POTATO CHIP PASTA

We love potato chips. We use them in a variety of preparations, from stuffings to ice cream, so making the leap to pasta dough wasn't as crazy as it may sound. After all, potato chips go with almost anything. Think of all those dips. Although we originally tried to make this with actual potato chips, the dough was too greasy. Using toasted, ground potato flakes gives it that nutty flavor without the added fat. The potato flakes, sometimes labeled "instant mashed potatoes," are easily found in the supermarket. It doesn't take much effort to toast the flakes and grind them into flour, and the results will make you feel like a kid again. The dough can be cut into noodles or used to make ravioli. The potato chip pasta is delicious tossed with brown butter, parsley, and lemon, perhaps served alongside soft-shell crabs or sweet Maine lobster.

Potato Chip Pasta image

Steps:

  • Preheat the oven to 350°F (175°C).
  • Put the potato flakes on a baking sheet and bake for 20 minutes, or until they are a deep golden brown. Stir them once during baking to ensure even browning. Place the baking sheet on a wire rack and let the flakes cool completely, stirring them occasionally to speed the process, about 30 minutes. Pour the flakes into a blender and pulverize them into a fine powder.
  • Combine the potato powder, flour, and salt in a bowl and whisk together. In a separate bowl, whisk the eggs and yolks. Pour the eggs into the flour mixture and slowly mix them together, working from the center of the bowl outward. Once you have a cohesive dough, turn it out of the bowl and knead it on a lightly floured work surface, adding more flour as necessary until the dough is silky and dry. Wrap the dough in plastic and let it rest for at least 30 minutes. Alternatively, you can put it in a vacuum bag, seal it, and let it rest for 10 minutes before rolling out your pasta. (This will leave you with a moister dough than resting in plastic wrap.)
  • Unwrap the dough and cut it in quarters. Keep 3 pieces of the dough wrapped loosely in plastic while you work with the first piece. Lightly flour a work surface and, using a rolling pin, begin to roll out the dough. This process takes time. Dust the surface of the dough lightly with flour and continue to roll from the middle to the edges, turning the dough a quarter turn and flipping it over every couple of rolls. Continue to roll the dough until it is 1/8 inch (3 millimeters) thick and roughly 10 × 12 inches. Dust the dough with flour and fold down the top third of the dough. Dust the dough with flour again, and fold the bottom edge of the dough up over the third of dough you just folded down. Dust the dough with flour and, using a sharp knife, cut it lengthwise into ribbons 1/4 inch (6 millimeters) wide. Unfold each noodle, and dust with flour. Sprinkle a baking sheet with flour and loosely nest each batch of noodles on the pan in a single layer. Cover them with a kitchen towel and repeat with the remainder of the dough.
  • When all the dough is rolled, refrigerate the noodles until ready to use. If using within a few minutes, simply cover with a kitchen towel.
  • Alternatively, you can roll out the dough with a pasta maker following the manufacturer's instructions, using the cutter of your choice.
  • Bring a large pot of water to a boil. Generously salt the water, then add the noodles. Cook for 3 to 4 minutes.
  • Meanwhile, in a separate pot large enough to hold the noodles, melt the butter over medium heat. Drain the cooked noodles and put them in the pot with the butter. Coat the noodles evenly with the butter and season with salt and pepper to taste. Serve immediately.

FERRAN ADRIà'S POTATO CHIP OMELET

This recipe, adapted from the cookbook "The Family Meal: Home Cooking With Ferran Adrià" (Phaidon, 2011), is a study in simplicity. The chef of El Bulli, the famous Spanish restaurant, Mr. Adrià created an omelet reminiscent of a Spanish tortilla that comes together in minutes using only eggs, salted potato chips and olive oil. As with any recipe calling for just a few ingredients, quality truly matters here, so opt for the best potato chips, the finest olive oil and the freshest eggs. There's no need to season the dish with salt, Mr. Adrià advises, since the chips are already salted, but serving the omelet with salt and pepper adds nuance. If you like, add finely sliced chives, a handful of grated Manchego or perhaps a pinch of piment d'Espelette or paprika like a true tortilla Española.

Ferran Adrià's Potato Chip Omelet image

Steps:

  • Crack the eggs into a medium bowl and whisk vigorously until frothy and lightened in color, about 4 minutes. (If you have a balloon whisk, now is the time to use it: It will aerate better than a standard whisk, and should take half the time and effort. Either way, your arm will burn by the end of this, but a fluffy, puffy omelet will be your reward.)
  • Add 1 tablespoon oil to a 10-inch nonstick skillet and heat over medium.
  • Add the chips to the eggs. Using a plastic spatula, gently fold a few times to ensure chips are coated. Let the chips soak for 1 minute.
  • Pour the mixture into the skillet, using the spatula to spread the potatoes into an even layer, then to loosen the omelet from the sides of the pan.
  • After the bottom of the omelet is just about set - it should barely take on color but the top isn't completely set - 3 to 4 minutes, cover the omelet with an upside-down plate or a large, flat lid. Holding one hand flat against the plate and holding the skillet by its handle, gently flip over the omelet to release it onto the plate.
  • Add the remaining 1 tablespoon oil to the skillet, then carefully slide the omelet from the plate, uncooked-side-down, into the pan and cook for about 2 minutes. Slide the omelet onto a plate, slice and serve immediately.

POTATO CHIP PIZZA

The first time I saw potatoes offered as a pizza topping, I thought that was one of the dumbest things I had ever seen. But then I tried it and realized that if done properly, they can be a fantastic pizza topping. The only problem is they're extremely hard to do properly since they need to cook through by the time our crust is done, which, long story short, led me to try potato chips, which worked out astonishingly well.

Steps:

  • Preheat the oven to 500 degrees F (260 degrees C). Rub 2 sheet pans with a few teaspoons of olive oil, and sprinkle over a light dusting of cornmeal. Set aside.
  • Roll each dough ball into an oval shape about 1/8-inch thick and transfer onto the prepared pans. Cover each with pesto sauce, reserving about 2 tablespoons for the topping. Sprinkle each with Cheddar cheese. Add potato chips in one thick layer, overlapping chips as need to cover the surface.
  • For each pizza, thin out reserved pesto with a tablespoon of olive oil, and then drip and drizzle it over the top of the chips. Top with red onions and mozzarella. Drizzle the tops of the pizzas with a little bit of olive oil.
  • Bake in the center of the preheated oven until top and bottom crust of pizza is browned, 12 to 15 minutes. Let rest for 5 minutes before cutting.

HOMESTYLE POTATO CHIPS

Making homestyle potato chips is fun and easy. Guaranteed they won't last long! A food processor with a slicing attachment is very helpful. Experiment with the thickness; you may like them thicker or thinner. I like to use olive oil because it has less trans fats, but you can use safflower, corn, or peanut oil as well as vegetable oil.

Steps:

  • Place potato slices into a large bowl of cold water as you slice. Drain, and rinse, then refill the bowl with water, and add the salt. Let the potatoes soak in the salty water for at least 30 minutes. Drain, then rinse and drain again.
