SUNNY'S PORK KEBABS AND BAKED PINEAPPLE RICE

Steps:
- In a medium bowl, whisk together the pineapple juice, soy sauce, brown sugar, ginger, vegetable oil, gochujang and garlic. Pour into a large resealable plastic bag and add the pork, moving the bag around to ensure the marinade coats all of the pork. Seal the bag and refrigerate for 1 1/2 hours.
- After 1 1/2 hours, remove the bag with the meat from the refrigerator and let sit at room temperature for 30 minutes. If using wooden skewers, soak in water at this point.
- Heat a grill or grill pan to medium-high heat.
- Remove the pork from the marinade and discard the marinade. Thread 5 to 6 pork cubes on each skewer. Season the pork on all sides with a pinch of salt and a few grinds of black pepper. Grill and flip to cook on all sides until cooked through, 2 to 3 minutes on each side. Serve immediately with Sunny's Baked Pineapple Rice (or cover with aluminum foil until serving).
- Preheat the oven to 350 degrees F.
- Put the rice and pineapple in an 8-by-8-inch baking dish. In a medium pot on high heat, add the coconut milk, butter, salt, some black pepper and 1 cup water. Cook until the butter melts and the mixture is just below simmering. Pour over the rice and immediately cover tightly with aluminum foil. Bake until the rice is tender and the water is absorbed, 35 to 40 minutes.
- Add the almonds and scallions, fluff with a fork and serve warm.
SWEET AND SOUR PORK KEBABS
Really nice with tropical rice salad for a hot summer's dinner. Prep time includes overnight marinating.

- In a large bowl whisk together the balsamic vinegar, garlic, chili flakes and canola oil-add pork chunks, toss well, and if you have a freezer bag pour into that-remove as much of the air as you like and place in the fridge overnight-turnning a few times.
- At this point you can also freeze for later use.
- If using wooden skewers pre-soak 1 hour before using, and you will need 14.
- In a large bowl whisk together the ketchup, vinegar, brown sugar, soy, ginger, salt and sesame oil.
- Preheat your grill to medium high.
- Skewer the pork, pineapple, tomatoes and peppers, repeat until all skewers are done.
- brush skewers with the ketchup/soy sauce and place kebabs on grill, basting often and turning twice.
- Test one for pork doneness.
BARBECUED PORK KEBABS

- Whisk the sugar, soy sauce, onion, garlic and black pepper together in a large bowl. Add the pork and toss to coat. Cover and refrigerate at least 2 hours. Overnight is best if possible.
- Preheat an outdoor grill for high heat, and lightly oil the grate.
- Thread the pork onto the soaked skewers. Cook on the preheated grill until the pork is no longer pink in the center, 3 to 5 minutes per side.

This is a juicy dish and really easy to prepare. I have made these for years and they're still a huge favorite with family and friends. I serve them with mushroom rice and garlic bread. This is a sauceless recipe but the meat is so succulent you don't need it.

- Mix oil, soy sauce, and peanut butter together in a bowl until blended and creamy. Stir in spring onion, sesame seeds, garlic, red chile powder, salt, and pepper. Add pork to marinade; turn to coat.
- Marinate pork in the refrigerator for 2 to 4 hours.
- Preheat oven to 400 degrees F (200 degrees C). Line a rimmed baking sheet with aluminum foil.
- Thread pork, onion, mushrooms, red bell pepper, and zucchini onto skewers. Transfer to the baking sheet. Pour marinade on top.

PORK AND PINEAPPLE KEBABS WITH SWEET-AND-SOUR SAUCE

- In a large bowl whisk together the red-wine vinegar, the garlic paste, and the red pepper flakes, add the vegetable oil in a stream, whisking, and whisk the marinade until it is emulsified. Add the pork, stirring to coat it with the marinade, and let it marinate, covered and chilled, for at least 6 hours or overnight.
- In a bowl whisk together the ketchup, the distilled vinegar, the sugar, the soy sauce, the salt, and the sesame oil until the sugar is dissolved and reserve the sauce.
- Drain the pork, reserving the marinade, and thread it and the pineapple, alternating them, onto the skewers, using 4 pieces of pork and 3 pieces of pineapple on each skewer. Brush the kebabs with some of the reserved marinade and grill them on a rack set 5 to 6 inches over glowing coals, basting them for the first 10 minutes with the reserved marinade and turning them, for 20 to 25 minutes, or until the pork is just cooked through but still juicy. Brush the kebabs with the reserved sweet-and sour sauce and grill them, turning them, for 2 minutes more. (Discard any remaining marinade; do not serve it as an accompaniment.)
SOY-BASTED CHICKEN KEBABS WITH SESAME-CITRUS SPRINKLE
Soy adds saltiness along with a deep color to these skewers; the glaze would also be great on short ribs.

- Make the sesame-citrus sprinkle:
- Mix sesame seeds, chives, Aleppo-style pepper, and lemon zest in a small bowl to combine; season with salt.
- Make the chicken kebabs:
- Combine brown sugar, mirin, soy sauce, and vinegar in a small saucepan. Transfer 1/4 cup mixture to a large resealable plastic bag. Working one at a time, slice chicken thighs in half lengthwise. Add to bag with marinade and massage marinade into chicken. Chill at least 2 hours or up to 12 hours.
- Meanwhile, bring remaining marinade to a simmer over medium-high heat and cook until reduced by half and slightly thickened (just shy of syrupy), 8-10 minutes. Remove glaze from heat.
- Prepare a grill for medium-high, indirect heat (for a charcoal grill, bank coals on one side of grill; for a gas grill, leave one or two burners off). Oil grates. Thread chicken onto 6-8 skewers, folding and piling onto itself to form a compact shape. Season lightly with salt and grill over direct heat, turning every minute or so, until browned and beginning to char in spots, about 4 minutes. Move to cooler side of grill and continue to grill, basting lightly with glaze and turning every 30 seconds or so, until cooked through and coated with glaze, about 5 minutes longer. Serve chicken topped with sesame-citrus sprinkle.

- Glaze can be made 12 hours ahead. Let cool; cover and chill. Bring to room temperature before using.
SESAME PORK RICE
A quick light recipe that would be good any time. This one's from Cooking Light magazine and was published in the Detroit Free Press recently. Haven't had the chance to try it yet.

Steps:
- Cook rice as package directs, but omit salt.
- Drain well and set aside.
- Toss pork pieces with 1/2 tsp garlic and 1/2 tsp ginger in a medium bowl.
- In a large nonstick skillet heat 2 tsp sesame oil over medium-high heat.
- Add the pork and sauté 3 minutes or'til done.
- Remove from the skillet and keep warm.
- Heat the remaining 1 tsp sesame oil in the skillet.
- Add the remaining tsp of garlic and 1/2 tsp of ginger and sauté for 30 seconds.
- Add rice, soy sauce, hoisin sauce and vinegar and cook 2 minutes stirring constantly.
- Stir in the pork and cook 2 minutes or'til thoroughly heated.
- Sprinkle with green onions and sesame seeds.

- Heat grill to medium; lightly oil grates. Cook rice according to package instructions. Set aside.
- In a small bowl, whisk honey and 2 tablespoons pineapple juice; season with salt and pepper.
- Alternately thread pork and bell peppers onto skewers; season with salt and pepper. Grill, brushing occasionally with honey mixture, until pork is cooked through and peppers begin to char, 10 to 15 minutes.
