My mom came up with this recipe when I was a child. It is the ONLY way I will eat green onions.

Steps:
- Melt butter in a skillet, and mix in the soy sauce. Saute the green onions and garlic until lightly browned.
- Place the pork steaks in the skillet, cover, and cook 8 to 10 minutes on each side, Remove cover, and continue cooking 10 minutes, or to an internal temperature of 145 degrees F (63 degrees C).

PORK STEAK MAJOR
I happened upon a package of pork steaks at the market last week. Each steak weighed at least two pounds! I thought, "what wonderful little roasts"! So I treated them that way, with a major result! Hope you'll try it!

Steps:
- Place pork steak in roasting pan.
- I use a two quart glass pan, but whatever works for you.
- Mix together dry onion soup and warm water.
- Pour over pork steak.
- Cover meat with raw onion rings.
- Sprinkle onions lightly with salt and pepper.
- Seal pan with aluminum foil.
- Place in center of 375° F.
- oven.
- Bake for approximately one hour.
- I check the roast with a quick-read meat thermometer to make sure it's done.

PORK STEAKS WITH HOMEMADE BARBECUE SAUCE, TEXAS STYLE YUKON GOLD POTATO FRITES, AND GRILLED CHAYOTE
Steps:
- Heat olive oil in skillet. Add the salt pork and cook over medium heat until crispy. Remove the salt pork and set aside. Add in the onion and shallot and cook until translucent. Add in the garlic, ginger, and ancho powder and saute until fragrant, about 2 minutes. Add in the beer, cook 5 minutes. Add in all other ingredients except 1 cup of chicken broth. Simmer for 15 minutes. If the sauce seems too thick, thin with the reserved chicken broth. Crumble the salt pork into the sauce. Set aside and wait for pork to grill. Season pork steaks with salt, pepper. Place on a medium-high grill and sear, 5 to 6 minutes on each side. Remove the steaks and dip in homemade BBQ sauce. Place back on the grill for 2 to 3 minutes, turning and basting to let the sauce caramelize on the pork steaks. Remove and let sit for 5 minutes. Serve with Yukon Gold Frites and Grilled Chayote and Tomatoes.
- Yukon Gold Frites: Thinly slice potatoes lengthwise to form a traditional thin chip. Toss into a hot pot of good frying oil (canola or peanut). Fry until partially cooked. Remove from oil and let drain on a paper-towel covered plate. Sprinkle with a homemade Texas-style dry rub spice (sea salt, white pepper, celery salt, ground cumin, paprika, black pepper, garlic powder, chili powder, lemon zest, cayenne pepper and dry mustard). Toss chips on a hot grill and cook through until brown, crispy, with nice grill marks. Serve with Chipotle Aioli to dip.
- Grilled Chayote: Slice 1 to 2 chayote lengthwise like the potatoes. Brush each side with melted butter and season with salt and pepper. Cook on a medium-high grill turning frequently to make crisscross marks on both sides. When fork-tender, remove from grill and season again.
- Grilled Roma Tomatoes: Slice 2 Roma tomatoes in half; core the center to remove seeds and to make a pocket. Sprinkle with salt and pepper. Brush with olive oil. Fill pockets with pesto, about 2 tablespoons each, and sprinkle on some grated Parmesan. Grill tomatoes until tender but not falling apart, about 5 minutes if grill is very hot. Sprinkle with a bit more grated Parmesan, and serve.
- Whisk all ingredients together.

- Preheat grill to medium-low heat.
- Season the pork steaks on both sides with seasoned salt and seasoned pepper. In a large bowl, stir together the vinegar and water, and season with seasoned salt and seasoned pepper to taste.
- Lightly oil the grill grate. Place pork steaks on the grill. Baste steaks with the vinegar mixture on both sides during the first 15 minutes of grilling. Continue to cook steaks to desired doneness, 10 to 15 more minutes. Discard remaining vinegar mixture.

OVEN DELICIOUS PORK STEAKS
This recipe came from my aunt who is an awesome cook, just like my mom. It's a great way to prepare a cheaper cut of meat and still have something that's tasty and tender. My aunt's note on this is: "I dice my onion, tomato and bell pepper and use as much as I want. I also divide the sauce mixture evenly between the 4 steaks." Either way, it's delicious!

- Preheat oven to 350 degrees F (175 degrees C).
- Heat oil in a large heavy skillet over medium-high heat. Brown steaks for 3 to 5 minutes on each side. While browning, season both sides with onion powder, garlic powder, salt and pepper. Transfer steaks to a 9x13 inch casserole dish, and sprinkle with chopped onion and sliced mushrooms.
- In a small bowl, combine condensed mushroom soup, water, onion soup mix and Worcestershire sauce. Mix until smooth, and pour over steaks. Cover pan with aluminum foil.

SWISS PORK STEAK
I always have pork in the freezer. One day I was hungry for swiss steak and was out of beef, I fixed it with pork instead of beef. True comfort food served over mashed potatoes or rice yummmmm. We really like it..hope you do too!!

- Wash pork to remove bone crumbs. Pat and partially dry steaks with paper towel,but leave moist enough for flour mixture to adhere to meat.
- Combine salt,pepper and garlic powder with flour.
- Push steak into flour mixture with hands making sure to coat both sides well. Let sit while oil is heating in pan.
- Add oil to pan and brown steak on both sides,remove from pan when golden and let drain on paper towel.
- Add green pepper,onion and celery to pan and lightly brown.
- Add tomatoes,beef stock,worcestershire (and drained mushrooms if using) to skilet and boil for about three minutes.
- Reduce heat to a simmer and return pork steak to pan.
- Cook slow until meat is tender and broth has thickened. May be thickened with cornstarch and water if you like.
- Serve over mashed potatoes or rice.
- I also have made this for my picky eater by adding a can of cream of mushroom soup.

PORK STEAK AND ONIONS
This recipe sounds like a lot of work, but it just the old fashion method of braising. The meat is so tender, and the onions, are sweet in taste. A really large electric fry pan, works the best. I sometimes add sour cream to the liquid, the last 10 minutes or so, for an even richer taste.

- Season both sides of pork steaks with salt, pepper and garlic powder to taste.
- Spray electric fry pan or very large skillet with cooking spray.
- Heat to 375 degrees.
- Brown both sides of steak.
- When meat has been browned and starts to stick a bit, add two cups water.
- Cover.
- Cook for 15 minutes.
- Turn.
- Add water as it slowly cooks down.
- Always scraping up browned bits.
- Cook another 15 minutes, turning if necessary.
- Cover all the meat with onions.
- Add water again to keep level at 1/2 inch or so.
- Cook 15 minutes, turn meat, poke onions into liquid.
- Add more water if necessary.
- Keep cooking until onions are cooked all the way down, almost carmelized.
- Let liquid cook almost all the way down, again.
- Add just a cup of water.
- Scrap all bits and remove from pan.
- Serve with onions and juice on top.

When Snow's BBQ in Lexington was named best barbecue in Texas by _Texas Monthly_ magazine in June 2008, Tootsie Tomanetz became an instant star in the barbecue world. It's odd that her significant skill as a pitmaster was "discovered" only after more than thirty years of tending pits. As one of thee rare female pitmasters in Texas, she says some folks insist on calling her a chef because they don't feel comfortable applying the pitmaster moniker to a woman, but Tootsie is no doubt a master of the many pit types out behind Snow's. Even several years removed from the initial stardom, she still gets asked every Saturday morning to pose for photos. Always humble, this reluctant star says she is just a "plain old country girl" who has lived her entire life in either Lexington or Giddings, just seventeen miles away, and would just as soon keep a low profile. That's going to be tough if she keeps showing up at 2 a.m. every Saturday to cook some of Texas' best pork, and she has no plans to stop, even at age seventy-seven.

- MEAT: Boston butt sliced into steaks 2 to 3 inches thick
- RUB: Equal parts coarsely ground pepper and table salt. Apply rub at least a day before smoking.
- WOOD: Texas post oak cooked down to coals.
- PIT: Rectangular steel pit with a hinged steel lid.
- FIRE: Apply a thin even layer of hot coals onto bottom of cooker. Place meat on the grate after the lid gets warm.
- TIME: Cook the steaks over direct heat for about 6 hours. To hold the meat just let the fire die down after the 6-hour cooking time.
- IT'S DONE WHEN: A fork slides in easily
- REST THE MEAT: No need
- PRO TIP: Mop the meat a couple of times on either side with a mix of water, butter, onion, Worcestershire sauce, and dry mustard.
