  • Combine wine, lemon rind, and juice, tomato paste, oil, paprika, hot pepper sauce, salt, and garlic; pour over chicken, turning to coat.
  • Cover or bag and refrigerate for at least 4 hours or for up to 24 hours, turning occasionally.
  • Place chicken on greased grill over medium heat; skin side down for 10 minutes.
  • Turn and cook, brushing with marinade an additional 30-40 minutes or until juices run clear when chicken is pierced.

Steps:

  • Lightly coat the tomatoes with some of the olive oil and place on the grill over medium fire.
  • Grill, turning frequently , until the skin starts to blister and blacken. When the skin is splitting and blistered, remove from the heat.
  • Set aside until cool enough to handle and peel off the skins and stems.
  • Transfer the tomatoes to cutting board and coarsely chop. Transfer to a bowl, season with the garlic, salt, pepper and a splash of vinegar.
  • Serve as a side dish or spoon over toasted bread slices.

Steps:

  • Stir mayonnaise, feta cheese, and lemon zest together in a small bowl until well blended. Spread feta mixture evenly over bread slices.
  • Top 2 slices of the bread evenly with tomato slices and sprinkle with salt and pepper. Top tomatoes with remaining bread slices, feta-side down. Brush both sides of the sandwich evenly with olive oil.
