cream together butter and sugar with a hand mixer. Add eggs one at a time beating well. Add vanilla and bananas and mix.
  • Add all remaining ingredients except for the last 3 for the topping. Mix well.
  • In a separate bowl, mix cinnamon and brown sugar together.
  • Pour half of the batter into a greased bundt pan. Top with half of the cinnamon sugar mix and half of the chocolate chips.
  • Pour remaining half of the batter into the bundt pan and top with the remaining half of the cinnamon sugar mix and the remaining chocolate chips.
  • Bake at 350 degrees for 1 hour 15 minutes or until a skewer comes out clean. Enjoy!

Steps:

  • Grease the bottom and 1/2 inch up the sides of two loaf pans; set aside.
  • In a medium mixing bowl stir together the eggs, bananas, sugar, peanut butter, and milk.
  • Stir in the flour just until moistened (batter should be lumpy).
  • Fold in chocolate pieces and peanuts or pecans.
  • Spoon batter into the prepared pans.
  • Bake in a 350°F oven about 45 minutes or until a wooden toothpick inserted near the center comes out clean.

Chocolate Chunk Banana Bread image

Steps:

  • Melt the chocolate in a double boiler, stirring occasionally with a rubber spatula. (Alternatively, use a heatproof bowl set over a pot of simmering water, making sure the bottom of the bowl is not touching the water.) Flip a sheet pan upside-down, spray it with nonstick baking spray, and line it with parchment paper. Using an offset spatula, spread the melted chocolate in an even layer over the parchment paper. Place in the freezer to set, 30 minutes.
  • In a small bowl, combine water and flax meal. Set aside to thicken, 30 minutes and up to overnight.
  • Preheat oven to 350 F. Combine dry ingredients in a mixing bowl: both flours, baking powder, baking soda, salt, and cinnamon. Set aside.
  • Put the bananas and vanilla extract in a plastic deli container, then purée with an immersion blender, 30 seconds. Add the puréed banana to a large mixing bowl along with canola oil, apple cider (or orange juice), the flax mixture, and the sugar. Stir to combine. Add the dry ingredients and stir just to combine, until there's no visible flour. Stir in the chopped pecans.
  • Pull chocolate from the freezer and break it up into shards. Using a rubber spatula, fold the shards into the batter. The folding motion will further break up the chocolate, which is okay.
  • Spray a standard loaf pan with nonstick baking spray. Scrape batter into the pan and smooth out the top. Tap the pan on a hard surface to settle the batter. In a small bowl, mix the sugar and cinnamon and sprinkle on top of the batter. Bake 1 hour.
  • Banana bread is done when a cake tester comes out clean. Let cool completely in the pan, then run a knife around the edge, invert onto a plate, slice, and serve.

  • Preheat the oven to 350 degrees F. Grease a 9-by-5-inch nonstick loaf pan with baking spray or vegetable oil and set aside.
  • Combine the bananas, oil, sugar, vanilla and milk in the bowl of a stand mixer fitted with the paddle attachment. Beat until smooth. Whisk together the flour, cocoa powder, baking powder, baking soda and salt in a medium bowl. Add the dry ingredients to the wet and mix until smooth.   • Let cool in the pan for 10 minutes, and then run a knife around the edges to loosen and remove from the pan. Transfer to a wire rack to cool completely.
