EGG-IN-A-HOLE SANDWICH

- In a large cast-iron skillet over medium heat, cook the bacon until crisp, 12 to 14 minutes. Remove to a plate and set aside. Drain the grease from the skillet but do not clean. When cool enough to handle, tear the bacon slices in half.
- Meanwhile, mix the mayonnaise and hot sauce to taste in a small bowl. Season with salt and pepper.
- Using a biscuit cutter or the rim of a glass, cut a hole in the center of each Texas toast slice.
- Melt 2 tablespoons of the butter in the bacon skillet and add 2 of the Texas toast slices. Toast the bread slightly, 1 to 2 minutes. Crack an egg into the hole in each piece of toast and sprinkle the eggs with salt and pepper. Cook the eggs until set on the bottom, 2 to 3 minutes. Using a spatula, carefully flip the toast with the egg, season the other side and spread with the mayonnaise mixture. Top each with a slice of cheese to slightly melt and cook until the egg is the desired doneness. Remove to a cutting board and repeat with the remaining butter, toast, eggs, mayo mixture and cheese.
- To build the sandwiches, divide the bacon between 2 of the egg-in-a-hole toast pieces, on top of the cheese. Top each with some tomato slices and lettuce, then top with a remaining egg-in-a-hole toast piece. Serve immediately or wrap in foil to keep warm.
POP'S TEXAS FRIED EGG SANDWICH
This is my dad's fried egg sandwich "recipe". He used to make these for us (all 4 kids and my mom) on Sunday nights after church. I recently introduced my DH to these sandwiches and he has declared them "The BEST" sandwich on earth. ;) *Note, you can use whatever type of lunch meat you have on hand, or bacon, or sausage, etc. It's a personal preference kind of thing.* These directions are for 1 sandwich. You can, of course, increase the number as needed. I hope you love these as much as we do. I lovingly refer to these as a heart attack on bread. Definitely not for those watching their cholesterol and calories.

- In a skillet melt the butter over medium heat.
- Crack the egg(s) and add to the pan and cook to desired doneness. I usually break the yolk and flip it over so it isn't too runny.
- Toast the bread and put mayonnaise or Miracle Whip on the bread.
- Add salt and pepper to taste on the egg and the tomato slices.
- Add egg onto toast.
- Add cheese slice onto egg while the egg is still hot.
- After you remove the egg from the pan, put the meat into the pan to heat it up / pan fry it to your liking. I keep mine in the skillet until it's just a smidge brown. I do fry it on both sides.
- After the meat is done, put it on top of the cheese.
- Add slice of onion.
- Add slice of tomato.
- Put the other piece of bread on top.
- Serve warm.
- Grab a napkin, because these are MESSY!

TEXAS TOAST BRISKET CHEESY EGG SANDWICH
Steps:
- For the brisket: Put the brisket and broth in a medium high-sided skillet and heat gently over medium heat just until warmed through, about 10 minutes.
- For the Texas toast: Heat a cast-iron griddle pan over medium-high heat. Add 4 tablespoons of the butter and melt. Put the bread on the griddle and toast until golden brown, 2 to 3 minutes. Flip and cook the second side until golden brown, another 2 to 3 minutes, adding more butter if necessary.
- For the cheesy eggs: Melt the butter in a large nonstick pan over medium heat until the foaming stops. Add the eggs and green onions and cook slowly, stirring, until soft mounds form, 3 to 4 minutes. Fold in the havarti and season with salt and pepper. Transfer to a plate to stop the cooking.
- Put the toast on a cutting board. Top each piece with several slices of brisket, some of the eggs and some chow-chow. Serve immediately.

- Place a small pan on a burner.
- Add the butter and heat on medium high heat. (Make sure not to heat the pan on high, or else the egg will turn rubbery.).
- After the butter has melted, crack the egg in the pan.
- Let sit for about a minute.
- Pop the yolk.
- Sprinkle with salt and pepper.
- When egg is set, flip over and cook other side.
- Cook egg to your liking.
- Meanwhile, spread mayonaise on bread and place cheese.

- Combine the ketchup and chipotle and spread on the inside of each piece of bread. Place the cheese between the bread at an angle so that the edges hangover the sides of the bread. Butter the outside of one bread slice with half the butter. Heat a skillet over medium heat. Press the sandwich on, buttered-side down. Press until the bread is golden brown and the cheese has started to melt. Butter the other side (which is facing up) with the remaining butter and flip. Cook until golden brown and the cheese is gooey, this should all take 3 to 4 minutes. Remove the sandwich from the heat and hold.
- Meanwhile, in a pan over medium heat, cook the bacon until barely crisp, about 5 minutes. Flip the bacon, pushing the two pieces next to each other to form a square. Crack the egg on top, cooking into the bacon. Continue cooking until the egg is set, about 5 minutes. Open up the sandwich (use a spoon to help pull apart the bread) and slide in the eggs and bacon. Close up, slice and enjoy.
BROCCOLI AND EGG SANDWICH
This was a specialty of my Grandma's. I remember when I was a kid she would sometimes make this for my mom to take for her lunch at work. Eventually Gram wound up sending about 6 sandwishes everytime because my mom's coworkers all wanted it when they smelled it. Grandma didn't measure anything, so these are estimates.

- Chop broccoli; heat in pan with olive oil, sprinkle with garlic powder and seasoned salt.
- Beat eggs, milk, salt and pepper. Pour eggs over broccoli and scramble together (do not overcook).

- Heat oil in fry pan over medium heat.
- Crack egg in pan trying not to break yolk.
- While egg is frying spread cheez whiz on one slice of bread and miracle whip on the other.
- Add the hot sauce to the miracle whip slice and spread.
- Flip egg when underside is starting to brown nicely.
- Poke yolk after a couple seconds so the yolk runs a little.
- Season with salt and pepper.
